CHOCOLATE OAT SNACK CAKE



Chocolate Oat Snack Cake image

A sprinkling of walnuts and chips tops this subtly sweet treat from Bonnie Spaulding, Litchfield, New Hampshire.

1-3/4 cups boiling water
1 cup quick-cooking oats
1/2 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1-3/4 cups all-purpose flour
2 tablespoons baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 package (11-1/2 ounces) milk chocolate chips, divided
1 cup chopped walnuts

Steps:

  • In a small bowl, combine water and oats; let stand for 10 minutes. Meanwhile, in a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in oat mixture. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in 1 cup chips., Pour into a greased 13-in. x 9-in. baking pan. Sprinkle with walnuts and remaining chips. Bake at 350° for 40-45 minutes or until a toothpick comes out clean. Cool on a wire rack.

Kids Can Make: Oatmeal-Chocolate Snack Cakes image

These delightful treats have a soft, tender crumb that harks back to old-fashioned snack cakes from the grocery store. For little kids: Let them dump the ingredients into the mixing bowls, whisk together the dry ingredients and stir in the chocolate chips. For big kids: Let them measure out the ingredients, spray the baking pan with cooking spray and help spread the batter in the baking pan.

Cooking spray
1 cup whole-wheat pastry flour
3/4 cup rolled oats
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
6 tablespoons unsalted butter, melted and slightly cooled
1 large egg
3/4 cup packed light brown sugar* (See Cook's Note)
1/2 cup unsweetened applesauce
3/4 cup semisweet mini chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom of a 9-inch square baking pan with a foil strip long enough to overhang on 2 opposite sides. Spray the foil lightly with cooking spray; set aside.
  • Whisk together the flour, oats, baking soda and salt in a medium bowl; set aside. Whisk the butter, egg, brown sugar and applesauce in a large bowl until combined. Add the dry ingredients to the wet and mix until barely mixed. Stir in the chocolate chips.
  • Spread the batter in the prepared baking pan. Bake until the cake is light brown around the edges and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Remove from the oven and let cool on a rack for 15 minutes. Use the foil overhang to lift the cake out of the pan and let cool completely on the rack. Invert onto a plate and peel the foil off. Re-invert the cake onto a cutting board, cut into 12 pieces and serve.

I would make this for my daughters as an afterschool treat. It produces a moist, dense, delicious cake. Since it's baked in a 9x9 pan, there's not a whole lot of cake around to tempt me for too long! Make your own frosting or use store-bought. Or simply dust it powdered sugar!

1 cup quick-cooking oats
8 tablespoons margarine
1 1/2 cups water, boiling
2 eggs
1/2 cup cocoa
1 cup flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In a medium bowl, place the oats and the margarine.
  • Pour the boiling water over the oats & margarine and allow to sit for 20 minutes.
  • Add the eggs to the oatmeal mixture and blend together.
  • Sift together the dry ingredients and add to the wet mixture; stir well.
  • Pour into a greased 9x9 cake pan and bake at 375 degrees for 25 to 30 minutes or until cake tests done.
  • Cool completely and frost.

6 banana-flavored, marshmallow-filled snack cakes
2 tablespoons unsweetened cocoa powder
12 standard cream-filled chocolate sandwich cookies (not double-stuffed), separated (plain-chocolate sides reserved for another use)
1/4 cup purchased caramel sauce or corn syrup
12 semisweet chocolate chips
6 whole almonds
36 orange candy-coated sunflower seeds (about 3 tablespoons)

Steps:

  • Place the snack cakes on a parchment-lined work surface. Using the cookie cutter, gently score half circles onto each side of the cake to denote the owl's wings (don't cut through, just make a line with the cutter). Use a dry art brush loaded with cocoa powder to color the half circle marks to denote the owl's wings.
  • Place a chocolate chip onto the cream covered cookie halves to create pupils. Using a separate kitchen-dedicated art brush, brush a dime-sized portion of the caramel or corn syrup onto the back of each cookie to act as "glue." Place two cookies side-by-side onto the upper-third portion of the snack cake, creating eyes. Brush a small amount of caramel onto one side of a whole almond and place it just below each pair of owl eyes to create a beak.
  • Brush a small amount of caramel, approximately 1/2-inch long, onto the left and right bottom edge of the snack cake. Place three sunflower seeds, pointed-ends down, on each of the caramel brushstrokes to create talons. Repeat with the remaining snack cakes and ingredients.
