SLOW COOKER CANDIED YAMS
An easy and straightforward recipe for candied yams. Cooking in the slow cooker frees up your oven, especially during the holidays when you can't decide what to put in the oven first. Can be made 2 to 3 days in advance and reheated in the microwave.

Steps:
- Line a slow cooker with a slow cooker liner or spray with cooking spray.
- Place yams in the bottom of the slow cooker. Top with water, pineapple juice, brown sugar, butter, vanilla, cinnamon, and nutmeg. Stir to evenly distribute sauce.
- Cook on Low for 2 hours. Stir. Stir cornstarch and water together in a small bowl to make a slurry. Add to slow cooker and stir to incorporate. Cook until yams are fork-tender and sauce has thickened, about 1 more hour.

SLOW COOKER SWEET POTATOES (YAMS) AND MARSHMALLOWS
I came up with this one Thanksgiving because I was short on oven space. Everyone loved it and I have made it for every Thanksgiving and holiday meal ever since. Be careful not to overcook marshmallows, they can become liquified.

Steps:
- Spray the inside of a slow cooker with cooking spray.
- Place sweet potatoes in a slow cooker and arrange butter on top of sweet potatoes. Sprinkle brown sugar over sweet potatoes.
- Cook on High, 3 to 3 1/2 hours. Add marshmallows and cook until soft and somewhat puffy, about 15 minutes.

- 1. Place the yams in crock pot. In a medium bowl, mix together the brown sugar, melted butter, cinnamon, nutmeg, and orange juice. Spoon over yams.
- 2. Cover and cook on the low heat setting 5 1/2 to 6 hours, stirring once, if possible, until the yams are tender.
- 3. Stir in brandy and orange zest. Sprinkle the marshmallows and pecans over the top. Cover and cook 5 minutes longer, or until the marshmallows are melted. Serve immediately..
- 4. Notes from the book: These yams are a yummy addition to holiday meals. Use yams with a vivid sweet orange flesh, because they cook up to a much moister texture than pale sweet potatoes, which can end up dry and crumbly.

- Microwave butter in a microwave-safe bowl at high 30 seconds to 1 minute or until melted; stir in vanilla and salt.
- Place cut yams and sugars in a lightly greased 6-qt. slow cooker. Pour butter mixture over top. Stir until all ingredients are combined. Cover and cook on LOW 4-5 hours, or until potatoes are tender. Stir halfway through cooking time, to insure yams are coated with sugar/butter mixture.
- Transfer yams to a serving dish using a slotted spoon, reserving liquid in slow cooker. Keep yams warm.
- Remove 1/3 cup liquid from slow cooker; whisk cornstarch into 1/3 cup liquid until smooth. Carefully pour remaining liquid from slow cooker into a medium saucepan. Whisk in cornstarch mixture. Bring to a boil over medium heat; cook 1 to 2 minutes or until thickened. Pour over yams. Serve immediately.
