THE BEST CAESAR SALAD RECIPE

The Best Caesar Salad Recipe image

Our Caesar salad takes the best from Julia Child's and Caesar Cardini's recipes: crisp inner romaine leaves, crunchy croutons, and a little or a lot of anchovy, as you like, all tossed together in a creamy dressing.

Provided by J. Kenji López-Alt

Categories     Appetizer     Quick and Easy     Salads     Salad

Time 25m

Yield 4

Number Of Ingredients 11

3 tablespoons plus 1/4 cup (105ml) extra-virgin olive oil, divided
2 medium cloves garlic, minced (about 2 teaspoons)
3 cups hearty bread, cut into 3/4-inch cubes
2 ounces finely grated Parmesan cheese (about 1 cup), divided
Kosher salt and freshly ground black pepper
1 large egg yolk
1 tablespoon (15ml) juice from 1 lemon
2 to 6 anchovies (see note)
1 teaspoon (5ml) Worcestershire sauce (see note)
1/3 cup (80ml) canola oil
2 heads romaine lettuce, inner leaves only, washed and carefully dried, large leaves torn into smaller pieces, smaller leaves left intact

Steps:

  • Adjust oven rack to middle position and preheat oven to 375°F (190°C). In a small bowl, combine 3 tablespoons (45ml) olive oil with minced garlic and whisk for 30 seconds. Transfer to a fine-mesh strainer set over a large bowl and press with the back of a spoon to extract as much oil as possible, leaving garlic behind. Reserve pressed garlic separately. Add bread cubes to garlic oil and toss to coat.
  • Add 2 tablespoons Parmesan cheese, toss again, and season to taste with salt and pepper. Transfer to a rimmed baking sheet. Bake until croutons are pale golden brown and crisp, about 15 minutes. Remove from oven and toss with 2 more tablespoons Parmesan. Allow to cool.
  • While croutons bake, make the dressing. Combine egg yolk, lemon juice, anchovies, Worcestershire sauce, pressed garlic, and 1/4 cup Parmesan cheese in the bottom of a cup that just fits the head of an immersion blender or in the bottom of a food processor. With blender or processor running, slowly drizzle in canola oil until a smooth emulsion forms. Transfer mixture to a medium bowl. Whisking constantly, slowly drizzle in remaining 1/4 cup (60ml) extra-virgin olive oil. Season to taste generously with salt and pepper.
  • To serve, toss lettuce with a few tablespoons of dressing, adding more if desired. Once lettuce is coated, add half of remaining cheese and three-quarters of croutons and toss again. Transfer to a salad bowl and sprinkle with remaining cheese and croutons. Serve.

CAESAR SALAD WITH RED ROMAINE

Caesar Salad With Red Romaine image

Provided by Geoffrey Zakarian

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 16

1/2 cup fresh lemon juice
1 to 2 anchovy fillets
2 tablespoons Worcestershire sauce
1 pasteurized large egg yolk
1/2 cup canola oil
1 clove garlic, minced
1 1/2 teaspoons grated lemon zest
1/2 teaspoon dijon mustard
1/2 teaspoon honey (preferably chestnut honey)
Dash of hot sauce
1/2 teaspoon chardonnay vinegar (or other white wine vinegar)
1/2 cup freshly grated parmesan cheese
4 to 5 heads baby red romaine lettuce
1/2 cup freshly grated parmesan cheese
French-bread croutons, for topping
Fresh lemon juice, for sprinkling

Steps:

  • Make the dressing: Blend the lemon juice, anchovies, Worcestershire sauce, egg yolk, canola oil, garlic, lemon zest, mustard, honey, hot sauce and vinegar in a blender until well incorporated and fluffy. If the dressing is too thick, blend in a little cold water. Gently fold in the parmesan. (Store leftover dressing in the refrigerator, covered, for up to 1 week.)
  • Make the salad: Slice the baby romaine lengthwise into spears, leaving some of the stem intact so the leaves don't separate. Put the lettuce in a large bowl, drizzle with 1 to 2 tablespoons of the dressing and gently toss with your hands (do not over-toss). Transfer to a large platter or bowl. Sprinkle with the grated parmesan. Add some croutons, crumbling them slightly as you add them. Sprinkle fresh lemon juice over the entire salad right before serving. Bon appetit!

KILLER CAESAR SALAD WITH OYSTER CROUTONS

Killer Caesar Salad with Oyster Croutons image

Provided by Chuck Hughes

Time 25m

Yield 4 servings

Number Of Ingredients 15

3 slices bacon, diced
2 romaine hearts, roughly torn
Parmesan cheese
1 egg yolk
1 clove garlic, smashed
2 tablespoons Dijon mustard
2 anchovies, optional
1 tablespoon capers
1/2 cup vegetable oil
Juice of 1 lemon
1/2 cup grated Parmesan cheese
Salt and freshly ground pepper
12 oysters
Oil, for frying
Flour, for dredging

Steps:

  • Chuck Hughes' bold Caesar salad topped with oyster croutons is an exceptional twist on an old classic.
  • For the salad: In a skillet, cook the bacon until crispy, about 8 minutes. Remove from skillet and set aside on paper towel to soak up the excess fat.
  • For the dressing: Add the yolk, garlic, Dijon mustard, and anchovies, if using to a mortar and pestle, crush until a paste forms. Add the capers and blend well. Add oil slowly in a continuous stream, whisking until it emulsifies. Add lemon juice and half the Parmesan cheese. Alternately, you can combine these ingredients in a blender and slowly add the oil. Add a little water if the consistency is too thick. Season with pepper. Set aside.
  • For the oyster croutons: Heat oil in a deep fryer to 360 degrees F. Remove the oysters from their shells and dredge in the flour. Fry oysters for 2 minutes or until golden brown. Remove and set aside on paper towel.
  • For serving: In a large bowl, mix the romaine lettuce with the vinaigrette. Add the bacon and Parmesan. Garnish with the oyster croutons and serve.

1 teaspoon kosher salt
½ teaspoon ground black pepper
2 cloves garlic, pressed
3 anchovy fillets, chopped
1 teaspoon kosher salt
1 large egg yolk
2 tablespoons lemon juice
1 teaspoon Dijon mustard

  • When ready to serve, add lettuce and 1/2 of the croutons to the bowl with the remaining dressing; toss until well coated. Reserve remaining croutons for another use.
