CAJUN CRAB DIP
This spicy dip is very good, though you may have to "turn down" the heat a bit! The recipe comes from a local periodical.

Steps:
- In a large bowl, mix very well all ingredients except the crab meat.
- Slowly fold in crab meat, to prevent it from shredding.
- Transfer mixture to shallow baking dish. Heat at 350 degrees F for about 20 minutes, or until hot. (You may skip this step and serve the dip cold, if desired.).
- Serve with crackers, toasted pita points, or crostini.

I was looking for a recipe similar to the dip we purchase at the grocery store. This is fairly close. Be careful your Cajun Seasoning is not too salty.

Steps:
- Mix cream cheese, sour cream, hot sauce, Worcestershire Sauce, Cajun Seasoning, garlic and Italian Seasoning in processor or with electric mixer.
- Gently fold in cheddar cheese, onions and crab.
- Refrigerate at least 2 hours and adjust seasonings as desired.

- Mix all ingredients except cheese and crab meat.
- Mix in the cheese and 1/2 the crab meat until mixed well. The crab meat will break into fine pieces.
- Mix in the rest of the crab meat, being careful to leave some larger chunks for texture.
- Refrigerate for 2-4 hours. Check seasonings and adjust if needed.
- Serve with crackers, or to keep it healthy, with carrots, celery and slices of zucchini.

- In a large bowl, combine the cream cheese, garlic, cream, 1 teaspoon seafood seasoning, horseradish and Worcestershire sauce. Gently stir in crab and half of the green onions. , Transfer to a greased 2-cup baking dish. Bake, uncovered, at 350° for 23-27 minutes or until edges are bubbly. Sprinkle with Monterey Jack cheese and remaining seafood seasoning. Bake 5 minutes longer or until cheese is melted., Sprinkle with remaining green onions. Serve warm with crackers.

A lower fat alternative for those of us who love our hot dip but not the inches it tends to add to the waistline. I usually add a bit more hot sauce than is called for in this recipe, but to each her own.

- Preheat oven to 350 degrees.
- Using a stick blender, combine cream cheese, cottage cheese, and mayonnaise, blending until smooth.
- Add remaining ingredients and stir with a fork until well combined.
- Lightly coat a small casserole dish or pie plate with non-fat cooking spray.
- Pour crab mixture into casserole dish.
- Bake in preheated oven at 350 degrees for 20 minutes or until hot and bubbly.
- I serve this with crackers and torn up chunks of sourdough bread.
