CABBAGE ROLL IN A BOWL



Cabbage Roll in a Bowl image

Genuine imitation cabbage rolls with barely any work. Play with your food! Add olives, or use pork instead of beef. Add diced sweet peppers. Use chili powder instead of Italian seasoning and add a chopped jalapeno. This is amazingly good.

1 tablespoon olive oil
1 onion, chopped
3 garlic cloves, chopped
1 tablespoon italian seasoning
2 lbs ground beef
1 (29 ounce) can tomato sauce
2 (5 ounce) bags shredded cabbage
1 cup uncooked instant rice
1/2 teaspoon salt
3 cups beef broth
1 dash ground pepper (optional)
1 cup mozzarella cheese, grated (optional)

Steps:

  • Preheat oven to 375.
  • Put olive oil, finely diced or chopped onion, minced garlic, and ground beef in a pan; brown, stirring.
  • Drain the meat and vegetable mixture and set aside.
  • In the pan mix the tomato sauce and the rice.
  • In one 9x13 baking pan or 2 8" pans, layer 1/3 the cabbage, 1/3 of the beef mix and 1/3 of the sauce mix.
  • Repeat the layers until you are either out of ingredients or out of room.
  • Sprinkle with black pepper if using.
  • Pour 3 cups beef broth over the 9x13 pan or 1 1/2 cups beef broth over each 8x8 pan.
  • If you will use mozzarella, bake at 375 one hour and then add the mozzarella on top. If not using mozzarella bake one hour and 15 minutes. Remove if done a slight bit earlier.
  • Let sit 5-10 minutes to set up a tiny bit.

1 large head red cabbage
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup sour cream
1 cup mayonnaise
1/2 cup chopped green onions
1/2 cup minced fresh parsley
2 teaspoons lemon juice
1/2 teaspoon dill weed
Assorted fresh vegetables

Steps:

  • Gently peel back outer leaves of cabbage. Slice 1/2 in. from bottom of cabbage so it sits flat. Cut a 3-in. circle in the top of the cabbage; hollow out a third of the cabbage to form a bowl (save removed cabbage for another use)., In a large bowl, combine the spinach, sour cream, mayonnaise, onions, parsley, lemon juice and dill. Spoon into cabbage bowl just before serving. Serve with vegetables.

Warm and delicious corned beef dip. Serve with crackers or toast the hunks of bread taken from the center of the Italian loaf. You can also bypass the bread altogether and bake in a 9x13 covered pan. I have also cooked this in a slow cooker on Low for 3 hours.

Number Of Ingredients 9

1 tablespoon vegetable oil
¾ onion, chopped
3 (2.5 ounce) packages deli-sliced corned beef (such as Buddig ®), diced
2 (8 ounce) packages cream cheese, softened
1 ½ cups mayonnaise
1 (8 ounce) carton sour cream
1 cup shredded Swiss cheese
1 teaspoon garlic powder
1 (1 pound) loaf unsliced Italian bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil in a skillet over medium heat. Cook and stir onion until tender, 5 to 7 minutes.
  • Transfer onion to a large mixing bowl.
  • Stir corned beef, cream cheese, mayonnaise, sour cream, Swiss cheese, and garlic powder into onion. Mix until thoroughly combined.
  • Slice a piece of bread from the top of the Italian bread and hollow the center of the loaf, creating a long bread bowl. Leave at least 1/2 inch of bread on the sides. Reserve bread chunks from center of loaf for dipping if desired.
  • Spoon the corned beef mixture into the bread bowl.
  • Wrap the filled bread bowl in aluminum foil and place on a baking sheet.
  • Bake in preheated oven until the dip is fully cooked and bubbling, 1 to 1 1/2 hours.
