CABBAGE WITH BACON & ROOTS

Steps:
- In a large pan melt the butter. Add the bacon and sizzle for 5 mins until golden. Add the garlic and thyme to the pan and stir for 1 min. Take the pan off the heat, remove the bacon mixture and reserve.
- Add the celeriac and carrot batons into the now empty pan with a little of the bacon-flavoured butter. Gently cook for 10 mins until soft, then add the cabbage and cook for 5 mins until it starts to soften. Add the bacon and garlic back to the pan, then add the white wine. Allow the wine to evaporate for a few mins then season the mixture and serve. This can be made ahead and left in the pan, then reheated.

My family loves this fried cabbage recipe. I serve it with homemade cornbread. Make a lot, because there will not be any left.

Steps:
- Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
- Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.

- Preheat the oven to 425 degrees F (220 degrees C).
- Mix bacon, lemon juice, Worcestershire sauce, olive oil, salt, and pepper together in a bowl. Set aside.
- Lay each cabbage quarter on a sheet of aluminum foil that is large enough to wrap it up. Pour bacon sauce evenly over each quarter to cover; wrap in foil until completely sealed.
- Roast in the preheated oven until tender and heated through, 20 to 30 minutes.
