Ingredients

1 (29 ounce) can sweet potatoes
¼ cup butter, cut into pieces
½ cup brown sugar
1 ½ cups miniature marshmallows

Steps:

Preheat oven to 400 degrees F (200 degrees C).
Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
Bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.

Ingredients

4 pounds sweet potatoes, quartered
1 ¼ cups margarine
1 ¼ cups brown sugar
3 cups miniature marshmallows, divided
ground cinnamon to taste
ground nutmeg to taste

Steps:

Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.
In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.
Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes, and break the others into bite-sized chunks. Transfer to prepared dish.
Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.

6-8 medium sized sweet potatoes
1 cup firmly packed brown sugar
1 to 3 teaspoon ground cinnamon, or to taste
1 cup melted butter, plus 2 tablespoon melted butter
1-1/2 cups mini marshmallows
1/2 cup pecan chips

Steps:

Slice sweet potatoes into 1/4 inch round slices. Arrange potatoes in a lightly greased baking dish (approx. 13"x9"x2"). Mix brown sugar, cinnamon, and pecans in a bowl. Sprinkle each layer of potatoes with the mixture. Pour 3/4 cup melted butter over potatoes evenly. Cover and back at 375°F for 30 minutes. Remove, and baste with remaining 1/4 cup butter. Cover and continue baking for 30 minutes. (If transporting dish, stop here and continue last step at remote location - warm 5-10 minutes in oven before adding marshmallows). Remove, sprinkle marshmallows evenly on top and continue baking without cover for 5 minutes.

Once baked, the sweet potatoes are dripping in a buttery brown sugar sauce filled with cinnamon flavor. We could seriously have eaten spoonfuls of the sauce.

3 lb fresh sweet potatoes
2 c water
1 1/2 tsp vanilla extract
6 Tbsp butter, melted
1 c sugar
1 c brown sugar, light
1 tsp ground cinnamon
1 tsp all spice (or 1/2 teaspoon nutmeg)

Steps:

1. Pre-heat oven to 400 degrees. Peel the sweet potato and place in a baking dish.
2. Pour water and vanilla into the baking dish.
3. Now, add both sugars, cinnamon, and allspice.
4. Sprinkle butter over this.
5. Cover the baking pan tightly with aluminum foil. Bake for about 65 minutes.
6. Remove sweet potatoes from the oven.
7. Slice or mash the potatoes.
