Olive oil-flavored cooking spray
1 teaspoon pesto sauce mix
1/4 teaspoon celery seed
1/4 teaspoon ground thyme
BURGERS:
1 cup whole-berry cranberry sauce
1 cup turkey-flavored stuffing mix
1/4 teaspoon ground thyme
1-1/2 pounds ground turkey
1 tablespoon canola oil
6 lettuce leaves
6 sesame seed hamburger buns, split
1/3 cup turkey gravy, warmed
6 slices jellied cranberry sauce

Steps:

  • Place fries in a greased 15x10x1-in. baking pan; spritz with cooking spray. Combine the pesto mix, celery seed and thyme; sprinkle over fries. Bake at 400° for 20 minutes., Meanwhile, in a large bowl, combine whole-berry cranberry sauce, stuffing mix and thyme. Crumble turkey over mixture and mix well. Shape into 6 patties., In a large skillet, cook burgers in oil over medium heat for 6-8 minutes on each side or until a thermometer reads 165° and juices run clear., Place burgers on lettuce-lined buns; top with a spoonful of gravy and a slice of cranberry sauce. Serve with fries.

12 ounces frozen French fries
1 tablespoon plus 1 teaspoon Dijon mustard
2 teaspoons white wine vinegar or champagne vinegar
1 small shallot, minced
1 tablespoon plus 2 teaspoons vegetable oil
1 1/2 pounds ground beef
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground pepper
6 ounces brie cheese, cut into 8 thin slices
4 brioche buns, split
1 small bunch watercress, tough stems trimmed
Cornichons and ketchup, for serving

Steps:

  • Bake the fries as the label directs. Meanwhile, whisk 1 teaspoon mustard, the vinegar, half the minced shallot and 2 teaspoons vegetable oil in a large bowl; set aside.
  • Combine the beef, remaining minced shallot, remaining 1 tablespoon mustard, the Worcestershire sauce, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 4-inch patties (about 3/4 inch thick). Heat the remaining 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the patties and cook until browned, 3 to 4 minutes per side for medium rare; top each with 2 slices brie during the last 2 minutes of cooking and cover to melt.
  • Toast the buns. Add the watercress to the bowl with the dressing, season lightly with salt and pepper and toss to coat. Put the burgers on the buns and top with the watercress salad. Serve with the fries, cornichons and ketchup.

1 small sweet potato (about 6 ounces), peeled and chopped into 1/2-inch pieces
Kosher salt
1/2 cup millet
1/2 cup cooked chickpeas (rinsed, if canned), smashed with a fork
3/4 cup whole-wheat breadcrumbs
1 4-ounce can chopped roasted green chiles
(preferably Hatch New Mexican chiles)
1 small shallot, very finely chopped
1 teaspoon ground cumin
1 teaspoon sweet paprika
3/4 teaspoon onion powder
1 large egg
1/4 cup cornmeal
1 to 2 tablespoons canola oil, or olive oil mister or nonstick pan spray
4 whole-wheat burger buns, lightly toasted
Favorite burger toppings, such as raw onion, tomato slices and lettuce

Steps:

  • Bring 1 1/2 cups water to a boil in a small saucepan. Add the sweet potato and 3/4 teaspoon salt, reduce the heat to medium low and cook 10 minutes. Add the millet and chickpeas, reduce the heat to low and cook, covered and stirring occasionally, until the millet is tender and absorbs all of the water, about 20 minutes (add more water, if needed). Turn off the heat and transfer the mixture to a medium bowl, letting it cool slightly.
  • Stir in 1/2 cup breadcrumbs, the chiles, shallot, cumin, paprika, onion powder and 3/4 teaspoon salt. Shape the mixture into 4 patties, pressing them so they are about 1/2 inch thick. Place the patties on a plate and refrigerate 30 minutes.
  • Lightly beat the egg in a medium bowl. In another medium bowl, stir together the remaining 1/4 cup breadcrumbs with the cornmeal. Place 1 chilled patty in the beaten egg, turning over the patty to coat the other side. Dip the patty in the cornmeal-breadcrumb mixture and sprinkle the mixture over the top of the patty, lightly pressing it on. Repeat with the remaining 3 patties.
  • Heat a large nonstick skillet over medium heat. Add half of the canola oil and the patties and cook until they are golden brown, 3 to 4 minutes. Add the remaining oil to the skillet and use a spatula to carefully flip the patties (they will be somewhat soft); cook the other side until golden brown, 3 to 4 more minutes. Serve each burger on a bun with your favorite toppings.

2 sweet potatoes
1 tablespoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt, plus more for sprinkling
1/2 lime
1 1/3 lbs ground turkey, lean
1 (4 ounce) can green chilies, diced and drained
1/4 teaspoon salt
1/4 teaspoon black pepper
light cooking spray
4 slices 50% -reduced-fat monterey jack pepper cheese
4 whole-wheat kaiser rolls
romaine lettuce leaf
tomatoes, sliced
red onion, sliced
1/2 avocado, sliced

Steps:

  • For the sweet potato fries, preheat the oven to 425 degrees.
  • Wash and dry the potatoes
  • With the skin on, slice into 1/2-inch-thick rounds; cut the rounds into 1/2-inch-thick finger-shaped pieces.
  • Toss the potatoes in a bowl with the oil, chili powder, garlic powder and salt.
  • On a baking sheet, spread the sweet potato fries in a single layer and roast, stirring every 10 minutes, until brown and tender, 30 to 35 minutes.
  • Remove from the oven, transfer to a platter or bowl and sprinkle with a little more salt.
  • Meanwhile, in a large bowl, mix the lean ground turkey with the diced chiles and season with salt and pepper.
  • Shape into patties and refrigerate until ready to cook.
  • Heat a large grill pan or nonstick skillet on medium heat and spritz with canola oil.
  • Add the turkey patties to the grill pan and cook until browned on one side, about 4 minutes.
  • Flip, reduce the heat to low, cover (if using a skillet) and cook until the juices run pale pink, about 4 more minutes.
  • Top with the reduced-fat pepper-jack cheese during the last minute.
  • Toast the rolls in the oven or in a toaster oven. Alternatively, grill them 1 minute on each side.
  • To assemble: On a platter, place the fries and a burger on a bun and top with lettuce, tomato, onion and avocado slices. Squeeze lime juice over the fries and serve.

Use lean mince and fresh chilli for a healthy and flavoursome patty and serve with paprika-spiced sweet potato chips

1 tbsp olive oil , plus extra for drizzling
1 red onion , finely chopped
500g lean minced beef or turkey
1 egg
12 cream crackers, bashed to fine crumbs
2 tsp chilli paste
2 tsp garlic paste
1 tsp each, tomato ketchup and brown sauce
2 tbsp plain flour
6 hamburger rolls , toasted, to serve
toppings of your choice (relish, chutney and salad ), to serve
4 sweet potatoes , cut into wedges
2 tbsp olive oil
1 tsp paprika

Steps:

  • Heat the oil in a frying pan and fry the onion for about 5 mins or until soft. Leave to cool slightly. When cool, put the onion in a large bowl with the mince, egg, bashed crackers, chilli, garlic, ketchup and brown sauce, and mix well to combine. Divide the mince into 6, roll into balls and flatten each into a nice fat burger.
  • Put the flour on a plate, dab each burger to the flour on both sides, then transfer to a baking tray. Wrap with cling film and pop in the fridge for a couple of hours.
  • Heat oven to 200C/180C fan/gas 6. To make the wedges, put the sweet potato on a baking tray and drizzle with olive oil. Sprinkle with paprika, season, then give them a good shake or shuffle around with your hands to make sure they're well coated. Roast for 30-40 mins depending on how crisp you like them. Make sure you give them a good shake a couple of times to ensure they cook evenly.
  • When the wedges have been cooking for 10 mins, drizzle the burgers with a little olive oil and put them in the oven to cook with the wedges for the remaining 20-30 mins, flipping them halfway. 5 Serve the burgers in the rolls with your choice of toppings, and a good helping of wedges on the side.
