Enjoy these tasty bean patties that are ready in just 20 minutes - perfect if you love Cajun based cuisine.

2 cans (15 to 16 oz each) dark red kidney beans, drained, rinsed
1 egg
1/4 cup unseasoned dry bread crumbs
2 teaspoons Cajun or Creole seasoning
1 tablespoon vegetable oil
Sour cream, if desired

Steps:

  • In medium bowl, mash beans with fork. Stir in egg, bread crumbs and Cajun seasoning. With wet hands, shape mixture into 4 patties, 1/2 inch thick.
  • In 10-inch skillet, heat oil over medium-high heat. Add patties; cook 6 to 8 minutes, turning once, until hot. Serve with sour cream if desired.

Meet the Cook: My family likes its food spicy. I found the original recipe for these burgers in a cookbook, then added and subtracted ingredients until they suited our taste. Cajun Burgers are always on the menu whenever we have company over for a backyard cookout. Like my husband, I was raised in the country. CAJUN SEASONING BLEND:
3 tablespoons ground cumin
3 tablespoons dried oregano
1 tablespoon garlic powder
1 tablespoon paprika
2 teaspoons salt
1 teaspoon cayenne pepper
BURGERS:
1 pound ground beef
1/4 cup finely chopped onion
1 teaspoon salt
1 teaspoon Cajun Seasoning Blend (recipe above)
1/2 to 1 teaspoon hot pepper sauce
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
1 garlic clove, minced
4 hamburger buns
Sauteed onions, optional

Steps:

  • Combine all seasoning blend ingredients in a small bowl or resealable plastic bag; mix well. , In a bowl, combine the first eight burger ingredients; shape into four patties. Cook in a skillet or grill over medium-hot heat for 4-5 minutes per side or until burgers reach desired doneness. , Serve on buns; top with sauteed onions if desired. Store remaining seasoning blend in an airtight container.

  • Rinse (cold water) and sort through the beans. Discard any pebbles or debris that may be present. In a large bowl, cover the rinsed beans with about 3” of cold water and allow beans to soak overnight, or at least 8 hours. After soaking, place beans in a large soup pot with 8 cups of water. Bring to a rolling boil, then reduce the heat to medium and simmer for about 2 hours, or until beans are completely tender. (If water amount gets too low, just add 1/2 cup at a time just to cover the beans.)
  • While beans are cooking, prepare the vegetables. Dice each pepper and onion into 1/4” pieces (or smaller) and set aside.
  • When beans are cooked through, drain off any excess liquid, reserving 1 cup of the “bean stock”. Allow the beans to cool.
  • Using either a food processor, blender, or potato masher, blend the bean mixture into a stiff “bean paste”. If the mixture becomes too thick, add small amounts of the leftover bean stock. Transfer mixture into a large mixing bowl.
