This chocolate cake recipe from Lucinda Scala Quinn's "Mad Hungry" cookbook involves minimal cleanup -- the ingredients are blended in the very pan that goes into the oven.

1 1/2 cups unbleached all-purpose flour, spooned and leveled
1 cup sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
6 tablespoons vegetable oil
1 teaspoon pure vanilla extract
1 tablespoon white vinegar
1 cup cold water

Steps:

  • Preheat oven to 350 degrees. In an 8-inch square baking pan, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  • Make a well in center of flour mixture and add oil, vanilla, vinegar, and water. Whisk until well combined. Bake until a toothpick inserted in center comes out clean, 35 to 40 minutes. Let cool completely in pan on a wire rack.

I got this recipe from an old book which belonged to my grandmother. She was the best in baking cakes, I would say! I loved her chocolate cakes with those chocolate fudge frostings....This is one of a cake which is very quick and requires only the basics. This is great after a family dinner just whenever you need! Enjoy!

1/3 cup shortening
1 1/2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg
1 1/2 teaspoons vanilla

Steps:

  • Grease and lightly flour a 9x9x2-inch baking pan and set aside.
  • Place shortening in small mixer bowl, add flour, sugar, baking powder and salt.
  • Add half the milk, the egg and vanilla.
  • Mix at low speed of electric mixer till blended, beat 2 minutes at medium speed.
  • Scrape sides of bowl, beat in remaining milk and beat 2 minutes more at medium speed.
  • Turn into prepared pan.
  • Bake in 375°F oven for 25 to 30 minutes or till wooden pick inserted in center comes out clean.
  • Cool on wire rack. Frost with desired frosting.

I got this recipe from the Fanny Farmer Cookbook - years and years ago. It is the first cake I ever learned to make. I believe the first time I made it I was about 10 years old. I also taught my boys how to make this when they were 8 and 10. It's very easy. Tasty enough, but the frosting is what adds the most flavor. I use the store bought frosting on it. Very simple to make and like the title says - it's great for a dessert on a busy day!

1 2/3 cups flour
1 cup sugar
1/4 teaspoon salt
2 1/2 teaspoons baking powder
1/3 cup shortening
2/3 cup milk
1 egg
1 teaspoon vanilla

Steps:

  • Cream shortening and sugar.
  • Add egg.
  • Sift in flour, baking powder and salt.
  • Add milk and vanilla. Mix well.
  • Put in a greased 9x9 pan.
  • Bake at 350 degrees until done. (toothpick inserted comes out clean). Start checking at 20 minutes. I haven't made this in a while, so I'm not sure. If it looks done enough to check with the toothpick at 20 minutes, then by all means, check it. It may take up to 30 minutes to bake.

Frost with favorite frosting while warm.

  • Whisk together flour, baking powder, nutmeg, and salt in a medium bowl. Add to butter mixture in 3 additions, alternating with one-third of the milk, beginning and ending with flour mixture. Beat on low speed until batter is smooth after each addition, scraping bowl to ensure all of the flour mixture is incorporated.
  • Pour batter into prepared pan, and smooth top. Bake in preheated oven until a wooden pick inserted in center comes out clean, 30 to 35 minutes. If the top browns too quickly before the cake is done, cover top with a sheet of aluminum foil. Cool in pan on a wire rack 10 minutes. Remove cake from pan to wire rack, cut into squares, and serve warm.
