CAJUN BOUDIN PIZZA
A Cajun take on American classic pizza; it's quick and easy, guaranteed to please the entire family. You can use any pre-made pizza crust instead of naan bread.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place sausage in a baking dish and cook, rotating every 5 minutes, until no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Cool to room temperature and slice. Reduce oven temperature to 350 degrees F (175 degrees C).
- Place naan bread on a baking sheet; spread marinara sauce over naan and top with mozzarella cheese. Layer sliced sausage on top of cheese and spread onion and bell pepper slices over the sausage. Sprinkle Cajun seasoning over the top.
- Bake in the oven until cheese is melted and toppings are hot, about 10 minutes. Let rest for 5 minutes before slicing.

CAJUN PRAWN PIZZA

Steps:
- Heat oven to 220C/200C fan/gas 7. Tip the flour into a mixer with a dough hook, or a bowl. Add the yeast, salt, oil and 150ml warm water then mix well to a soft dough. Knead in the food mixer for about 5 mins, but if making this by hand, tip onto a work surface and knead for about 10 mins. The dough is sticky, but try not to add too much extra flour. Leave in the bowl and cover with a tea towel while you make the topping. There is no need to prove the dough for a specific time, just let it sit while you get on with the next step.
- For the topping: heat the oil in a non-stick pan or wok. Add the celery and pepper and fry for 8 mins, stirring frequently, until softened. Tip in the tomatoes and paprika then cook for 2 mins more. Set aside to cool a little then stir in the prawns.
- With an oiled knife, cut the dough in half and shape each piece into a 25cm round with lightly oiled hands on oiled baking sheets. Don't knead the dough first otherwise it will be too elastic and will shrink back. Spread each with half of the tomato and prawn mix then scatter with the coriander and sprinkle with the Cajun spice. Bake for 10 mins until golden. Serve with a green salad.

CAJUN PIZZA
Pizza is so versatile. You can adjust the toppings to suit you taste. This is from The Giant Book of Tofu Cooking but you don't have to use tofu. Use seafood or even blackened chicken, or just use the veggies! The cooking time includes the 30 minutes needed to marinate the tofu or seafood.

Steps:
- Crumble tofu, if using, in a large bowl or add seafood; add oil and spices; mix well and marinate in refrigerator for at least 30 minutes.
- Place pizza crust on a baking sheet; cover generously with sauce; top with tofu, seafood or chicken, peppers and cheese.
- Bake at 450F for 8 to 12 minutes or until cheese has melted and toppings are well heated.

- Mix first 9 ingredients for marinated olive salad and chill overnight. (Prepared olive salad may be substituted.) Top dough crust in order with provolone, ham and salami, half of olive salad, and mozzarella. (Amounts of toppings may be more or less depending on your preferences.) Bake in preheated 500° F oven on pizza stone for 8-10 minutes or until crust is golden brown and cheese is melted. Remove from oven and cool on a wire rack for 2-3 minutes before cutting into wedges and serving.
