Homemade Coffee Ice Cream image

This Homemade Coffee Ice Cream is made just like old-fashioned ice cream! It starts with a custard that is blended with heavy cream and churned in an ice cream maker for a sensationally smooth and creamy dessert. Once you've made this homemade churned ice cream, you will come back to it time and time again. This recipe will satisfy your sweet coffee cravings any time you have them!

Number Of Ingredients 7

2 1/2 cups (600 ml) whole milk
1 1/2 cups (300 g) granulated sugar
1/8 teaspoon salt
2 tablespoons instant decaffeinated coffee granules*
6 egg yolks
2 1/4 cups (540 ml) heavy cream
1 1/2 teaspoons vanilla extract

Steps:

  • In a medium saucepan combine the milk, sugar, salt, and coffee granules. Cook over medium heat stirring occasionally until steaming. Reduce the heat to low.
  • Lightly beat the egg yolks in a small bowl. Slowly pour half the hot milk into the eggs while whisking continuously. Return the mixture to the pot and cook over medium heat, stirring occasionally, until thickened, about 5 minutes.
  • Strain the custard through a fine-mesh sieve set over a medium bowl. Cover it with plastic wrap, allowing it to touch the surface of the custard to prevent a skin from forming. Refrigerate until cold.
  • When ready to make the ice cream, whisk the cream and vanilla into the custard until smooth. Churn in an ice cream maker according to the manufacturer's instructions.
  • Enjoy right away or transfer to a freezer-safe container. The ice cream will keep for up to 2 weeks.

Number Of Ingredients 6

2 large eggs
3/4 cup sugar
2 cups heavy cream or 2 cups whipping cream
1 cup milk
3 1/2 tablespoons instant coffee, good quality, freeze-dried
1 tablespoon ground cinnamon

Steps:

  • Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes.
  • Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
  • Pour in the cream and milk, and whisk to blend.
  • Add 2-1/2 tablespoons of the coffee and cinnamon, and whisk to blend again.
  • Transfer the mixture to an ice cream maker and freeze following the manufacturer's directions.
  • After the ice cream stiffens (about 2 minutes before it is done), add the remaining 1 tablespoon coffee, then continue freezing until done.
  • Makes 1 quart.

1/4 cup boiling water
1 tablespoon instant espresso
2 teaspoons cocoa (Dutch processed if you have it)
1/2 teaspoon cinnamon
1/2 cup sugar or 12 envelopes Equal sugar substitute
1/2 teaspoon real vanilla extract (not imitation) (optional)
1/2 teaspoon brandy extract (optional)
1 cup half-and-half cream or 1 cup 1% low-fat milk
1 cup heavy cream or 1 cup 1% low-fat milk

Steps:

  • Regular: Mix the espresso, cocoa, cinnamon and sugar together in a medium bowl.
  • Stir in the boiling water and let mixture cool.
  • Stir in remaining ingredients.
  • Chill mixture.
  • Pour chilled mixture into ice cream maker and freeze according to manufacturer's directions.
  • Diet Version: Mix espresso, cocoa and cinnamon together in a medium bowl.
  • Stir in the boiling water and let mixture cool.
  • Stir in "Equal" and remaining ingredients.
  • Chill mixture.
  • Pour chilled mixture into ice cream maker and freeze according to manufacturer's directions.
  • **NOTE: "Splenda" (or the granulated/powdered sugar substitute of your choice) can be used in the Diet version in place of "Equal". This recipe only makes 1 pint. If you double the ingredients you can make a quart. Simple ingredients. I got this recipe out of a book called Homemade in the Kitchen.

1 cup heavy cream
1/3 cup sugar
1/2 cup milk (I use whole)
1 teaspoon vanilla extract
1/2 cup extra strong brewed coffee, chilled

Steps:

  • In a medium bowl, whisk the cream and sugar until the sugar has dissolved completely and the mixture is frothy.
  • Add the milk, vanilla and coffee.
  • Whisk until blended.
  • Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour.
  • Prepare the ice cream in an ice-cream maker according to manufacturer's directions.

A delicious cappuccino that's made with instant coffee granules, half-and-half cream, sweetened condensed milk, vanilla extract, water, and ice cubes.

1 1/2 cups cold water
2 tablespoons instant coffee granules
1/2 cup half-and-half cream
1/2 cup sweetened condensed milk
1/2 teaspoon vanilla extract
ice cube

Steps:

  • Add water and coffee to one 16-ounce coffee cup.
  • Place cup in microwave, and microwave until coffee is heated through.
  • Place heated coffee in refrigerator, to chill the coffee. (I found the coffee was chilled within 1 hour).
  • Once coffee is chilled, add the cream, sweetened condensed milk, and the vanilla extract; stir until well blended.
  • In a tall beverage glass, add the ice cubes.
  • Pour coffee over ice in the glass and serve.
