2 1/2 pounds cooked black beans
2 cups fresh cilantro, chopped
1 cup breadcrumbs
1/3 cup mayonnaise
1 tablespoon plus 1 teaspoon cumin
1 tablespoon kosher salt
2 teaspoons chipotle powder
2 teaspoon dried oregano
2 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil
2 tablespoons grapeseed oil
6 slices pineapple, 1/2 inch thick each
6 tablespoons unsalted butter
6 brioche burger buns, split
6 leaves Bibb lettuce
6 slices tomato
6 slices red onion
Vegetable chips, for serving

Steps:

  • For the black bean burger: Combine the beans, cilantro, breadcrumbs, mayonnaise, cumin, salt, chipotle powder, oregano and black pepper in a bowl and mash with your hands until about 2/3 of the black beans are mashed. The mixture should hold together when you pat it into a burger. Shape 6 burgers from the mixture.
  • Heat a griddle over high heat, add the grapeseed oil and then the burgers. Cook until the burgers are seared on one side, 3 to 4 minutes. Flip and cook on the second side until browned, 2 to 3 minutes. Remove from the griddle and serve immediately following the plating instructions below.
  • To plate: Heat a griddle over high heat, add the grapeseed oil and then the pineapple slices. Cook until the pineapple slices are seared on one side, 2 to 3 minutes. Flip and cook on the second side until browned, 2 to 3 minutes.
  • Butter both sides of the burger buns and toast on the griddle until golden brown, 1 to 2 minutes.
  • Set the bottoms of the buns on 6 plates. Top each with a lettuce leaf, tomato slice, red onion slice and burger. Add the bun tops and serve each with a piece of seared pineapple and some vegetable chips on the side.

6 tablespoons extra-virgin olive oil
1 large red onion, finely chopped
1 clove garlic, finely chopped
3 cups mushrooms, finely chopped
1 tablespoon fresh thyme leaves, chopped
One 14-ounce can black beans, drained and rinsed
2 tablespoons soy sauce
1/4 cup whole-wheat flour
1 tablespoon nutritional yeast flakes (optional)
1000 Island Dressing, recipe follows
4 burger buns
4 butter lettuce leaves
4 teaspoons yellow mustard
4 large tomato slices or 8 medium slices
12 slices dill pickles
Handful of arugula
Salted potato chips, for serving (optional)
4 tablespoons mayonnaise
1 1/2 teaspoons tomato ketchup
1 teaspoon tomato paste
1 1/2 teaspoons capers, finely chopped
1 teaspoon freshly squeezed lemon juice
Small pinch sea salt and freshly ground black pepper to taste

Steps:

  • Heat 3 tablespoons oil in a large frying pan over a medium heat, then saute the onions for 4 minutes, until they start to soften. Add the garlic, mushrooms and thyme and cook for a further 3 minutes or until most of the mushroom juice has evaporated. Stir in the drained beans and soy sauce and cook through for around 2 minutes, stirring occasionally. Turn off the heat.
  • Roughly mash the mixture with a potato masher, whilst keeping some texture; be careful not to over mash. Stir in the flour and nutritional yeast flakes, if using. Divide the mixture into 4 portions. Then, using your hands, mold each portion into a burger shape about 1/2 inch thick and 3 inches wide or wide enough to fit your bun.
  • Put the burgers on a parchment-lined sheet pan. Allow to chill in the fridge for 1/2 hour, to firm up before cooking.
  • To fry the burgers: Heat the remaining 3 tablespoons oil in a medium-large frying pan over a medium heat (you want to hear a nice sizzle) and cook the burgers for about 2 minutes on each side or until cooked through and crisp brown on both sides.
  • To assemble the burgers: Spread 1 teaspoon of 1000 Island Dressing on the base of each bun, then lay a lettuce leaf on top. Add a burger, spread a thin layer of mustard onto each burger, add a slice or 2 of tomato, and then 3 thin slices of pickle. Add a few arugula leaves, then spread a little mustard on the underside of each burger top to complete. Serve with potato chips, if using.
  • Mix all the ingredients together in a small serving bowl, whisking with a fork.
  • This dressing is delicious spooned over veggie burgers or served as a dip with crudites. I also love it drizzled over a festive vegetarian nut roast the next day in a sandwich. Any unused dressing can be stored in an airtight container in the fridge for up to 4 days.

4 cups apple cider vinegar
2 cups brown sugar
2 red onions, sliced
2 pounds cooked black beans
1 cup corn kernels
1 cup cooked wild rice
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon coriander
Salt and freshly ground black pepper
1 cup sour cream
1/4 cup honey, plus more if needed
1/4 cup lime juice
2 tablespoons chopped fresh cilantro
Salt and freshly ground black pepper
6 brioche buns
6 tablespoons butter
1/4 cup grapeseed oil
3 cups arugula
1/2 lime, juiced
Salt

Steps:

  • For the pickled onions: In a pot, combine the vinegar and brown sugar, and bring to a simmer. Whisk to dissolve the sugar. Add the onions and bring the pot back to a simmer and cook until the onions are tender.
  • Remove from the heat and store the onions in their pickling liquid in a non-reactive container for at least 1 hour, but preferably overnight.
  • For the burgers: In a bowl mash 1 1/2 pounds of the black beans. Add the remaining black beans to the bowl with the corn, rice, chili powder, cumin and coriander, and mix everything together by hand. Season with salt and pepper. Form the burger mixture into 6 patties and set aside.
  • For the cream: In a bowl whisk together the sour cream, honey, lime juice and cilantro. Season with salt and pepper, and adjust the flavor with more honey if the dressing is too tart.
  • For Plating: Heat a cast-iron griddle over high heat until it begins to smoke. Butter both sides of the buns and toast them on the griddle until golden brown.
  • Heat the grapeseed oil on the griddle. Place the burgers on the griddle and sear the first side for about 3 minutes. Flip and cook the second side until seared and the center is hot, about more 3 minutes.
  • In a bowl combine the arugula with 2 tablespoons of the prepared sour cream, a squeeze of lime juice and some salt.
  • Spread the prepared sour cream on each side of the buns. Place the burgers on the bun and top each with 2 ounces of the pickled red onions and 1/2 cup of the arugula salad.

1 can (4 ounces) chopped green chilies, undrained
1 cup plain dry bread crumbs
1 egg, beaten
1/4 cup yellow cornmeal
2 tablespoons vegetable oil
5 hamburger buns, toasted
1 tablespoon mayonnaise or salad dressing
1 1/4 cups shredded lettuce
3 tablespoons thick-and-chunky salsa

Steps:

  • Place beans in food processor or blender. Cover and process until slightly mashed; remove from food processor. Mix beans, chilies, bread crumbs and egg. Shape mixture into 5 patties, each about 1/2 inch thick. Coat each patty with cornmeal.
  • Heat oil in 10-inch skillet over medium heat. Cook patties in oil 10 to 15 minutes, turning once, until crisp and thoroughly cooked on both sides.
  • Spread bottom halves of buns with mayonnaise. Top with lettuce, patties, salsa and tops of buns.

1 small onion, chopped
1/2 cup chopped sweet red pepper
1 can (15 ounces) black beans, rinsed and drained, divided
1 tablespoon cornstarch
2 tablespoons cold water
1 cup mashed potato flakes
1/4 cup quick-cooking oats
3 tablespoons whole wheat flour
2 tablespoons nonfat dry milk powder
1 egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
4 teaspoons canola oil
6 kaiser rolls, split
2 cups shredded lettuce
3/4 cup salsa

Steps:

  • In a large microwave-safe bowl, combine the mixed vegetables, onion and red pepper. Cover and microwave on high for 2 minutes or until crisp-tender. , Coarsely mash 3/4 cup black beans. In a bowl, combine the cornstarch and water until smooth; stir in the mashed beans, potato flakes, oats, flour, milk powder, egg, salt and pepper. Stir in vegetable mixture and remaining black beans.
