I made these and took them to the hospital where i volunteer in the Gift shop. I gave them out to various people and every single one told me this was a great tasting cookie. Myself, not a...

3/4 c 1 and 1/2 sticks (6 oz) salted butter softened
6 oz softened cream cheese (1/4 of an 8 oz pkg.
3/4 c white (granulated) sugar
3/4 c brown sugar
2 tsp vanilla extract
1 tsp baking soda
2 large eggs
3 c flour (pack it down when you measure it.)
1 c butterscotch chips (6 oz)
1 c white chocolate chips
1 1/2 c salted, chopped cashews. measure before chopping

Steps:

  • 1. Preheat oven to 350 degrees In a large bowl, mix the softened butter, softened cream cheese, white sugar and brown sugar until they are light and fluffy Mix in the vanilla and the baking soda.
  • 2. Add the eggs one at a time mixing after each addition. (if using the electric mixer) stop now as you will have to add and mix the last three ingredients by hand.
  • 3. Add the Butterscotch chips to your bowl and stir them in. Add the white chocolate chips to your bowl and mix thoroughly. NOTE: i used two squares of Whie Almond Bark for mine chopped. Add the chopped salted cashews and mix well.
  • 4. Drop the dough by a mounded teaspoonful on cookie sheet. (At this point it stated UNGREASED pan) however, I sprayed mine lightley with pan oil. They came out fine. They tended to stick on the ungreased one. Flatten the cookies a bit with th blade of a spatula or your impeccably clean palm. They will spread a little more in the oven but not a lot.
  • 5. Bake for about 10 minutes or until they are golden on top. Let them cool for a minute or two and transfer to cookie rack to cool completely Yields about 4 1/2 dozen.

1 cup plus 2 tablespoons butter, softened
3/4 cup plus 2 tablespoons packed brown sugar
2-1/2 cups all-purpose flour
1-3/4 teaspoons salt
TOPPING:
1 package (10 to 11 ounces) butterscotch chips
1/2 cup plus 2 tablespoons light corn syrup
3 tablespoons butter
2 teaspoons water
2-1/2 cups salted cashew halves

Steps:

  • In a large bowl, cream the butter and brown sugar until light and fluffy. Combine flour and salt; add to creamed mixture just until combined. , Press into a greased 15x10x1-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned., Meanwhile, in a small saucepan, combine the butterscotch chips, corn syrup, butter and water. Cook and stir over medium heat until smooth., Spread over crust. Sprinkle with cashews; press down lightly. Bake for 11-13 minutes or until topping is bubbly and lightly browned. Cool on a wire rack. Cut into bars.

This recipe is from my daughter-in-law. These cookies are totally awesome! When I make them with the grandkids, I have to make two batches, because we eat one batch before they're even done.

1/2 c butter
1/3 c firmly packed brown sugar
1 c flour
1 c salted cashews or other salted nuts
2- 6oz pkg butterscotch morsels
1 c raisins - (optional)

Steps:

  • 1. Cream butter and sugar.
  • 2. Add flour and mix until a firm dough forms.
  • 3. Stir in cashews.
  • 4. Crumble mixture onto a cookie sheet.
  • 5. Bake at 375* for 12 - 15 minutes until golden brown
  • 6. Cool the baked cookie-nut mixture.
  • 7. Melt butterscotch morsels.
  • 8. Break the cookie-nut mixture into small pieces.
  • 9. Add the cookie-nut mixture to the butterscotch morsels. (If you're adding raisins - add them now).
  • 10. Stir mixture until everything is coated.
  • 11. Drop by teaspoonfuls onto waxed paper.
  • 12. Chill for 15 minutes or until set.

Many requests for the recipe came after making these for hubby's office for Xmas. There are other similiar recipes on Zaar but none are exactly made like these are. Hubby and I could not stop eating the second batch I made until they were all gone. This is from Homemade Favorites 2004, Robin Hood pamphlet.

2 cups Robin Hood all-purpose flour or 2 cups whole wheat flour
1/2 cup granulated sugar
3/4 cup butter, softened
4 eggs
1 cup granulated sugar
1 cup corn syrup
1/4 cup butter, melted
1 (300 g) package butterscotch chips
1 1/3 cups halved cashews

Steps:

  • CRUST: PREHEAT oven to 350F (180C).
  • Grease a 13" X 9" cake pan.
  • Combine all ingredients for crust, mixing until crumbly.
  • Press firmly into prepared pan.
  • Bake in centre of 350F oven for 15-18 minutes, or until light golden.
  • TOPPING: Beat eggs, sugar, corn syrup and melted butter until blended.
  • Stir in butterscotch chips and cashews.
  • Pour evenly over crust.
  • Bake for 30-35 minutes longer, or until set and golden.
  • Cool completely in pan on rack then cut into bars.
  • TIP: Chill for easy cutting.
  • Store in refrigerator.
  • Excellent for freezing.

Steps:

  • In a large mixing bowl beat the butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, baking soda, and salt; beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much flour as possible with the mixer. Using a wooden spoon, stir in any remaining flour, rolled oats, cashews, chocolate pieces, and butterscotch pieces.
  • Drop dough by rounded teaspoons 2 inches apart onto an ungreased baking sheet. Bake in a 375* oven for 6 to 7 minutes or until edges are golden. Transfer cookies to a wire rack; let cool.

1 (18 1/4 ounce) package yellow cake mix
1/4 cup packed light brown sugar
1/2 cup butter, melted
2 eggs
1 teaspoon vanilla
1/2 cup chopped unsalted dry-roasted cashews
1/2 cup butterscotch chips

Steps:

  • Heat oven to 350 degrees.
  • Place cake mix, brown sugar, melted butter, eggs and vanilla in large bowl of electric mixer. Beat on low speed 1 minute. Stop machine; scrape down sides of bowl with rubber spatula. Beat 1 minute more. Stir in half the cashews and butterscotch chips.
  • Transfer batter to ungreased 11 3/4 x 7 1/2 x 1 3/4 inch glass baking dish. Spread batter evenly to all sides using rubber scraper. Sprinkle remaining cashew pieces and butterscotch chips over batter.
  • Bake until golden brown and wooden pick in center comes out clean, about 30 to 32 minutes. Transfer pan to wire rack to cool completely.
  • Cut cake into 24 bars. Remove bars from pan with metal spatula.

Mix in pudding mix (just the powdery mix, not actual pudding). Mix in salt, baking soda, and then flour, mixing until well blended. Let the dough sit for 5 minutes, then stir in 1 cup of butterscotch chips and nuts.
  • Drop cookie dough balls (I used a 2 tablespoon cookie scoop) onto 2 cookie sheets that have been lined with silpat baking mats or parchment paper. Press a few of the remaining butterscotch chips onto the top each cookie. (You can do the same with extra cashews if you wish.) The pressing on top just makes them prettier, but is not necessary. Slightly press the balls down with the palm of your hand - very gently. Chill for at least 30 minutes.
  • Preheat oven to 350°F. Bake for 11-14 minutes, until the edges lose their sheen. I like them a little under done at about 11-12 minutes, but if you like your cookies more done, cooke them a few minutes longer.
