TOAD IN THE HOLE
American Toad in a hole is one of the first recipes I had my children prepare when they were learning to cook. Much easier than the European version, this fun egg-in-a-hole is sure to please. - Cut a 3-in. hole in the middle of the bread and discard. In a small skillet, melt the butter; place the bread in the skillet. , Place egg in the hole. Cook for about 2 minutes over medium heat until the bread is lightly browned. Turn and cook the other side until egg yolk is almost set. Season with salt and pepper.

- Melt the bacon grease in a non-stick pan over low heat.
- Cut a 1 1/2 to 2-inch hole from the center of the bread slice; lay in the hot skillet. When the side facing down is lightly toasted, about 2 minutes, flip and crack the egg into the hole; season with salt and pepper. Continue to cook until the egg is cooked and mostly firm. Flip again and cook 1 minute more to assure doneness on both sides. Serve immediately.

Steps:
- Cut two 1-inch thick slices of pound cake.
- Make a hole in the middle of each with a small shot glass or cuff.
- Cut your creme egg in half, reserve.
- Melt butter in the pan.
- Fry slices of pound cake without egg on one side til golden.
- Flip the slices and then pur your creme egg halves in the middle of each toast.
- Finish frying til both sides are toasty and creme egg is starting to melt and get all gooey.
- Enjoy with a large glass of milk.

THE ROYAL NAVYS' TOAD IN THE HOLE
This dish was often served to the ships crew in the ROYAL NAVY during the late 1800s to mid 1950s. It was so popular that the largest portion was served to the rating who could recite the following.It was an old tradition.----------------- Father Dear father come home to us now, The clock in the steeple has struck one, We've Dover soles, lemon soles camasoles too, and polony with pullovers on. - Crack the eggs into a measuring cup, note the quantity.
- Place eggs aside and measure to the same level the flour and then the milk.
- Put the ingedients into a bowl with a good pinch of salt and beat them together to make the batter. The more air bubbles you produce the better the batter will be. Place batter in the fridge for 30 minutes.
- In the meantime prepare the potatoes.
- Heat the oven on high heat.
- In medium sized roasting dish, pour enough oil to a depth of 1/2 ". put the dish in the oven to heat the oil, when oil is almost to the point of smoking, place the potato cubes on the bottom of the dish, followed by the sausages. Put dish in the oven for 5 minutes.
- Take batter from fridge and beat again.
- Now pour the batter mix over the sausages and return dish to the oven.
- Cook on high heat till the batter is risen and golen brown.
- Serve with green beans and a good brown gravy.

- To make the batter in a blender, combine the flour, eggs, milk, salt and a few grindings of pepper in the blender jar, and blend at high speed for 2 to 3 seconds. Turn off the machine, scrape down the sides of the jar, and blend again for 40 seconds.

- (To make the batter by hand, beat the eggs and salt with a whisk or a rotary or electric beater until frothy. Slowly add the flour, beating constantly. Then pour in the milk in a thin stream and beat until the mixture is smooth and creamy). Refrigerate the batter for at least 1 hour.
- Once the batter is set preheat the oven, 200 degrees.
- Now add a drizzle of oil into a baking tray lay the sausages in the tray. Next slowly poor the batter over the sausages making sure you cover 2/3 of the sausages in batter.
- Next place the baking tray into the oven for 30 minutes. Once the batter is brown and you can see that the sausages are cooked. Remove baking tray from the oven and serve immediately.

- Pre-heat oven to 425 (220 C/ Gas 7).
- Place butter and sausages in a 10" x 12" roasting pan.
- Cook for 10 minutes, or until they are done to your liking.
- Sift the flour into a bowl.
- Break in the egg.
- Gradually add half the milk, beating to form a smooth batter.
- Pour in the remaining milk and beat until quite smooth.
- Alternatively, add the flour, milk and egg to a blender or food processor and blend until smooth.
- Pour the batter into the roasting pan and bake for 40-45 minutes, until the batter is well risen and golden.
SAUSAGE TOAD IN THE HOLE
Another Bero recipe popular in my family. This is usually served as one very filling portion for one person, but can easily be two or three if you add side dishes. I usually have about 1/3 to 1/2 a cup of batter left over to make a few pancakes the next morning.

- In a blender or food processor mix the milk eggs and salt. Add the flour in small amounts and mix each time to avoid lumps. The consistency should be about equal to single cream.
- Using a bit of sunflower oil or the like make sure the inside of your roasting tray is well coated. (I usually use about a 10x6 With rounded corners)
- Place the sausages in the tray and place in the oven at 220C (200 fan assisted) Cook for ten minutes.
- Remove the tray and turn the sausages over. Pour the batter around and between the sauages. You want it fairly level and the depth to be about half-way up the sausages.
- Return to the oven for 15 minutes. The reduce the heat to 200C (180C Fan assisted) for another 20 minutes. Don't open the door until they are finished if you can help it.
- Any left over batter can be saved in the fridge and used for pancakes. If the batter seperates you can just stir it with a spoon.

- Preheat the oven to 200C/Gas 6/fan oven 180°C
- Tip the onions into a small shallow non-stick tin (about 23x30cm/ 9x12in). Arrange the sausages on top of the onions, then add the oil and roast for 20 minutes.
- Sift the flour into a bowl, drop the egg in to the centre and beat in the milk a little at a time until it makes a smooth batter. Stir in the mustard and thyme and season.

- In a skillet over medium heat melt the butter. When the skillet is evenly coated with butter place the slice of bread in the skillet. Crack egg into the center of the hole in the pieces of bread. You can also place the center of the bread in the pan to toast too.
- Cook the egg sets a bit on the bottom of the pan; about 30-45 seconds. Season egg with salt and pepper. Flip bread over after about a minute and season the other side.
- Let egg cook until desired doneness. Your goal is golden brown toast, white, not browned/burned egg whites and a soft unbroken yolk.
