Cajun Spice Mix and Rub image

This spice mix is mildly hot. Adjust the heat by changing the amount of crushed red pepper flakes. Very versatile mix to have in the pantry.

2 teaspoons salt
2 teaspoons garlic powder
2 ½ teaspoons paprika
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 ¼ teaspoons dried oregano
1 ¼ teaspoons dried thyme
½ teaspoon red pepper flakes (optional or adjust to taste)

Steps:

  • Stir all ingredients together and store in an airtight container.

You can use this rub on any chicken, but I like it on thighs. They just have more flavor and don't dry out like breasts do. The rub can be stretched, though, to cover a whole chicken, if you like.

1/4 cup paprika
1 tablespoon kosher salt
1 tablespoon garlic powder
1 1/2 teaspoons thyme, dried
1 teaspoon ground celery seed
1 teaspoon ground black pepper
1 teaspoon cayenne pepper

Steps:

  • Combine all but the chicken in a small bowl. Rub the spice mixture evenly over the chicken thighs. Grill over medium heat, skin side down, for about 10 minutes. Flip the chicken and grill for another 5-10 minutes.

4 skinless boneless chicken breast fillets
1 tbsp paprika
1 tsp dried onion flakes
¼ tsp cayenne pepper
2 tsp dried thyme
1 tbsp sunflower oil
200g tub guacamole , to serve

Steps:

  • Dry chicken with kitchen paper, then cut diagonal slashes over the smooth side. Mix spices with seasoning, then tip onto a plate.
  • Brush the chicken on both sides with the oil, then coat all over with the spice mix. Heat a barbecue, griddle pan or grill, then cook the chicken for 5-6 mins on each side until cooked through. Serve each portion with a dollop of guacamole.

Make a crowd-pleasing pasta dish for dinner. We've taken inspiration from creamy alfredo sauce with Cajun-style seasoning to add a bit of punch.

1 tbsp olive oil
400g chicken breasts, chopped into large chunks
3 garlic cloves, finely chopped or grated
2 tbsp Cajun-style seasoning
400g can chopped tomatoes or passata
1 chicken stock cube, crumbled
500g penne or another tube- shaped pasta
150ml double cream
20g parmesan, finely grated, plus extra to serve
½ lemon, juiced
chopped parsley, to serve (optional)

Steps:

  • Heat the olive oil in a large, shallow saucepan or deep frying pan over a medium heat, then add the chicken, season lightly and fry for 6-8 mins, stirring occasionally until just golden all over - no need to worry about it being cooked through at this stage.
  • Stir in the garlic and cook for 2 mins more, then scatter over the Cajun-style seasoning and stir so the chicken pieces are evenly coated. Tip in the tomatoes, a quarter of a can of water and the stock cube. Stir, then bring to a simmer and cook for 5 mins.
  • Meanwhile, bring a large pan of salted water to the boil and cook the pasta for a minute less than pack instructions. Stir the cream into the chicken and continue to simmer gently. When the pasta is cooked, drain well and stir into chicken mixture. Finish cooking the pasta in the sauce over a low heat for 2 mins, then stir in the parmesan and lemon juice, and cook for 1 min more. Serve the pasta straight from the pan, or tip into a large serving bowl. Scatter with parsley, if you like, and extra parmesan.

  • Place the chicken breasts on a baking sheet or large dish and pat dry. Drizzle lightly with olive oil and rub the chicken to coat evenly.
  • In a small bowl, combine all of the spices and stir well. Sprinkle half of the spice mixture over the tops of the chicken breasts, turn the chicken over, and sprinkle the remaining half of the spice mixture on the bottom side of each breast so the chicken is evenly coated in Cajun seasoning.
  • Place the chicken breasts directly over the heated side of the grill and grill for about 5-6 minutes per side, depending on the thickness of your chicken, until the internal temperature of the breasts reach 160 degrees using an instant read meat thermometer. You can also check whether the chicken is done by making a small cut into the thickest part to see if it is opaque in the center, or pressing on the thickest end of the chicken with your finger to see if there is any resistance. If there is no resistance, the chicken is done. Remove from the grill and rest for 5 minutes.
