This Peach Salsa Canning Recipe is the perfect mix of sweet and heat that is refreshing and so good you'll want to make it again and again!

6-8 cups freshly diced peaches
6-8 large tomatoes (Or double if you use Roma)
1 cup finely chopped red onions
4 jalapeno peppers (seeds removed and finely chopped)
1 large sweet red pepper (seeds removed and finely chopped)
½ cup finely chopped cilantro
2 tsp minced garlic
1 tsp ground cayenne pepper (more for more heat)
2 tsp ground cumin
¼ cup honey
½ cup white vinegar

Steps:

  • Blanch peaches and cool in sink of ice cold water. Peel, pit and chop into small chunks.
  • Blanch tomatoes and cool in sink of ice cold water. Peel, remove seeds and chop into small chunks.
  • In a large cooking pot, combine all ingredients and bring to a boil. Cook, uncovered for about 5 minutes, stirring often. If mixture is too thin, continue boiling for another 4-5 minutes or until enough liquid has evaporated and the mixture thickens.
  • Ladle peach salsa into hot jars within ½ to ¼ inch from the top.
  • Using a paper towel, wipe the rim to remove any residue.
  • Center lid and hand tighten. Repeat until you run out of salsa to fill jars.
  • Place jars into a hot bath canner.. Process for 10 minutes; increase time as needed for your altitude.
  • Carefully, remove jars and place on a towel, closely together. Then cover with another towels and allow to sit, undisturbed for 12 hours. Jars are sealed when lids are popped and curved down.
  • Once fully cooled, label, then store in a cool dark place.

6 cups chopped peaches (about 3 pounds)
3 large fresh tomatoes
1 1/2 cups chopped red onions
4 medium jalapeno peppers, seeded and finely chopped
1 large sweet red pepper, seeded and finely chopped
1/2 cup finely chopped cilantro
1/2 cup white vinegar
2 tablespoons liquid honey
3 garlic cloves, finely chopped
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper

Steps:

  • Sterilize 8, 1/2 pint jars, then place upside down in a 325 F oven for about 15 minutes.
  • Blanch peaches, cool in cold water, peel, pit and chop to measure 6 cups.
  • Blanch tomatoes and cool with cold water, peel, remove seeds and cut into chunks.
  • In a large stainless or enamel cooking pot, combine peaches, tomatoes, onion, Jalapeno peppers, sweet red pepper, cilantro, vinegar, honey, garlic, cumin and cayenne pepper.
  • Bring to a boil, and cook for about 5 minutes, stirring frequently. If the mixture is too sloppy or soupy, boil for a few minutes longer so that some of the liquid evaporates and the mixture thickens.
  • Adjust seasonings to taste.
  • Add more cayenne pepper if you desire a spicier taste.
  • Ladle salsa into hot jars to within 1/4 inch of top for headspace.
  • Remove air bubbles by sliding a rubber spatula between the glass and salsa.
  • Re-adjust the headspace to 1/4 inch.
  • Wipe jar rim to remove any stickiness.
  • Center lid on top of jar; apply screw band just until finger tight.
  • Place jars in a hot bath in a canner and process for 10 minutes.
  • Remove jars and place on a towel, then cover with another towel to cool slowly.
  • Jars are sealed when the lids pop and are curved down, (concave).
  • Label jars and store in a cool, dark place.
  • NOTE: You can substitute and use 6 cups of fresh, chopped pineapple for a different flavor.

PEACHY MANGO SALSA, CANNED FOR CHRIS!

Chris aka Chef #1118755 made and reviewed my recipe #68547 and asked about canning it. This is the result of that recipe. I did add garlic and or ginger to it. Yes an optional choice. Used fresh jalapenos in place of the canned green chilies. Be sure not to use over ripe mango's, they need to be firm but fresh. If they are so soft you can't peel with a vegetable peeler they are too soft.

4 firm fresh peaches, 6 cups seeded, peeled if desired and diced
2 firm ripe fresh mango, 2 cups non-fibrous, peeled, seeded and diced
4 fresh jalapenos or 1 habanero, diced
1 1/2 cups holland orange bell peppers (2 cups diced)
1 red onion, 1 1/2 cups diced fine
2 tablespoons minced garlic or 2 tablespoons minced ginger
3 tablespoons chopped fresh cilantro or 3 tablespoons fresh parsley, chopped
1 fresh lime, juice and zest
1 1/2 cups white vinegar (5 percent acid)
1 cup sugar
1/2 teaspoon salt

Steps:

  • Sterilize Ball jars rims and screw tops.
  • Place all the ingredients in a large pot. Bring to a boil over high heat, stirring to dissolve sugar.
  • Reduce to simmering, and simmer 5 minutes. Do not overcook.
  • Fill into hot sterile jars with hot salsa leaving 1/2 inch head space. Being careful not to leave any salsa on the rims. Wipe jar rims with a clean, damp paper towel. Put on lids and screw on metal bands tightening firmly and evenly. Do not over tighten.
  • Put the sealed jars in the canner and keep them cover with at least 1 inch of water and boiling. Boil them for at least 20 minutes.
  • Lift the jars out of the water and let them cool them in a draft-free place overnight. You can then remove the rings if you like. Once the jars are cool, you can check that they are sealed verifying that the lid has been sucked down. Just press in the center, gently, with your finger. Label and store in a cool place out of direct light using within 1 year.

4 cups fresh peaches - peeled, pitted and chopped
½ cup chopped onion
½ cup chopped red bell pepper
4 jalapeno peppers, minced
¼ cup chopped fresh cilantro
3 cloves garlic, minced
1 ½ teaspoons ground cumin
¼ cup distilled white vinegar
1 teaspoon grated lime zest
¼ cup white sugar
1 (49 gram) package light fruit pectin crystals
3 ½ cups white sugar

Steps:

  • Sterilize jars and lids.
  • In a large saucepan, combine peaches, onion, pepper, cilantro, garlic, cumin, vinegar, and lime zest. Stir together pectin and 1/4 cup sugar. Bring to a boil, and stir in remaining 3 1/2 cups sugar. Boil for 1 minute, stirring constantly. Remove from heat, and stir for 5 minutes.
  • Pour peach salsa into prepared jars, leaving 1/4 inch air space. Seal, and process in a boiling water bath for 15 minutes.

This is a spicy salsa that my family eats with tortilla chips. My daughter serves it with grilled chicken. It is easy to prepare and process if you use the canned shortcuts. (Fresh is better, but it is still flavorful and spicy using canned tomatoes and peppers.) Use ONLY fresh, firm yellow peaches!

9 cups fresh peaches, chopped
2 tablespoons lime juice (fresh or bottled)
4 cups fresh tomatoes (May substitute canned "No salt added" diced tomatoes )
2 large bell peppers, diced
1 large red bell pepper, diced
2 cups sweet onions
1/2 cup jalapeno, diced (canned or fresh)
1/4 cup cilantro
1 cup vinegar
3 garlic cloves, chopped
1 tablespoon cayenne pepper
3 tablespoons honey
1 tablespoon crushed red pepper flakes

Steps:

  • Peel, pit, and chop peaches, and mix with lime juice.
  • Peel and chop fresh tomatoes to measure 4 cups (If using canned diced tomatoes, drain excess juice before measuring).
  • Combine all fresh fruits and vegetables in a large stainless steel pot. Add vinegar, honey,cilantro, cayenne, and crushed red pepper. ( Do not add canned vegetables yet).
  • Bring mixture to boil over medium heat. Cook for 3 minutes, stirring frequently.
  • Add any canned vegetables, and cook for 3 more minutes. .Continue frequent stirring.
  • Turn heat to simmer.
  • Ladle salsa into hot sterilized canning jars, leaving 1/4 inch headspace. Wipe jar rim with clean cloth or napkin. Top with new sterilized lid. Screw on band tightly.
  • Place jars in canning pot. Add water, making sure tops of lids are covered.
  • Bring canner to boil, and process for 10 minutes.
  • Remove jars from canner, and place on towel in a cool spot.
  • In about an hour, check to make sure that lids have sealed. Refrigerate or reprocess any that are not sealed.
  • Allow to sit without moving for about 2 days.
  • Label and store jars in a cool, dark place.
