CRANBERRY SQUARES ~ FLAVORS OF CAPE COD
This recipe came from Cape Cod, in the cookbook "Flavors of Cape Cod" they have a streusel topping. To prepare Cranberry Squares using cranberry sauce, substitute one 8oz. can whole cranberry sauce for fresh cranberries, reduce sugar to 1/2 cup and orange juice to 1/2 cup.

Steps:
- Preheat oven to 350 degrees. In a bowl mix together flour, sugar, baking powder, salt and baking soda. Stir in orange juice, shortening and egg. Mix until well blended. Carefully fold in cranberries and nuts. Turn into greased 9 X 13 X 2" pan. Sprinkle with streusel topping. Bake 30-35 minutes. Serve warm.
- STREUSEL TOPPING: Mix together until crumbly 1/4 cup flour, 2 tablespoons butter or margarine, 1/3 cup sugar and 3/4 teaspoon cinnamon. Sprinkle over top of cooled bars.
- To prepare Cranberry Squares using cranberry sauce, substiture one 8-oz can whole berry cranberry sauce for fresh cranberries, reduce sugar to 1/2 cup and orange juice to 1/2 cup !
CRANBERRY BARS
If you're from Wisconsin you have to love cranberries. This is one of my favorite bar recipes and it mixes up very fast and is sooo good.

Steps:
- This is good with a powder sugar glaze or lightly sifted powder sprinkled on top.
- Beat together eggs, butter, sugar and vanilla.
- Add flour and baking powder and mix well.
- Fold in nuts and cranberries.
- Mixture will be cookie-consistency. Spread into prepared 8x8 pan. (If using 9x12, you will need 1.5 times the recipe.).
- Bake@ 350 degrees 40-45 minutes (but start checking after 35).
CRANBERRY COOKIE BARS ~
Always looking for more recipes for Cranberries !!! Found this one in my Cape Cod cookbook. It is very good ! I only had a 13 1/2 by 9 1/2 inch glass baking pan, sooo they would be thicker in a regular 13x9" pan. Hope you enjoy ~ could try using other fruits, such as blueberries which is what I am going to try next time I make this !

- Preheat oven to 350 degrees Grease a 9 X 13 inch pan.
- In a bowl sift together sifted flour, baking powder and salt. (Yes sift the flour before measuring it)
- In a second bowl , cream butter and both sugars. Add eggs one at a time, beating until fluffy. Add vanilla. (or almond flavoring)
- Blend in dry ingredients. Stir in chopped cranberries and nuts. Spread in greased pan.
- Bake 30 minutes. When cool, cut into bars. Do not overbake ( Mine only took 24 minutes) because of the amount of sugar, cookie dough tends to become hard and stick to the pan if overbaked.
CAPE COD CRANBERRY PIE
A different sort of pie for those who don't like to use pie crust. This recipe is from Zola's Grille, Killington, Vermont.

- Grease a 10-inch pie plate.
- Add cranberries and spread out evenly.
- Top cranberries with 1/2 cup sugar and pecans.
- In a mixing bowl, add the eggs.
- Gradually beat in 1 cup of sugar.
- Add the flour, butter, and shortening, beating until just smooth.
- Pour the batter over the cranberries.
- Bake at 325 degrees for 1 hour or until the top is golden.
- Serve warm with ice cream.

Steps:
- Preheat oven to 350 degrees.
- Combine graham cracker crumbs with melted butter.
- Press into 13 x 9 pan that has been sprayed with cooking spray.
- Sprinkle coconut, cranberries, vanilla chips and pecans over the crust.
- Pour condensed milk evenly over crust.
- Bake@ 350 degrees for 25-28 minutes or until edges are golden brown.
- Cool on wire rack Cut in bars.
LIGHT CRANBERRY BARS
I created this light version to reduce the fat and sugar found in a recipe by Bonnie Young (Recipe #12199). These taste wonderful and you would never know that they were light! These go together in a snap and are real crowd pleasers. I make them year-round using frozen cranberries. If you don't have frozen or fresh berries - I don't recommend using dried fruit. - Preheat oven to 350 and grease and flour a 9x13 baking pan.
- Cream butter and sugars. Add pear baby food, then egg whites and vanilla. Beat until smooth.
- In a separate bowl, combine flour and baking powder. Add to creamed mixture and mix well.

Entered for safe-keeping. From Simply Classic by Jr. League of Seattle. Preparation time includes 1 hour to chill the crust dough. May use pre-chopped walnuts, however it is easier to burn the smaller pieces. Uses a 9x13-inch (33x23x8 cm) pan.

- CRUST:.
- Combine flour and 1/2 cup sugar in a mixer, blender or food processor. Add butter in small pieces and blend quickly, just until mixture resembles coarse meal.
- Blend egg and milk together, pour into flour mixture and mix just until dough comes together. Divide dough into 2 equal portions.
- Wrap dough in plastic and refrigerate 1 hour.
- FILLING:.
- Preheat oven to 300 degrees Fahrenheit (149 C).
- Spread walnuts on a baking sheet and toast in oven for 5 minutes (less if using pre-chopped walnuts - they can burn easily). Remove walnuts from oven.
- Increase oven temperature to 375 F (190 C).
- In a medium saucepan, bring cranberries, water and sugar to a boil.
- Reduce heat and simmer until berries have broken down and syrup has thickened, about 15 minutes.
- Remove pan from heat and stir in butter. Add almond liqueur, if desired. Cover pan and set aside to allow berries to cool and thicken.
- Coarsely chop walnuts and stir into cranberries.
- Lightly grease a 9x13-inch baking pan. Remove dough from refrigerator and work with hands until pliable.
- On a floured surface, roll one half into a 10x14 rectangle. Lift it by wrapping around the rolling pin, then unroll over prepared pan. Press dough evenly over bottom and 1/2-inch up sides. Repair any cracks by pressing together with fingers.
- Pour cooled cranberry mixture over bottom crust. Roll remaining dough as above and place over filling. Trim away excess dough. Press down on top layer gently to fuse the layers. Sprinkle with 1 teaspoon sugar.
- Bake on middle rack in oven until edges are golden brown and center is light brown, 25-30 minutes. Cool and cut into squares.

- Preheat oven to 350. Lightly grease a 9 X 13 or 11 X 11 pan.
- For crust, in a medium bowl, whisk together flour, sugars, and salt. Add the flavorings, then use your fingers, a pastry blender, or a mixer to cut in the butter, mixing until everything is crumbly. Stir in the nuts. Set aside about 1 1/2 cups of crumbs, then press the remaining crumbs into the bottom of the prepared pan. Bake the crust for 15 minutes.
- To make the filling, in a food processor, combine the cranberries, apples, raspberries and sugar and pulse a few times to chop the cranberries. Add the flour and melted butter, pulsing briefly to combine.
- Spread the filling over the crust. Crumble the reserved crust mixture over the filling. Bake for 35 to 40 minutes, until the mixture bubbles and the crumbs on top are golden. Remove from oven and cool completely. Dust with powdered sugar and cut into bars.
