POTLUCK APPLE PIE
This is a great potluck dessert. I make it in a 13x9" pan, and bring along a bucket of ice cream. I provide the desserts for our churches Wed. night bible study and this is always a hit. The apples aren't soggy and the sauce is perfect.

Steps:
- 1. Adjust the oven rack to upper-middle position (7 to 9"from top) and heat oven to 450.
- 2. Whisk cider, syrup, lemon juice, cornstarch and cinnamon until smooth, set aside.
- 3. Heat butter in large skillet over medium-high heat, when foaming subsides add apples and cook stirring 2 to 3 times for about 5 minutes. DO NOT FULLY COOK APPLES.
- 4. Remove from heat, add cider mixture, gently stir to coat. Set aside to cool while you prepare the crust.
- 5. If using "store bought crust," roll out and fit together, trim so that it's approx 2" larger than your pan. You can use trimmings for decorations if you want to.
- 6. Pour apple mixture into 9x13" pan and fit the crust on top, flute around edges and brush with beaten egg white and sprinkle with sugar.
- 7. Make several vent slashes and bake for 25 to 35 minutes or until crust is golden brown. Serve warm or room temperature with ice cream.

- In a large bowl, beat the eggs, sugar, oil and vanilla. Combine the flour, cinnamon, baking soda and salt; add to egg mixture and mix well. Fold in apples and nuts. Pour into a greased 13x9-in. baking dish. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a small bowl, beat cream cheese and butter. Add confectioners' sugar, beating until smooth. Spread over cake. Refrigerate leftovers.

APPLE CRUMB PIE FOR A CROWD
I put this together for a family get together! This could be made into three 9-inch pies but I put it in one large heavy-duty rectangular (food service) foil pan. It takes 3 sticks of butter in all but this serves 24!

Steps:
- Combine 2 1/2 cups flour and salt in a large bowl. Cut 1/2 cup butter and shortening into flour until the mixture resembles crumbs.
- Mix egg, water, and white vinegar together in a separate bowl; pour in the crumb mixture and blend with a fork to form a dough ball. Wrap dough in plastic wrap and refrigerate until ready to use.
- Melt 1/2 cup butter in a saucepan over medium heat. Blend 1/4 cup flour into the melted butter. Stir water and brown sugar into the butter mixture until smooth; remove from heat.
- Roll chilled dough into a large rectangle on a flat surface dusted with flour; press into the bottom of an aluminum foil roasting pan and up the sides about an inch or more.
- Dump the sliced apples onto the crust and gently spread into an even layer. Drizzle the butter mixture over the apples.
- Pour apple crisp mix into a bowl. Cut 1/2 cup butter into the mix; scatter over the apples.
- Bake in preheated oven until golden brown, about 1 hour.

- In a large bowl, combine flour, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, whisk the egg yolks, lemon juice and water; gradually add to flour mixture, tossing with a fork until dough forms a ball. Divide in half. Chill for 30 minutes. , Roll out one portion of dough between two large sheets of waxed paper into a 17x12-in. rectangle. Transfer to an ungreased 15x10x1-in. baking pan. Press pastry onto bottom and up sides of pan; trim even with top edge. , In a large bowl, toss the apples, sugar, flour, cinnamon and nutmeg; spread into crust. Roll out remaining pastry to fit top of pan; place over filling. Brush edges with water or milk; pinch to seal. Cut slits in top. , Bake at 375° for 45-50 minutes or until golden brown. Cool on a wire rack. Combine glaze ingredients until smooth; drizzle over bars.

- In a Dutch oven, combine the apples, sugar, cinnamon and nutmeg; cook and stir over medium heat just until apples are tender. Set aside. , In a large bowl, cream the shortening, butter and brown sugar until light and fluffy.
