Here's a classic old-fashioned beef stew that simmers for hours in the slow cooker. I call it my "lazy" stew because it's so easy to make on busy days. Perfect for hearty appetites, it's guaranteed to keep folks coming back for more!

Number Of Ingredients 13

1 boneless beef chuck roast (1 to 1-1/2 pounds)
1 envelope onion soup mix
2 teaspoons browning sauce, optional
1/2 teaspoon salt
1/2 teaspoon pepper
6 cups water
2 cups cubed peeled potatoes (1/2-inch pieces)
6 to 8 medium carrots, cut into chunks
1 medium onion, chopped
1 cup frozen peas, thawed
1 cup frozen corn, thawed, optional
5 tablespoons cornstarch
6 tablespoons cold water

Steps:

  • Place roast in a 5-qt. slow cooker; sprinkle with soup mix, browning sauce if desired, salt and pepper. Pour water over meat. Cover and cook on low for 8-10 hours or until meat is tender., Remove roast to a cutting board; let stand for 5 minutes. Add vegetables to slow cooker. Cube beef and return to slow cooker. Cover and cook on low for 1-1/2 hours or until vegetables are tender. , Combine cornstarch and cold water until smooth; stir into stew. Cover and cook on high for 30-45 minutes or until thickened.

1-1/2 pounds beef stew meat
1-1/2 pounds potatoes (about 3 medium), peeled and cut into 1-inch cubes
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) beef broth
2-1/2 cups fresh baby carrots (about 12 ounces)
1 large tomato, chopped
1 medium onion, chopped
2 tablespoons taco seasoning
2 garlic cloves, minced
1/2 teaspoon salt
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • In a 5- or 6-qt. slow cooker, combine the first ten ingredients. Cook, covered, on low 7-9 hours or until beef and vegetables are tender., In a small bowl, mix cornstarch and water until smooth; gradually stir into stew. Cook, covered, on high 30-45 minutes longer or until stew is slightly thickened.

2 lb stew meat
1/2 c dry, red wine
1 - 10.5 oz cream of mushroom soup
1 - 8 oz can, sliced mushrooms, drained
1 pkg lipton onion soup mix
3/4 lb baby carrots - optional
IF TOO THICK WHEN FINISHED...JUST ADD A LITTLE WATER OR BEEF BROTH
1/4 - 1/2 c beef broth - optional - to thin out - do not add while cooking, decide after if you want to use
I HAVE STARTED DOUBLING THIS RECIPE, AND ADDING MORE VEGGIES, SUCH AS CHUNKS OF POTATOES...I JUST DOUBLE THE MEAT AND SOUP...ALWAYS COMES OUT DELICIOUS

Steps:

  • 1. Place ingredients in a large pot or casserole dish with a tight lid, in the order I have listed. Do not stir. Bake in a 300 degree oven for 3 hours. Do not lift the lid.
  • 2. When the time is up, stir and serve. I added carrots this time, sometimes I add potatoes. Entirely up to you. Served with mashed potatoes today. Enjoy!

3/4 pound beef top sirloin steak, trimmed and cubed
1 tablespoon canola oil
4 medium unpeeled potatoes, cut into 1-inch pieces
5 medium carrots, cut into 1-1/2-inch chunks
1 celery rib, cut into 1-inch chunks
1 large onion, cut into 1-inch chunks
1 can (14-1/2 ounces) chunky stewed tomatoes
3 tablespoons quick-cooking tapioca
1/8 to 1/4 teaspoon pepper
1 cup frozen peas

Steps:

  • In a Dutch oven, brown steak in oil. Add the next eight ingredients. Cover and bake at 350° for 1-1/2 to 2 hours or until a thermometer reads 160°, stirring twice. , Stir in peas; cover and let stand for 5 minutes before serving.

1 (10.5 ounce) can condensed cream of mushroom soup
½ (10.5 ounce) can water
1 pound cubed beef stew meat
4 medium potatoes, peeled and cubed
4 carrots, cut into 1/2-inch slices
2 medium onions, diced
1 cup celery, cut into 1/2-inch slices
1 pinch garlic powder, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Combine mushroom soup and water in a saucepan over low heat. Cook and stir until hot, 3 to 4 minutes.

2 pounds beef tenderloin steaks, diced
8 potatoes, peeled and diced
4 (12 ounce) cans tomato-vegetable juice cocktail (such as V8®)
3 cups diced carrots
1 cup diced celery
1 onion, diced
3 tablespoons tapioca
1 tablespoon white sugar
salt and ground black pepper to taste

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Stir beef, potatoes, tomato-vegetable juice cocktail, carrots, celery, onion, tapioca, sugar, salt, and pepper together in a roasting pan; cover.
  • Bake in preheated oven until beef and potatoes are tender, about 5 hours.

1 onion small, cut in wedges
2 bay leaves small
1/2 cup water
1/2 cup dry red wine
2 tablespoons flour
1 tablespoon lemon juice
2 teaspoons beef bouillon
1 garlic medium clove, minced
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 (20-ounce) package stew vegetables thawed*
parsley Chopped (optional)

Steps:

  • Preheat oven to 300°. In a 2 1/2 -quart casserole, layer meat and onion. Add bay leaves.In a medium bowl, stir water, wine, flour, lemon juice, bouillon granules, garlic, salt and pepper until blended. Pour over meat.Cover and bake for 3 hours or until meat is almost tender. Remove bay leaves. Add well thawed stew vegetables stir. Cover and bake 45 to 60 minutes longer or until vegetables are tender.Sprinkle with parsley.* Vegetables will take at least 2 hours to thaw.

1/3 cup soy sauce
1 teaspoon salt

1 cup beef broth (may be canned)
1 (8 ounce) can tomato sauce

Steps:

  • Place into crockpot in this order: potatoes, carrots, meat.
  • Sprinkle the meat with the soy sauce, salt, paprika, flour, in that order.
  • Spread the chopped onions on top of that.
  • Combine the beef broth and tomato sauce; pour over all of the above.
  • Cover and cook on low 9 to 11 hours.
  • May be cooked on high for 5 hours.
  • May be stirred during cooking, although, stirring is not necessary.
