California Sushi Bowls are so easy to make & taste amazing. Enjoy tender crab, tangy sushi rice & fresh veggies in this light, flavorful dish.

1 1/2 cups dry Calrose Sushi Rice
2 cups water
1/4 cup seasoned rice vinegar (Marukan)
1/4 cup Japanese mayonnaise
2 teaspoons sriracha
8 oz imitation crab chopped into small pieces
1/2 cup diced English cucumber
1-2 nori sheets (chopped or crumbled into small pieces (add more if you'd like))
1 large avocado (peeled and sliced)
Black and toasted sesame seeds (for garnish)
1/4 cup low-sodium soy sauce (for serving)
Nori Furikake

Steps:

  • Start off by rinsing 1 1/2 cups of sushi rice in a mesh sifter. Once the rice is well rinsed, add it to your rice cooker along with 2 cups of water. Then turn on the rice cooker.
  • Once the rice is cooked transfer it to a rimmed baking sheet.
  • Then pour 1/4 cup seasoned rice vinegar over the rice and fold it in. You want to use a rice paddle to do this. Make sure be gentle with the rice and not mash it up. Then let the rice cool completely.
  • Then make your spicy Mayo by combining 1/4 cup Japanese mayonnaise with 2 teaspoons sriracha.
  • Now chop cup 8 ounces of leg style imitation crab meat and 1/2 cup of English cucumber. You can also break up a few pieces of Nori (dried seaweed).
  • Now add the cooled sushi rice to a bowl, along with the chopped crab, cucumber, and sliced avocado. Then drizzle on the spicy mayonnaise, and top with chopped nori, sesame seeds, and furikake.

2 tablespoons pickled ginger, with juice

1 tablespoon soy sauce

1 teaspoon sesame oil
2 cups shredded imitation crabmeat
1 avocado, cubed
½ English cucumber, cut into 1-inch strips
3 sheets nori, crumbled

Steps:

  • Bring water and rice to a boil in a small saucepan. Reduce heat to low, cover, and simmer until rice is tender, about 20 minutes. Let cool, about 15 minutes.
  • Stir rice wine vinegar, pickled ginger juice, mayonnaise, soy sauce, sugar, wasabi powder, and sesame oil together in a bowl. Pour over cooled rice; mix to coat and break up clumps.
  • Dice pickled ginger. Fold ginger, crabmeat, avocado, cucumber, and nori gently into rice. Chill until serving.

I created this yummy salad because I love sushi, but have neither the equipment nor the patience to make sushi rolls. For the best sushi rice, a rice cooker is a necessity. This recipe can be easily adapted to reflect your own favorite variety of sushi.

1 ½ cups sushi rice, or Japanese short-grain white rice
2 cups water
½ cup rice wine vinegar
¼ cup sugar
⅛ cup sake
12 ounces imitation crabmeat, flaked
1 cup seeded and chopped cucumber
1 avocado, chopped
1 tablespoon soy sauce, or to taste

Steps:

  • Rinse rice in a strainer under cold water until water runs clear. Transfer rice to a medium saucepan, add 3 cups water, and bring to a boil. Reduce heat to low, cover, and cook under rice is tender and water is absorbed, about 20 minutes.
  • Meanwhile, combine rice wine vinegar, sugar, and sake in a microwave-safe bowl. Microwave on high until sugar is completely dissolved, about 1 minute.
  • Place cooked rice in a large bowl. Stir in vinegar mixture until well combined and let sit for 2 minutes. Stir again. Add imitation crabmeat, cucumber, and chopped avocado; mix well. Use soy sauce to season individual portions.

Steps:

  • Wash the rice and rinse thoroughly. Place rice and water in a rice cooker and set until cooked. Alternately, place rice and water in a medium saucepan. Bring to a boil over high heat, reduce to a simmer, and cook covered until done, 35 to 45 minutes. Allow to cool before using.
  • Combine the dressing in a mixing bowl and set aside until needed.
  • In a large mixing bowl add in the cooked sushi rice and with wooden paddle add in the dressing and moving the sushi rice and dressing to combine. Add in the crabmeat, cucumber, avocado and ginger and mix well and pour in a serving platter and top with sea weeded strips.

1 tablespoon wasabi powder
2 tablespoons water
1 1/4 cups Homemade Ponzu Sauce, recipe follows, or purchased ponzu sauce
1/4 cup sake
2 tablespoons grated ginger
1 pound center-cut salmon fillet, cut into 4 equal pieces
12 ounces asparagus, ends trimmed
2 tablespoons vegetable oil
4 teaspoons sesame seeds
4 cups warm Sushi Rice, recipe follows
2 teaspoons sesame oil
3 green onions, chopped
1 avocado, pitted, peeled, and cut into 1/2-inch cubes
1 English cucumber, cut into matchstick-sized strips
1/4 cup sliced pickled ginger
1 lemon, zested
1/2 cup mirin
1/2 cup fresh lemon juice
6 tablespoons soy sauce
1/2 cup sugar
1 tablespoon minced green onion
2 cups short-grain rice
2 cups water
1/4 cup rice vinegar
2 1/2 tablespoons sugar
1 tablespoon mirin
3/4 teaspoon salt

Steps:

  • To make the sauce, combine the wasabi powder and water in a saucepan and let bloom for 5 minutes. Add 3/4 cup ponzu, the sake and grated ginger and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the sauce is reduced by half, about 10 minutes.
  • Meanwhile, place the fish and asparagus in a large baking dish. Pour the remaining ponzu sauce and the oil over the fish and asparagus and turn to coat evenly. Let stand for 10 minutes.
  • In a small frying pan, toast the sesame seeds over medium heat, shaking the pan frequently, until lightly colored, 3 to 4 minutes. Immediately pour onto a plate to cool. Place a grill pan over medium heat until hot. Lift the asparagus from the marinade, place in the pan and cook, turning occasionally, until tender-crisp, about 3 minutes. Transfer the asparagus to a plate and cover with aluminum foil, shiny side down, to keep warm. Lift the fish from the marinade and place in the grill pan. Cook, turning once, until it turns opaque and just begins to flake, 2 to 3 minutes on each side.
  • To serve, divide the rice among 4 bowls. Top with a piece of fish and some asparagus. Pour 1/4 cup of the sauce over the fish in each bowl. Garnish each serving with the sesame oil, green onions, avocado, cucumber, pickled ginger and sesame seeds.
  • In a bowl, combine all the ingredients and stir until the sugar dissolves. Store in a covered container in the refrigerator; it will keep for up to 1 month.
  • Place the rice in a bowl. Add cold water to cover and wash the rice well by rubbing it between your hands, then drain. Repeat twice more. Pour the rice into a strainer to drain.
  • Place the rinsed rice and the 2 cups water in a 2 to 3-quart saucepan. Bring to a boil over high heat, reduce the heat to low, cover and cook for 20 minutes. Turn off the heat and let the rice stand for 10 minutes.
  • In a small pan, heat the vinegar, sugar, mirin and salt over medium heat until the sugar dissolves. Remove from the heat.
  • Turn out the cooked rice into a large wooden or plastic bowl, and pour the vinegar mixture evenly over the rice. Fold the liquid in with a wooden rice paddle. At the same time, fan the rice to bring out the luster of the grains. Continue fanning and folding until the rice absorbs all the liquid. Cover with a damp cloth and let stand until ready to use. It will hold at room temperature for up to 4 hours.

Steps:

  • RICE: Rinse rice thoroughly in a sieve.
  • Drain well.
  • Bring 2 cups water to a boil in a medium saucepan; add rice and salt.
  • Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
  • Remove from heat; uncover and cool to room temperature.
  • DRESSING: Combine vinegar and next 6 ingredients (vinegar through wasabi) in a small bowl.
  • Combine cooled rice, dressing, cucumber, onion, and sesame seeds in a large bowl.
  • Sprinkle evenly with nori.

1 small head iceberg lettuce, shredded

1 1/2 cups long-grain rice
1/4 cup plus 3 tablespoons rice vinegar* (not seasoned)
1/4 cup sugar
1 1/2 teaspoons salt
1 tablespoon sesame seeds (preferably unhulled*)
3 tablespoons vegetable oil
2 tablespoons finely chopped pickled ginger*
4 scallions, cut lengthwise into thin 1-inch strips (about 3/4 cup)
1/2 cup finely shredded carrot
1 large seedless cucumber (about 1 pound), quartered lengthwise, cored, and
2 sheets nori (paper-thin sheets of dried seaweed)*
1 avocado (preferably California)
1/4 pound surimi (mock crab legs) if desired, sliced thin
For dressing
2 teaspoons wasabi (Japanese green horseradish) powder*
1 tablespoon hot water
2 tablespoons cold water
2 tablespoons soy sauce
2 teaspoons ginger juice (squeezed from freshly grated gingerroot)
*available at Asian markets, natural foods stores, and some supermarkets

Steps:

  • Into a large saucepan of salted boiling water stir rice and boil 10 minutes. Drain rice in a colander and rinse. Set colander over a kettle of boiling water (rice should not touch water) and steam rice, covered with a kitchen towel and lid, until fluffy and dry, 10 to 15 minutes (check water level in kettle occasionally, adding water if necessary).
  • While rice is steaming, in a small saucepan bring 1/4 cup vinegar to a boil with sugar and salt, stirring until sugar is dissolved, and remove from heat. In a dry small skillet toast sesame seeds over moderate heat, stirring, until golden and fragrant and transfer to a small bowl.
  • Transfer rice to a large bowl and stir in vinegar mixture. Cool rice and stir in sesame seeds, remaining 3 tablespoons vinegar, oil, ginger, scallions, carrot, and cucumber. Salad may be prepared up to this point 1 day ahead and chilled, covered. Bring salad to room temperature before proceeding.
  • Dry-roast nori, 1 sheet at a time, directly above moderate heat (gas or electric burner), holding it at opposite corners and moving it back and forth, until it turns bright green, 30 seconds to 1 minute. With scissors cut nori into thin 2-inch-long strips.
  • Peel and pit avocado. Quarter avoado and cut crosswise into thin slices. Add avocado to salad with surmimi if using and two thirds of nori strips and toss well.
  • Make dressing:
  • In a small bowl stir wasabi powder into hot water and stir in cold water, soy sauce, and ginger juice.
  • Serve salad sprinkled with remaining nori strips and drizzled with dressing.

1 cup basmati rice (or Wehani-a red hybrid grown in California)
6 radishes, halved and sliced 1/4-inch thick
1/2 cup red bell pepper, diced
1/2 cup red onion, diced
2 beets, cooked, peeled, and diced (about 1 1/2 cups)
1/4 cup fresh scallions, chopped
2 tablespoons fresh dill, chopped (or 2 tsp. dried)
1/4 cup white wine vinegar
1 1/2 tablespoons prepared horseradish
1 tablespoon whole grain mustard
1 -2 teaspoon sugar, to taste
1 teaspoon salt
fresh ground black pepper, to taste
1/2 cup extra virgin olive oil

Steps:

  • Cook rice according to directions on package. You should have about 3 cups. Allow it to cool to room temperature.
  • Combine the rice, radishes, bell pepper, red onion, beets, chives, and dill in a large bowl. Toss well.
  • Make the dressing:.
  • Whisk the vinegar, horseradish, mustard, sugar, salt, and pepper together in a small bowl. Gradually add the oil, whisking until it is smooth.
  • Pour the dressing over the rice mixture and toss until well blended. Serve immediately, or cover and refrigerate for a few hours to blend the flavors. Enjoy!
