Kids of all ages love this --- I also added in some cinnamon and raisins but that is optional --- you can also make this in the microwave, I use an 8-cup pyrex measuring cup just remove a few times and stir --- I top this with a bit of 18% cream and sprinkle with a sugar/cinnamon topping --- the recipe is enough for 2-4 servings but I can eat the whole thing myself this is so good :)

1 egg, beaten
1 3/4 cups milk
1/2 cup brown sugar (can use more)
1 pinch salt
1 teaspoon cinnamon (optional)
1 cup rolled oats
2 tablespoons butter

Steps:

  • In a heavy-bottomed saucepan over medium heat, whisk together the egg with milk, brown sugar, pinch salt and cinnamon (if using).
  • Mix in the oats; bring to a simmer.
  • When the oats begin to boil, cook and stir with a wooden spoon until thickened.
  • Remove from heat and stir in the butter until melted.
  • Serve immediately.
  • Delicious!

1 ¾ cups milk
½ cup packed brown sugar
1 cup rolled oats
2 tablespoons butter

Steps:

  • In a saucepan over medium heat, whisk together the egg, milk and brown sugar. Mix in the oats. When the oatmeal begins to boil, cook and stir until thick. Remove from the heat, and stir in butter until melted. Serve immediately.

1 cup quick-cooking rolled oats
1 cup regular oats
1 1/2 cups butter (soft or melted)
1 1/2 cups brown sugar
2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup milk chocolate chips
16 ounces mrs. richardson's butterscotch caramel fudge sauce

Steps:

  • Mix all ingredients except chocolate chips and caramel sauce. Pat 1/2 or 3/4 in a 9 x 13 pan.
  • Bake at 350 degrees about 10 minutes.
  • Spread jar of butterscotch caramel fudge sauce on base, Sprinkle with chocolate chips, them top with remaining dough, crumbled.
  • Bake at 350 degrees for about 20 minutes.
  • Chill and cut into bars.

¾ cup butter, softened
¾ cup white sugar
¾ cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
3 cups rolled oats
1 ⅔ cups butterscotch chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl beat the butter or margarine, white sugar and brown sugar together. Add the eggs and vanilla, beating well.
  • Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown.

1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1 cup butter, softened (plus a little more to grease the pan)
3/4 cup white sugar
2 eggs
1 teaspoon vanilla (or a bit more)
3 cups regular oatmeal, uncooked
1 (12 ounce) package butterscotch chips

Steps:

  • Preheat oven to 350°F.
  • Grease a 9x13 pan with butter.
  • Combine flour, soda, salt and cinnamon.
  • In a large mixing bowl cream butter, then add sugar and mix until fluffy.
  • Add eggs and vanilla and beat well.
