California Walnut Granola image

This crunchy, sweet walnut granola makes for a great breakfast, topping for yogurt or easy snack. Add dried blueberries to boost color and antioxidants.

Number Of Ingredients 7

4 cups oats, quick cooking (not instant), rolled
2 cups wheat bran, natural
1 1/2 cups California walnuts, chopped
1/2 cup liquid honey
2 tablespoons vanilla
1 1/2 cups raisins (or dried cranberries, chopped dried apples, apricots or other mixed dried fruit)
Fresh fruit for garnish, as desired

Steps:

  • Preheat oven to 300° F.
  • In a large bowl, stir together rolled oats, bran and walnuts.
  • In a small microwaveable bowl, combine honey and vanilla; microwave on high for about 20 seconds or more until runny. Stir to mix; pour over dry ingredients and toss to coat well.
  • Spread granola evenly in a large shallow baking pan and bake in 300° F oven for about 30 minutes, or until golden, stirring two or three times.
  • Cool completely; granola will crisp as it cools.
  • Stir in raisins or other dried fruit; store in airtight container.

A friend brought this out for our kids to snack on while we chatted but I could not stop eating it by handfuls myself. I like the simplicity of it.

Number Of Ingredients 8

3 cups old fashioned oats
1 cup chopped walnuts
1 1/2 teaspoons ground cinnamon
3/4 teaspoon freshly grated nutmeg
1/4 teaspoon kosher salt
1/2-3/4 cup pure maple syrup
1 tablespoon vanilla extract
3 tablespoons canola oil

Steps:

  • Heat oven to 325 degrees.
  • Combine oats, walnuts, cinnamon, nutmeg, and salt together in a large bowl.
  • In a separate bowl,mix maple syrup, vanilla, and oil.
  • Pour syrup mixture over oat mixture and combine until all ingredients are well incorporated.
  • Spread mixture onto parchment paper lined baking sheet and bake 15 minutes.
  • Stir and return to the oven 10 minutes longer.
  • Remove from oven and allow to cool completely.
  • Granola may be stored up to 2 weeks in an airtight container.
