BACON AND VENISON BURGERS



Bacon and Venison Burgers image

This makes a really nice and juicy burger with very little shrinkage.

1 pound peppercorn bacon, diced
5 pounds ground venison
2 cups bread crumbs
½ cup Worcestershire sauce
¼ cup evaporated milk
5 cloves garlic, minced
1 teaspoon ground cayenne pepper

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place bacon in a stainless steel bowl; add venison, bread crumbs, Worcestershire sauce, milk, garlic, and cayenne pepper. Mix venison mixture using your hands and form into 5-ounce balls. Press balls with the back of a side dish to form patties.
  • Grill patties on the preheated grill until desired doneness is reached, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

6 slices bacon, minced
2 tablespoons olive oil
1 teaspoon minced garlic
2 shallots, minced
2 pounds ground venison
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh parsley
salt and pepper to taste
1 egg, beaten to mix
6 hamburger buns

Steps:

  • Cook bacon in a skillet over medium heat until browned and crispy. Pour bacon and grease into a heatproof bowl and allow to cool. Heat olive oil in skillet then add garlic and shallots. Cook and stir until softened, about 3 minutes; then add to bacon.
  • Once cool, mix in venison, Worcestershire sauce, parsley, salt, pepper, and egg until evenly combined. Refrigerate for 20 minutes.
  • Preheat an outdoor grill for medium-high heat.
  • Shape the mixture into 6 patties and grill to desired doneness. Serve on toasted hamburger buns with your favorite toppings.

I came up with this combination after making Recipe #94597 and having a lot of meat left (I didn't put all of it in the shells because only two of us were home at the time). I was afraid that I'd end up throwing out the meat so I decided to make Bacon Cheeseburger Macaroni. Hope you enjoy it as much as my family did!

8 ounces elbow macaroni, uncooked (can use rice or corn pasta)
4 slices bacon, diced
1 1/2 lbs ground beef
2 green onions, sliced, white and part of the green
2 1/2 tablespoons chili powder
1/2 teaspoon salt
1 teaspoon liquid smoke
6 tablespoons ketchup
3 teaspoons yellow mustard
1 (14 ounce) can chopped tomatoes
1 cup cheddar cheese, shredded

Steps:

  • Cook macaroni according to package directions. Keep warm.
  • In a large skillet, cook the diced bacon until crisp, pour off all but aboaut a half tablespoon of bacon grease.
  • Add ground beef and green onions and cook together until beef is thoroughly cooked through.
  • Stir in chili powder, salt, and liquid smoke and cook for about 5 minutes.
  • Add ketchup, mustard, and tomatoes and stir until well combined.
  • Stir in cooked macaroni and shredded cheese.
  • Cook over low heat for about 5 minutes until cheese is melted and everything is heated through.

2 cups elbow macaroni
1 pound ground beef
2 tablespoons onion powder
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
2 cups ketchup
2 cups shredded Cheddar cheese
1 cup bacon bits

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water until cooked through but firm to the bite, 8 minutes; drain and return pasta to the pot.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
  • Season browned beef with onion powder, garlic powder, salt, and pepper; add ketchup and stir. Bring mixture to a simmer, reduce heat to medium-low, and cook until the liquid thickens slightly, 5 to 10 minutes; pour over the pasta in the pot and stir.
  • Stir Cheddar cheese into the pasta mixture until melted; add bacon bits and stir.

  • Stack the bacon strips and cut down through the stack at 1/4-inch intervals. When done, you should have a pile of thin bacon strips. Put these into a large stockpot over medium-low heat, stirring frequently until the bacon is crispy. Use a slotted spoon to transfer the crispy bacon to a paper towel lined plate to drain. Pour the remaining bacon grease out of the pan (and hopefully into a jar to use in tasty things later.)
  • Return the pan to the heat, break up the ground beef over the bottom of the pan and add the onions to the pot. Use a sturdy wooden spoon to continually break up the beef and work the onions into the meat until the meat is no longer pink but brown. If there is a great deal of fat in the pan, carefully pour most of it off. If there's just a small amount of fat in the bottom of the pan, keep it. It's full of flavour! Return the pan to the heat again.
  • In a large mixing bowl, whisk together the garlic, tomato paste, ketchup, beef broth, water, mustard, Worcestershire sauce, salt, and onion and garlic powders. Pour this over the browned beef. Stir well, raise the heat to high and bring the mixture to a boil. When it is boiling, gently stir in the dry pasta, add a lid to the pan and drop the heat to low. Cook for 10 to 12 minutes, stirring every couple of minutes to prevent the pasta from sticking. When the pasta is tender, turn off the heat, add all of the grated cheese and the the crispy bacon and stir gently until the cheese is melted in completely and the bacon is evenly distributed.
