Mashed butternut squash is an easy, versatile, and healthy side dish you can pair with so many dishes. Savory, naturally vegan, and absolutely delicious!

1 large butternut squash (about 3 to 4 pounds)
2 tablespoons extra virgin olive oil (divided)
1 tablespoon pure maple syrup (plus additional to taste)
1 teaspoon kosher salt (divided, plus additional to taste)
1/2 teaspoon black pepper (divided, plus additional to taste)
1/4 teaspoon ground nutmeg (freshly grated if possible)
1/8 teaspoon cayenne pepper (optional)
1/4 cup almond milk or milk of choice (use half and half or full-fat coconut milk for a richer flavor)
2 tablespoons Parmesan cheese or nutritional yeast (optional but very good)
2 tablespoons chopped fresh parsley

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. For easy clean up, line a rimmed baking sheet with parchment paper or aluminum foil.
  • Wash and dry the squash. Trim off the top and bottom ends, then carefully slice it in half lengthwise. (No need to peel it.) Scoop out the seeds. Place it cut-side up on the prepared baking sheet.
  • Brush the cut sides of the squash with 1 tablespoon of the olive oil and the maple syrup. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bake for 1 hour 15 minutes, or longer depending upon the size of your squash, until very tender and the squash pierces easily with a fork. Let rest until cool enough to handle.
  • Carefully scoop out the flesh and place it in the bowl of a stand mixer or a large mixing bowl. Add the nutmeg, cayenne, milk, Parmesan, parsley, and remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mash the butternut squash, either by hand with a potato mixer, or with an electric hand mixer on low speed, or the paddle attachment of a stand mixer on low speed, until it is as smooth as you like (we leave ours a bit chunky). Taste and adjust the seasoning as you like. Enjoy hot.

2 lbs butternut squash, peeled and seeded (about 1 large one)
2 tablespoons olive oil
3 tablespoons salted butter
1/4 teaspoon ground nutmeg or 1/4 teaspoon fresh nutmeg, grated

Steps:

  • Preheat oven to 375 degrees.
  • Cut peeled and seeded squash into 1-inch cubes.
  • Spray a baking sheet or dish with nonstick cooking spray.
  • Place squash on baking dish and drizzle with olive oil.
  • Toss to coat and arrange in a single layer.
  • Bake for 45 minutes, or until very tender and beginning to brown, stirring occasionally.
  • Transfer to serving dish or bowl.
  • Melt butter in small saucepan over medium-low heat, until butter turns a nut-colored brown, about 4 minutes only-- don't burn it!
  • Pour over squash, toss to coat, and sprinkle with nutmeg.
  • Serve hot.

Nonstick vegetable oil spray
2 pounds butternut squash (about 1 large), halved, seeded, peeled, cut into 1-inch cubes
2 tablespoons olive oil
3 tablespoons unsalted butter
1/4 teaspoon freshly grated whole nutmeg or ground nutmeg
Additional nutmeg (for garnish)

Steps:

  • Preheat oven to 375°F. Spray large rimmed baking sheet with nonstick spray. Place squash on sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat; arrange squash in single layer. Bake squash until brown and very tender when pierced with fork, stirring occasionally, about 45 minutes. Transfer to bowl.
  • Melt butter in small saucepan over medium-low heat until foam subsides and butter turns nut-brown, about 4 minutes. Pour over squash; stir lightly to coat. Toss with more salt and 1/4 teaspoon nutmeg. Sprinkle with more nutmeg and serve.

2 pounds butternut squash, cubed
2 onions, chopped
1 tablespoon butter
4 cups vegetable broth
½ cup heavy cream
salt and pepper to taste
1 dash ground nutmeg
1 dash ground cloves
1 dash ground cinnamon

Steps:

  • In a large microwave safe dish combine squash, onions and butter. Cover and microwave on high for 4 minutes. Peel squash. Stir in broth and cook on high for another 20 to 25 minutes, or until squash is tender. Puree squash, onions and broth in a food processor or blender. Add cream, salt and pepper, and microwave on high for another 3 to 4 minutes, or until heated through. Flavor with nutmeg, cloves and cinnamon to taste.

  • Carefully cut the squash in half lengthwise. Lay the squash, flesh side down, on a baking pan. Roast in a 350 degree oven until the squash is golden, sweaty, and soft. This will take about 30-45 minutes. After the squash has roasted, remove it from the oven, and allow it to cool.
  • Which just happens to be the next step. After the squash has cooled, remove the skin and seeds using a spoon.
  • Alright. Now we're getting somewhere. Whenever it works for you, brown your diced onion in the olive oil until fragrant, soft, and slightly golden. Five or so minutes.
  • In a food processor or blender, combine the squash puree, the softened onion, shredded Parmesan, a few good pinches of sea salt & freshly ground pepper, and the nutmeg. Puree that delicious-orange-sauce until it's nice and smooth. You may need to add up to a cup of water to really help and get it nice and creamy. That's fine. As long as it gets smooth, add as much water as you need.This may also involve using a spatula to scrape the sides of the bowl a few times. Don't be lazy and skip this. We don't want any onion or squash chunks in here people – this is a velvety sauce. Ain't no chunks in velvet.
