Here's what you need: all-purpose flour, sugar, kosher salt, baking powder, baking soda, buttermilk, eggs, unsalted butter, unsalted butter, maple syrup

Provided by Betsy Carter

Categories     Breakfast

Yield 4 servings

Number Of Ingredients 10

2 cups all-purpose flour
2 tablespoons sugar
½ teaspoon kosher salt
½ teaspoon baking powder
½ teaspoon baking soda
2 cups buttermilk
2 eggs
3 tablespoons unsalted butter, melted
½ teaspoon unsalted butter, plus more to serve
maple syrup, to serve

Steps:

  • In a bowl, add the flour, sugar, salt, baking powder, and baking soda, and whisk to combine.
  • In a bowl or measuring cup, whisk the buttermilk, eggs, and melted butter until smooth.
  • Add the buttermilk mixture to the dry ingredients, gently incorporating with a spatula. Make sure not to overmix, as that will result in dense pancakes.
  • Add the butter to a pan over medium low heat. Once the butter begins to bubble, add ⅓ cup (80 ml) of batter to the pan.
  • Cook until the top side begins to bubble and the bottom is golden brown. Flip the pancake and cook until the underside is golden brown. Repeat with the remaining batter.
  • Enjoy!

Provided by Diana Rattray

Categories     Breakfast     Brunch

Time 27m

Yield 6

Number Of Ingredients 11

3/4 cup orange juice (freshly squeezed or store-bought)
2 tablespoons finely grated orange zest
3/4 cup buttermilk
3 large eggs
2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup granulated sugar
5 tablespoons melted butter
1 tablespoon vegetable oil or shortening (for the skillet or griddle, or as needed)

Steps:

  • Gather the ingredients. If you plan to keep batches warm until all of the pancakes are made, heat the oven to 200 F.
  • In a large bowl, whisk the orange juice with the orange zest, buttermilk, and eggs until smooth.
  • In another bowl, combine the flour, salt, baking powder, baking soda, and sugar. Stir this dry mixture into the wet mixture, blending well. Add the melted butter and stir until smooth.
  • Heat a skillet or griddle over medium heat. Add the oil or shortening to the hot skillet and spread to coat evenly. When the oil is hot, pour about 1/4 cup of batter into the pan for each pancake.
  • When bubbles begin to appear on top and the edges begin to look dry, flip the pancakes and cook until the other side is lightly brown. Adjust the heat under the pan, as necessary.
  • Remove the pancakes to a plate or a baking sheet topped with a wire rack and keep warm in the preheated oven or a warming drawer until all of the pancakes are ready.
  • Serve with your favorite pancake accompaniments and enjoy.

ALMOND PANCAKES WITH RASPBERRY SYRUP

Almond Pancakes with Raspberry Syrup image

Almond extract in the batter and crunchy chopped salted almonds sprinkled on top give these pancakes a delightful almond flavor. Maple syrup infused with cooked, mashed raspberries makes the perfect topping.

Provided by Food Network Kitchen

Time 40m

Yield 4 servings (makes about 20 pancakes)

Number Of Ingredients 12

1/2 cup raspberries
1/4 cup pure maple syrup
1 3/4 cups all-purpose flour (See Cook's Note)
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon fine salt
1 1/4 cups milk, at room temperature
2 large eggs, at room temperature
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
3 tablespoons unsalted butter, melted, plus more for the skillet
Chopped salted almonds, for topping

Steps:

  • Preheat the oven to 200 degrees F. Bring the raspberries and maple syrup to a boil in a small saucepan over medium heat. Reduce the heat to a simmer and cook until the berries soften and the syrup takes on a pinkish color, 7 to 8 minutes. Remove from the heat and mash the berries with a potato masher or fork. Strain the syrup. Keep warm or set aside to cool to room temperature.
  • Whisk the flour, sugar, baking powder and salt together in a large bowl. Whisk the milk, eggs, vanilla and almond extracts together in a medium bowl until combined. Whisk in the melted butter. Add the milk mixture to the flour mixture and stir until it just comes together in a thick lumpy batter.
  • Heat a large nonstick skillet over medium heat and brush lightly with butter. Drop 2 tablespoons batter for each pancake into the skillet. Cook until bubbles appear on the tops of the pancakes, and the undersides are golden brown, 2 to 3 minutes. Flip the pancakes and continue to cook until golden on the underside and cooked through in the center, about 1 minute more.
  • Transfer to the oven to keep warm and continue to make pancakes until all the batter is used. Serve topped with the raspberry syrup and chopped almonds.
