CHICKEN CAPICOLA IN WHITE WINE AND BUTTER SAUCE

An easy yet impressive entrée, Chicken with Capicola in White Wine & Butter Sauce is perfect for either a weeknight dinner or weekend dinner party.

Number Of Ingredients 10

8 thin chicken cutlets, about 3 oz each
Kosher salt and pepper
8 thin slices of capicola
1/4 cup all purpose flour
2 tablespoons extra virgin olive oil, divided
3 tablespoons salted butter, divided
1 cup Chardonnay
Juice of ¼ lemon
2 tablespoons chopped fresh parsley
2 to 3 tablespoons of freshly shredded Parmesan cheese

Steps:

  • Place the chicken on a cutting board and season with both sides with kosher salt and pepper. Place 1 slice of capicola on top of each piece of chicken. Press down lightly.
  • Place about ¼ cup of flour in a large shallow plate. Dredge both sides of the chicken in the flour and set aside.
  • Heat a large saute pan over medium heat. Add 1 tablespoon each of olive oil and butter. When the butter has melted and is shimmering, add chicken to pan with the capicola side down. Make sure not to crowd the pan. If necessary, saute the chicken in 2 batches adding more olive oil and butter if needed. Saute the chicken for 2 to 3 minutes per side or until golden brown and just cooked through. Remove the chicken from the pan and place on a plate. Cover with foil to keep warm.
  • Turn the heat up to medium high under the same saute pan. Add 1 cup of Chardonnay. Scrap up any bits on the bottom of the pan. Bring the wine to a gentle boil can cook for 3 to 4 minutes. The wine should be reduced by about ¼. Stir occasionally.
  • Add the juice of ¼ lemon. Turn the heat to low and add 2 tablespoons of butter. Stir the sauce until the butter has melted and is incorporated. Season to taste with salt and pepper.
  • Return the chicken to the pan and coat with the sauce. Cover and let simmer for 3 to 4 minutes.
  • To serve, remove the chicken from the pan and drizzle the sauce over the top. Sprinkle with chopped fresh parsley and the Parmesan cheese.

I had to make lunch one day and came up with this wonder just with some ingredients I had in the refrigerator. It turned out great.

8 slices bacon
6 ounces cream cheese, softened
4 green onions, chopped
¼ cup chopped red bell pepper
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon pepper
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish.
  • Place the bacon in a large, deep skillet. Cook over medium-high heat until the grease has mostly rendered, but the bacon is still very soft, about 3 minutes. Remove, and pat dry with paper towels; set aside.
  • Stir together the cream cheese, green onions, bell pepper, garlic powder, salt, and pepper in a bowl until combined. Divide this mixture onto each chicken breast. Fold the breasts in half, and wrap with 2 slices of bacon. Secure with toothpicks as needed. Place into the prepared baking dish.
  • Bake in the preheated oven until the chicken is no longer pink in the thickest part, 30 to 35 minutes. Remove the toothpicks before serving.

4 small boneless, skinless chicken breasts (preferably from small chickens, about 1 pound total)
1 12-ounce can Coca-Cola
1 medium white onion, diced
2 cloves garlic, crushed
2 cups Jack's Old South Huney Muney Cluck Rub, or 1 recipe Basic Chicken Rub (page 20)
8 thin slices smoked bacon

Steps:

  • Place the chicken breasts in a shallow dish, and add the Coca-Cola, onion, and garlic. Cover, and refrigerate overnight.
  • When you are ready to cook the chicken, preheat a smoker to 325˚F.
  • Remove the chicken from the marinade and apply the rub liberally. Wrap each breast in 2 slices of the bacon, securing the slices with toothpicks. Place the breasts in an aluminum baking pan. Place the pan in the smoker and cook the breasts for 1 hour, or until their internal temperature reaches 165˚F.
  • Remove the pan from the smoker and let the breasts rest, uncovered, in the pan for 15 minutes. Then slice the breasts and garnish them with any bacon that fell aside. My motto with this dish: Have a Coke and a breast, then smile.

2 chicken breasts
50g soft goat's cheese
4 rashers streaky bacon
handful of fresh sage leaves
1 tbsp olive oil

Steps:

  • Skin 2 chicken breasts, then cut a pocket in each side and stuff each with 25g/1oz soft goat's cheese.
  • Wrap each breast in 2 rashers rindless streaky bacon, tucking in a few fresh sage leaves, then put the breasts in a baking dish and season. Spoon over 1 tbsp olive oil.
  • Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). To check if they are done, insert a sharp knife into the centre of a parcel and leave it for a few seconds, if the chicken is cooked the tip should feel very hot when you pull it out and touch it. The chicken should also feel very firm when pressed with the back of a fork.
  • Serve with a gratin of potatoes and leeks.
