Lettuce Wedges With Blue Cheese Dressing image

Number Of Ingredients 11

Juice of 1 large lemon
1 cup mayonnaise
1 cup buttermilk
1/2 cup sour cream
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
6 ounces blue cheese, crumbled (about 1 1/2 cups)
2 heads iceberg lettuce
10 slices bacon, cooked and crumbled
1 medium tomato, finely diced
Freshly ground pepper

Steps:

  • In a medium mixing bowl, combine the lemon juice, mayonnaise, buttermilk, sour cream, garlic powder and onion powder. Whisk the mixture together until smooth. Add the cheese and mix just until blended. Chill in an airtight container in the refrigerator at least 2 hours before serving.
  • Core and quarter each head of lettuce. Serve a generous dollop of dressing over each lettuce wedge and top with the bacon and tomato. Season with pepper.

1/2 cup sour cream
Juice of 1 large lemon (about 1/4 cup)
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
6 ounces blue cheese, crumbled
Kosher salt and freshly cracked pepper

10 slices bacon
3 heads iceberg lettuce
2 medium tomatoes, finely diced

Steps:

  • In a medium mixing bowl, combine the buttermilk, mayonnaise, sour cream, lemon juice, garlic powder and onion powder. Whisk the mixture together until smooth. Add the blue cheese and mix just until blended. Season with salt and pepper. Chill in an airtight container in the refrigerator for at least 2 hours and up 2 days before serving.
  • Cut the bacon into 1/4- to 1/2-inch pieces and cook them in a large skillet over medium heat until brown and crisp, 5 to 7 minutes.
  • Core and quarter each head of lettuce and divide among 12 salad plates.
  • Serve a generous dollop of dressing over each lettuce wedge. Top with the crumbled bacon and diced tomato.

1/2 teaspoon paprika
1/4 teaspoon ground coriander
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup sugar
1 tablespoon butter
1 cup pecans
Nonstick cooking spray
4 ounces goat cheese, at room temperature
2 tablespoons buttermilk
1 teaspoon honey
1 teaspoon white wine vinegar
2 tablespoons olive oil
1/4 teaspoon white pepper
Pinch salt
1 tablespoon chopped fresh tarragon leaves
1/2 cup canola oil
2 shallots, thinly sliced
8 cups spring greens mix
Goat Cheese Dressing
Salt and freshly ground black pepper
Chopped candied pecans
1 1/2 cups red grapes, sliced in 1/2

Steps:

  • Spiced Pecans:
  • In a small bowl combine the paprika, ground coriander, cayenne pepper, salt, and pepper. Set aside.
  • In a small saucepan over medium heat add the sugar and cook until all of the sugar is melted and light brown in color. Carefully whisk in the butter. Add the spice mix and turn off the heat. Add the pecans and stir with a rubber spatula until all of the pecans are completely coated. Spray with nonstick cooking spray which will help the pecans separate. Once all of the pecans are coated turn out onto a greased sheet tray or a sheet tray lined with a silicone mat. Break up any pieces that may be stuck together. Let cool 5 minutes before serving with the salad.
  • In a medium bowl whisk together the goat cheese and buttermilk. Whisk in the remaining dressing ingredients until combined and smooth. Set aside.
  • Heat the canola oil in a small saucepan over medium heat. Add the shallots and fry until crispy and light brown, about 5 minutes. Remove to a plate lined with a paper towel to drain.
  • Add the greens to a large bowl. Drizzle with 3/4 of the dressing, season with salt and pepper, to taste, and toss to coat the greens. Transfer the salad to a platter and garnish with candied pecans, sliced grapes, and fried shallots. Drizzle with remaining dressing and serve.

For the Goat Cheese Dressing
4 Ounces Goat Cheese (softened)
¼ Cup Half and Half (or you could use whole milk)
5 Teaspoons White Vinegar
Drizzle of Honey
Pinch of Kosher Salt
A Few Grinds of Black Pepper
For the Salad
1 Head Buttercrunch Lettuce
4-5 Slices of Bacon (cooked and crumbled)
¼ Cup Pomegranate Arils

Steps:

  • For the Goat Cheese Dressing Add all of the ingredients to a bowl and use a fork to thoroughly mix everything. Since the cheese has been softened (I used a log of goat cheese), this doesn't take long. Give the dressing a taste and adjust seasoning. Slip the dressing into the refrigerator to chill while you make the salads. For the Salad Thoroughly rinse the lettuce and remove as much water as possible from the leaves. Slice off the hard part of the bottom (if there's roots attached, remove and throw them away) but leave enough so that the head holds together. Carefully slice the head in half from top to bottom then slice the halves in half the same way. If the core is thick, you can cut a triangle out of it and still have the leaves attached. You want them to stay in a wedge form. Arrange each wedge on a plate. Spoon chilled dressing over each wedge then top with bacon and pomegranate. Serve Notes If you use crumbled goat cheese, you may need to use a food processor or blender to get it smooth and to make sure everything is well blended.

  • Build the salad by placing 1 lettuce wedge on each of 8 plates. Drizzle equal amounts of dressing over each wedge. Scatter tomatoes, onion, and 1/2 pound blue cheese over each salad.
