Slow Cooker Beef Stew & Dumplings - the perfect comfort food! A delicious beef stew loaded with vegetables cooked in your Crock Pot & topped with herb dumplings for a hearty one pot meal. A timeless classic you'll never tire of.

400 g stewing steak cut into chunks (I used chuck steak)
6 tbsp plain flour or all purpose flour
½ tsp salt
½ tsp black pepper
4 tbsp rapeseed oil or vegetable oil
2 large onions, sliced
4 carrots, sliced into chunks
4 medium potatoes, peeled & cut into small chunks
1 bay leaf
1 tsp dried thyme
1 tbsp tomato puree
1 tbsp Worcester sauce
750 ml beef stock
1 tbsp freshly chopped parsley
110 g plain flour or all purpose flour
1 tsp baking powder
50 g vegetable or beef suet
1 tbsp freshly chopped parsley
4 to 6 tbsp water
110 g plain flour or all purpose flour
1 tsp baking powder
50 g grated hard white vegetable fat coated with a tablespoon of rice flour
1 tbsp freshly chopped parsley
4 to 6 tbsp water

Steps:

  • MAKE YOUR STEWLightly grease the inside of your slow cooker with oil or cooking spray and turn your slow cooker on high.
  • Add salt and pepper to your flour and coat the beef chunks before setting the coated meat to one side.
  • Heat the oil in a large frying pan on a medium heat and brown the onions and carrots before transferring them to your slow cooker.
  • Add the floured beef chunks to your frying pan and brown well before adding to the slow cooker.
  • Add any remaining flour to your pan and cook out in the oil before deglazing the pan with the beef stock - stir well to avoid any lumps.
  • Pour the pan contents into your slow cooker and add the potatoes, herbs, tomato puree and Worcester sauce. Stir well and then put on the slow cooker lid.
  • Cook on high for 5 hours or low for 8 hours before making your dumplings.
  • MAKE YOUR DUMPLINGSSieve the flour and baking powder into a bowl and stir in the suet or vegetable fat and chopped parsley.
  • Add 4 tablespoons of water and stir again to form a dough, adding extra water if necessary.
  • Divide the dough into 8 pieces and turn out onto a floured work surface.Shape into small balls, add to your slow cooker and cook on high for 45 minutes with the lid on.

STEW:
2 lb boneless beef top round of bottom, cut into bite size pieces
2 c ready to eat baby carrots cut up
1 c celery,sliced
1 1/2 c peeled pearl onions left whole
14 oz can diced herb tomatoes, undrained
2 jar(s) (4.5 oz. each) sliced mushrooms, drained
3/4 c dry red wine or beef broth
1 tsp seasoned salt
1 tsp each dried thyme leaves(rubbed) and ground mustard
1/2 tsp pepper
3 Tbsp all purpose flour
DUMPLINGS:
1 1/2 c bisquick mix
1/2 tsp dried thyme leaves, rubbed
1/4 tsp ground sage
1/2 c milk

Steps:

  • 1. Stew: In a 5 qt. slow cooker or crock pot, mix all stew ingredients except water and flour. Cover; cook on low for 8-10 hours (or high for 5 hours)
  • 2. In a small bowl, mix water and flour; gradually stir into beef mixture.
  • 3. Biscuits: In a small bowl, mix bisquick, thyme and sage. Stir in milk just until bisquick is moistened. For fluffy dumplings, drop the dough onto the stew pieces rather than directly into the liquid. The dumplings will start to cook from the steam right away. For heavier dumplings drop dough by spoonfuls onto hot beef liquid.(they will be a little soggy this way), but delicious either way! Increase heat setting to high. Cover; cook 25 to 35 minutes or until toothpick inserted in center of dumplings comes out clean. Serve immediately.

2 onions, sliced
1/4 cup water
1/4 cup all-purpose flour
1/4 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dry mustard
1/2 teaspoon salt
3/4 cup beef broth or 3/4 cup dry red wine
8 sliced mushrooms
14 1/2 ounces diced tomatoes with juice
2 cups white flour
4 teaspoons baking powder
1/4 teaspoon salt
4 tablespoons butter or 4 tablespoons margarine
1 cup 2% low-fat milk
1/4 teaspoon dried sage, crumbled
1/4 teaspoon dried rosemary, crumbled
1/2 teaspoon dried thyme
1/4 teaspoon dried chives

Steps:

  • Preparation:.
  • Combine the beef, carrots, onions, tomatoes, thyme, pepper, mustard, mushrooms, and wine or beef broth.
  • If you are using wine, use all the salt.
  • If you are using beef broth you might not need it depending on the saltiness of the broth so taste it to see.
  • Cover and cook on a low heat for 8 to 10 hours or a high heat for 4 or 5 hours.
  • The vegetables and beef will become tender.
  • Combine the flour and water and stir this slowly into the beef stew.
  • For Herb Dumplings.
  • Combine flour, baking powder, sage, rosemary, thyme, chives and salt in a bowl.
  • Cut in butter that's been kept at room temperature or use soft margarine.
  • Stir milk lightly into the flour mixture with a wooden spoon and adjust amounts to make sure that you have a moist dumpling dough.
  • Drop spoonfuls of the dough on to the hot beef stew, then cover allow to cook on high for 30 minutes or until a toothpick inserted into the herb dumplings comes out clean.
  • Do not overcook dumplings. Dumplings may disintegrate if left to cook too long.

6 slices bacon, chopped
1 package (32 oz) boneless skinless chicken breasts, cut into 1 1/2-inch pieces and patted dry
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter
1 medium onion, coarsely chopped
2 cups sliced carrots
1 package (8 oz) cremini mushrooms, quartered
1 tablespoon chopped garlic
1/2 cup dry white wine (white Burgundy or Chardonnay)
2 cups Progresso™ chicken broth (from 32-oz carton)
1 teaspoon dried thyme leaves
1 bay leaf
2 tablespoons Gold Medal™ all-purpose flour
2 tablespoons water
Chopped fresh Italian (flat-leaf) parsley, if desired
Betty Crocker™ creamy butter mashed potatoes, prepared as directed on package, if desired

Steps:

  • In 5-quart Dutch oven, cook bacon over medium-high heat 7 to 9 minutes, stirring frequently, until bacon is browned and crisp. With slotted spoon, remove bacon to 5- or 6-quart slow cooker.
  • Season chicken with salt and pepper. Add half of the chicken to bacon drippings in Dutch oven; cook 3 to 5 minutes, turning occasionally, until browned. Remove chicken to slow cooker with bacon. Repeat with remaining chicken.
  • Add 1 tablespoon of the butter to Dutch oven; stir in onion, carrots and mushrooms. Cook 5 to 7 minutes or until onion is tender and mushroom juices have released. Add garlic; cook 30 seconds.
  • Add wine; heat to boiling, scraping bottom to release any brown bits. Cook 3 to 5 minutes or until wine is reduced by half. Transfer mixture to slow cooker. Stir in chicken broth, thyme and bay leaf. Cover; cook on Low heat setting 4 to 5 hours or until chicken is cooked through and vegetables are tender.
  • In small bowl, mix flour and water; stir into slow cooker. Cover; cook on High heat setting 20 to 25 minutes or until thickened. Stir in remaining 2 tablespoons butter. Discard bay leaf. Garnish with parsley. Serve with mashed potatoes.
