1 tablespoon vegetable oil
2 tablespoons all-purpose flour
2 onions, chopped
1 green bell pepper, chopped
1 celery rib, chopped
3 ounces Canadian bacon, diced
1 (28 ounce) can chopped tomatoes, pureed
1 (14 ounce) can reduced-sodium chicken broth
1 1/2 cups long-grain white rice
2 teaspoons Old Bay Seasoning
1 lb shrimp, peeled and deveined
8 ounces lump crabmeat
2 tablespoons fresh cilantro, chopped

Steps:

  • Lightly coar a large geavy skilled with nonstick cooking spray and set over medium heat. Add oil and flour and stir consistantly until roux turns deep mahogany brown, about 5 minutes. Add onions, green pepper, celery and bacon; saute until vegetables are soft, about 5 minutes longer.
  • Stir in tomatoes in puree, broth, rice and Old Bay seasoning; bring to a boil over high heat. Reduce heat to medium-low, cover and simmer until most of liquid is absorbed and rice is almost tender, about 20 minutes.
  • Fold in shrimp and cook just until shrimp are pink and firm, about 5 minutes.
  • Gently fold in crab; cover and cook 1 minute. Remove from heat and let stand 3 minutes. Sprinkle with cilantro.

Well having posted a response about jambalaya, cajun food and other recipes this week made me think about other dishes I use grits or polenta with. I honestly never liked them because they were either breakfast for me and just bland. Since then I have really learned to appreciate them. There are so many ways to cook and enjoy them with various sauces, gravies, seasonings, cheeses and served not just for breakfast but with all different meats, poultry and seafood. So this is a dish I learned from a girlfriend many years ago. I had to spice it up for me, and add some crab, etc, but she definitely started me thinking. This is a favorite with many of my friends.

Number Of Ingredients 22

1 lb large shrimp (peeled and tails removed)
1/2 lb lump crabmeat (cleaned)
2 cups andouille sausages (cut into thin rounds)
1 cup onion, chopped
1 cup green pepper, chopped
1 jalapeno, thin sliced (I leave the ribs in but remove the seeds, I like some heat)
1 3/4 cups chicken broth
2 teaspoons garlic, minced
1/4 teaspoon celery seed
1 teaspoon cajun seasoning
1/2 teaspoon Old Bay Seasoning
1 pinch red pepper flakes
1 tablespoon olive oil
1 tablespoon flour
salt
pepper
1 1/4 cups quick-cooking polenta (precooked maize meal, usually available at any major grocery store. If not, just buy regular polenta)
6 cups water
1/4 cup butter
1 cup monterey jack pepper cheese
salt
pepper

Steps:

  • Sausage -- In a large saute pan, add the sausage and cook 3-5 minutes until golden brown. Remove and put on a plate lined with a paper towel to drain. Reserve the drippings in the pan.
  • Vegetables -- Add the onion, green pepper, jalapeno and garlic and cook another minute or so.
  • Sauce -- Once the vegetables have cooked a minute or two, add the flour, add the chicken broth and bring to medium heat until it thickens slightly. Reduce to medium low and stir in the seasoning (celery seed, cajun seasoning, Old Bay and pepper flakes, salt and pepper to taste), shrimp and cook until they begin to curl and turn pink. Just 2-3 minutes.
  • Then before the shrimp are done, add the sausage back in and mix well, then add the crab meat and lightly toss so you don't break up the crab too much.
  • Polenta -- Whether it is quick cooking or regular cooking, just follow the directions according to directions. When done, just stir in the cheese and any salt and pepper if needed.
  • Serve -- Top the shrimp and crab over the polenta and enjoy and great comfort food meal.

1 onion, minced
1 green pepper, chopped fine
1 red pepper, chopped fine
3 tablespoons butter
1 cup fresh breadcrumb
1 teaspoon dry mustard
Worcestershire sauce
Tabasco sauce
1 cup cream
5 ounces lump crabmeat, picked over
1/2 lb large shrimp, shelled and deveined

Steps:

  • Preheat oven to 390F and put rack in middle of oven.
  • Cook onion and peppers in butter over moderate heat, stirring occasionally, for 5 minutes, or until soft.
  • Transfer to a bowl, add breadcrumbs, mustard, Worcestershire Sauce and Tabasco.
  • Stir in cream, crab meat and season to taste.
  • Divide shrimp among 4 individual, buttered gratin dishes; spoon crab mixture over.
  • Bake on a baking sheet for 12-15 minutes, or until mixture is bubbling and tops are golden-brown.
  • Serve with lots of crusty bread and chilled, white wine.

2 ½ cups chicken stock, or as needed, divided
¾ cup fat-free half-and-half
1 cup polenta
2 tablespoons olive oil
2 plum tomatoes, diced
1 large red bell pepper, chopped
½ sweet onion (such as Vidalia®), chopped
2 cloves garlic, chopped
1 pinch dried oregano, or to taste
1 pinch dried thyme, or to taste
1 teaspoon ancho chile powder, or to taste
½ cup grated Parmesan cheese
12 ounces uncooked medium shrimp, peeled and deveined

Steps:

  • Heat 2 cups chicken stock and half-and-half until nearly boiling. Add polenta and stir constantly until no clumps remain, 3 to 4 minutes. Reduce heat and simmer until tender and thickened, 20 to 30 minutes. Add additional stock or water if polenta is too thick.
  • Heat oil in a large skillet over medium-high heat. Add tomatoes, bell pepper, onion, and garlic. Saute for 3 to 5 minutes. Add 1/2 cup chicken stock, oregano, thyme, and ancho chile powder. Simmer until vegetables reach desired texture, 3 to 5 minutes.
  • Meanwhile, stir Parmesan cheese into the polenta. Add shrimp to the vegetable mixture; cook until pink and heated through, 3 to 5 minutes more. Spoon polenta onto serving plates and top with shrimp mixture.

  • In a heavy saucepan or Dutch oven, heat 3-1/2 cups water and a pinch of salt to boiling over high heat. In another small saucepan, bring more water to a simmer (4 cups should be plenty). When the water in the first saucepan is boiling, turn the heat down to medium and gradually sprinkle in the polenta, while whisking. Reduce the heat until the polenta is just barely bubbling. From this point, you’ll be doing the same thing over and over (risotto method, if you’re familiar) – add a ladle-ful of the simmering water at a time, stir it in, and let it cook, stirring frequently. When it looks like the polenta has absorbed all of that water, add some more. Keep doing this for about 45 minutes – you’ll know it’s done with the polenta looks creamy and it starts to pull away from the sides of the pot a little.
  • After the polenta has cooked for about 20 minutes, start the rest of your meal: In a large skillet, heat olive oil over medium-high heat. Add carrots, celery, onion, and a pinch each of salt and pepper. Cook 6 to 8 minutes or until vegetables are softened.
  • Add tomato paste; cook 2 minutes or until tomato paste starts to brown. Add sausage and creole seasoning; cook for 2 minutes (andouille is already fully-cooked when you buy it, so you don’t need to cook it here, but sautéing it for a few minutes allows it to release some flavor). Stir in diced tomatoes, reduce heat to medium-low. Simmer until polenta is almost done; adding 1/4 cup of water at a time if mixture gets too thick.
  • Just before polenta finishes cooking, add shrimp to the sausage mixture and cook over medium heat 3-5 minutes until shrimp are opaque throughout.
