Caramelized Pear Pie Filling Recipe is full of tender pears drenched in brown sugar and cinnamon. It makes a great topping or a great dessert on its own.

7 pears (peeled, cored, and diced into 1/4 " pieces (I used Bartlett pears))
1/4 cup water
1 lemon (juiced)
1 cup brown sugar
1 tbsp cinnamon
1 tsp nutmeg
3 tbsp cornstarch

Steps:

  • In a 2 quart saucepan combine diced pears, water and the juice of one lemon. Cook over medium-high heat, stirring occasionally for 8 minutes. Some of the pears will break down, but that's fine.
  • In a separate bowl, combine brown sugar, cornstarch, cinnamon, and nutmeg. Whisk to combine. Pour over pears, and stir constantly until sauce thickens approximately 2 minutes.
  • Remove from heat and let sit for 5 minutes.

This pear streusel pie can be made with canned, drained pear slices, and a purchased crust. It's easy and delicious.

For the Streusel Topping:
1/4 cup all-purpose flour
1/4 cup sugar
1/4 cup light-brown sugar (packed)
1/2 teaspoon cinnamon
2 tablespoons butter (melted)
1/2 cup pecans (coarsely chopped)
For the Pie Filling:
2 (15 1/4-ounce) cans sliced pears in heavy syrup
1/4 cup all-purpose flour
1/2 cup sugar
Optional: 1/2 cup fresh, frozen, or dried cranberries
1 (9-inch) unbaked pie shell

Steps:

  • Gather the ingredients.
  • In a small bowl, combine the all-purpose flour, sugar, light brown sugar, cinnamon, melted butter, and pecans. Set aside.
  • Gather the ingredients. Preheat oven to 350 F.
  • Drain the sliced pears and reserve the liquid for another purpose.
  • In a medium bowl, mix together the sliced pears, all-purpose flour and sugar, tossing until fruit is coated.
  • Turn into the crust, spreading out evenly.
  • Scatter the streusel topping evenly over fruit.
  • Place the filled pie on a baking sheet to catch any drips. Bake about 40 minutes or until juices are bubbling.
  • Remove from oven and cool slightly to serve warm or cool completely to serve at room temperature. A scoop of vanilla ice cream or dollop of whipped cream to accompany this dessert never hurts.

1 recipe pastry for a 9 inch double crust pie
½ cup white sugar
3 tablespoons all-purpose flour
¼ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups peeled and sliced pears
1 tablespoon butter
1 tablespoon lemon juice

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack.
  • Combine sugar, flour, salt, cinnamon, and lemon zest in mixing bowl. Roll out half the pastry and line a 9-inch pie pan.
  • Arrange pear slices in layers in the pastry-lined pan, sprinkling the sugar mixture over each layer. Dot with butter and sprinkle with lemon juice.
  • Roll out remaining dough for the top crust. Use your finger dipped in a small bowl of water to moisten the rim of the bottom crust. Place top crust over filling, and trim edge using kitchen shears or a sharp paring knife. Fold edge under bottom crust, pressing to seal. Flute edge. Cut slits in top crust to allow steam to escape.
  • Bake in the preheated oven on the baking sheet for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake until crust is golden brown and filling is bubbly, 35 to 40 minutes longer. Allow to cool several hours before serving.

2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening
6 tablespoons cold water
FILLING:
5 cups sliced peeled fresh pears
1 tablespoon lemon juice
1/3 cup all-purpose flour
1/2 cup plus 1 tablespoon sugar, divided
1 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour or overnight., Preheat oven to 425°. In a large bowl, toss pears with lemon juice. In a small bowl, mix flour, 1/2 cup sugar and cinnamon; add to pear mixture and toss to coat., On a lightly floured surface, roll half of dough into an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust even with rim. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edges. Cut slits in top. Sprinkle with remaining sugar. Bake until crust is golden brown and filling is bubbly, 45-50 minutes. Cover edges loosely with foil during the last 20 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack.

1 double pie crust store bought or homemade (I love my Flaky Butter Pie Crust)
1/2 cup white sugar
3 Tablespoons all-purpose flour
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups pealed and diced ripe pears
1 Tablespoon butter
1 Tablespoon lemon juice
1 egg

Steps:

  • Preheat oven to 350*F In a medium sized bowl, combine sugar, flour, salt, cinnamon, and lemon zest. Mix well Add diced pears to sugar mixture and mix gently until well coated. Roll pie crust out. Using a bowl as a pattern that is approximately 4 - 5 inches in diameter, cut out round circles for your hand pies. Reroll excess dough to create more crusts. Place crusts onto a lined baking sheet. Place a small amount of pears in the center of one cut pie crust - leaving approximately 1/2 inch space around sides. Dot pear mixture with a small amount of butter. Sprinkle with few drops of lemon juice. In a small bowl beat egg with 1 tablespoon of water. Brush egg around the edge of the circle. This will act as a glue. Fold circle in half enclosing the pear filling. Crimp edges with a fork to ensure a good seal. Brush egg mixture on top of each hand pie. Slice slits on top and dust with course sugar if desired. Place on a lined cookie sheet. Bake for 20 minutes or until golden.

5 lbs rhubarb
4 cups sugar
4 lbs pears (about 8 large)
1 cup orange juice
1 teaspoon vanilla extract
2 tablespoons orange rind, thinly sliced
1 teaspoon mace
1 teaspoon cinnamon

Steps:

  • Slice the rhubarb into 1/2 inch slices. Add 2 cups of sugar, orange juice, and vanilla to the rhubarb in a heavy saucepan. Mix well and set aside.
  • Peel, core, and dice the pears. Place cut pears in water containing ascorbic acid until all the pears are diced. Add the rest of the sugar, orange peel, mace, and cinnamon to the rhubarb mixture. Stir well and bring to a boil.
  • Drain the pears, add to the mixture and cook for 3 minutes longer.
  • Ladle into hot jars. Release the air bubbles, clean the rims, seal, and process in a water bath or 25 minutes.
