Cantaloupe Preserves image

I found this during an online search and just had to share it. It takes longer than normal preserves but sounds delicious.

Number Of Ingredients 4

4 cups cantaloupes, peeled, seeded, and diced
3 cups sugar
3 tablespoons lemon juice
1 (1 3/4 ounce) box dry pectin

Steps:

  • Place cantaloupe and sugar in large non-reactive saucepan, stir well, cover, and let set for 6-8 hours.
  • Add lemon juice and pectin and bring to a boil over medium-high heat, while stirring. Continue to stir while the mixture boils for 5-6 minutes, or until it thickens sufficiently.
  • Ladle into hot jars and seal according to manufacturer's instructions.
  • Makes 4 ½ Cups.
  • **Note: this is a good way to use up cantaloupe that has a strong flavor, but is not very sweet.

Preserved melon with a hint of ginger. Probably one of the more unusual fruits to preserve, but delicious. Would make a special gift.

Number Of Ingredients 6

1 lb cantaloupe balls (peeled, seeded, and cut into 1-inch cubes, should be 2 1/2-3 cups) or 1 lb honeydew, cubes (peeled, seeded, and cut into 1-inch cubes, should be 2 1/2-3 cups)
ice water
1/2 cup Everclear alcohol or 1/2 cup vodka
4 cups sugar
1 cup water
1 piece dried ginger (small piece)

Steps:

  • Drop melon into boiling water.
  • Let water return to a boil, then drain.
  • Rinse with ice water, and let drain for 20 minutes.
  • Spread the melon on a platter, sprinkle with alcohol and let stand for 15 minutes.
  • Make a syrup by mixing 2 cups of the sugar with the cup of water.
  • Add the ginger to the syrup and cook mixture over low heat, gradually adding the rest of the sugar.
  • Add the melon to the syrup and continue cooking until melon becomes transparent.
  • Remove the ginger.
  • When mixture has cooled, place in jars and seal.

Number Of Ingredients 6

2 medium cantaloupes, peeled, seeded and cubed
2 cups orange sections, pith and seeds removed
5 cups sugar
1/2 cup bottled lime juice
2 cinnamon sticks (3 inches)
1 tablespoon grated lime zest

Steps:

  • Process cantaloupe and orange sections in batches in a blender until pureed. Transfer to a Dutch oven., Add sugar, lime juice, cinnamon and zest. Bring to a boil. Reduce heat; simmer, uncovered, until mixture is reduced to 5 cups and reaches a thick, spreadable consistency, about 2 hours, stirring frequently. Discard cinnamon sticks., Carefully ladle hot mixture into 5 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Submerge jars in a canner with simmering water, ensuring that they are completely covered. Bring to a boil; process for 10 minutes. Remove jars and cool.

5 cups cantaloupe (cubed)
4 cups sugar
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 teaspoon lemon juice
1 (85 ml) packet liquid fruit pectin (in a foil pouch)
1/2 teaspoon butter or 1/2 teaspoon margarine

Steps:

  • Combine all ingredients in a large sauce pan bring to a boil and simmer until fruit is clear.
  • Puree in blender (if needed).
  • Ladle into prepared jars.
  • Process in a hot water bath for 10 minutes.

  • Add cantaloupe and sugar to a pot. Set on the stovetop and turn the heat to medium-high. Bring the mixture to a boil, stirring frequantly.
  • Turn the heat down just a tiny bit and let the mixture boil gentaly for seven minutes before lowering the heat to medium-low for the rest of the cooking.
  • Cook for an additional 10 minutes or so, stirring frequently until the fruit is soft. Use an immersion blender to blend the jam.
  • Keep cooking the jam for an additional 30 minutes or so until the juices reduce and it's starting to thicken. Cooking time might change depending on how much fruit you are processing and how juicy it was to begin with. You might notice some foam forming, you can remove it with a spoon or leave it (usually it disapears as the jam cooks).
