TUNA STEAK

Tuna Steak image

Recipe video above. The perfect tuna steak is seared on the outside and deliciously rare on the inside. It takes 2 1/2 minutes flat - fastest fish recipe ever! Tuna loin is lean so best served raw or rare if cooked, to enjoy the tender, almost creamy flesh. There's a reason why tuna is a darling of the fine dining scene! Best served just slightly warm or at room temperature. Pictured with Sauce Vierge, a summery, simple French salsa / vinaigerette sauce that pairs perfectly with fish!

Provided by Nagi

Categories     Main

Number Of Ingredients 7

2 x 180 - 200g (6.5 - 7oz) tuna ((skinless, boneless). 2.5-3cm / 1-1.2" thick (Note 1))
1 tsp olive oil
1/4 tsp sea salt
1/8 tsp black pepper
2 tsp olive oil (, or oil spray)
Sauce Vierge ((French salsa / vinaigrette for fish))
Chervil sprigs ((substitute small flat leaf or curly parsley leaves) or small edible flowers (optional))

Steps:

  • Prepare resting tray: Place a rack on a tray. (Note 3)
  • Oil and season tuna: Drizzle half the oil over the tuna. Smear over one side, then sprinkle with half the salt and pepper. Flip and repeat.
  • Heat skillet: Heat skillet (preferably a skillet with grille lines) over high heat until smoking hot. The hotter, the better!
  • Oil skillet (if required): If your skillet is not well-seasoned, brush skillet with olive oil or take pan off stove and spray with any oil (SAFETY WARNING! Note 4)
  • Cook first side: Place tuna steak in the skillet (I do one at a time for best results, Note 5) and cook for 45 seconds.
  • Rotate for grill lines: Turn steak 45 degree. Continue cooking another 45 seconds.
  • Cook other side: Flip tuna carefully, then leave for 1 minute or until the internal temperature in the middle reads 48°C / 118°F (Note 6).
  • Rest: Remove tuna from skillet and place on rack. Rest for 5 minutes - it will cool down almost to room temperature. This is desirable for easier slicing and better eating (Note 7) Serve! See Note 2 for sauce options.

PERFECT TUNA STEAK

Perfect Tuna Steak image

This ahi tuna steak recipe makes one brilliantly cooked piece of fish: in just 5 minutes! Here's how to cook tuna steak.

Provided by Sonja Overhiser

Categories     Fish

Time 25m

Number Of Ingredients 5

2 steaks (8 ounces) high quality ahi tuna (sashimi grade recommended; wild caught if possible*)
1/2 tablespoon neutral oil
3/4 teaspoon kosher salt
Fresh ground black pepper
For serving: Garlic Herb Sauce (optional)

Steps:

  • Allow the tuna steak to come to room temperature by letting it stand for at least 20 minutes.
  • Pat the tuna dry. Sprinkle it liberally with kosher salt and fresh ground black pepper on both sides to get a nice even coating (about 3/4 teaspoon kosher salt for 8 ounces).
  • Heat the oil in a medium skillet over medium high heat.
  • Add the tuna steak and cook 1 to 2 minutes per side, until lightly browned on the outside but still rare on the inside. The tuna will continue cooking while sitting. For a medium-rare tuna steak, the internal temperature should be 130 degrees Fahrenheit when measured with a food thermometer at the thickest point.
  • Cool for 2 minutes. Then slice the tuna against the grain into ½-inch slices and serve immediately, with the sauce if desired.

BUNSTEADS, A.K.A. HOT TUNA MELTS

Bunsteads, a.k.a. Hot Tuna Melts image

An old recipe, from an old friend, Jayne ... these are very filling and cheesy-gooey. Great with a side-salad for a Saturday night, sit-in-front-of-the-TV-type meal!

Provided by Terrie Hoelscher

Categories     Tuna Salads

Time 45m

Number Of Ingredients 9

1/4 lb velveeta cheese, cut into tiny cubes
3 hard boiled eggs, chopped
5 1/2 oz can of tuna
2 Tbsp chopped bell pepper
2 Tbsp chopped green olives
2 Tbsp chopped bread and butter pickle
2 Tbsp finely diced onion
1/2 c mayonnaise
6 hot dog buns, white or wheat

Steps:

  • 1. Preheat oven to 250° while mixing the filling.
  • 2. Combine all ingreds [except hot dog buns!] in a bowl. Mix lightly.
  • 3. Split buns, and fill them with the tuna mixture.
  • 4. If you buy your hot dog buns in a box, return the filled buns to the box in which they came. OR, wrap each filled bun in aluminum foil. Wrap kind of loosely, so the filling doesn't stick to the foil. You can wrap them all in one huge piece of foil, if that's the way you prefer to do it.
  • 5. Place boxed or foil-wrapped buns in the oven at 250°. Cook for about 30 minutes, until filling is hot, and the cheese is bubbly and melted. Serve right away, while hot.

OLD-FASHIONED CABBAGE ROLLS

Old-Fashioned Cabbage Rolls image

It was an abundance of dill in my garden that led me to try this. My family liked the taste so much that, from then on, I made my old-fashioned cabbage rolls recipe with dill. This is how to make easy cabbage rolls. - Florence Krantz, Bismarck, North Dakota

Provided by Taste of Home

Categories     Dinner

Time 1h55m

Yield 6 servings.

Number Of Ingredients 12

1 medium head cabbage (3 pounds)
1/2 pound uncooked ground beef
1/2 pound uncooked ground pork
1 can (15 ounces) tomato sauce, divided
1 small onion, chopped
1/2 cup uncooked long grain rice
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon snipped fresh dill or dill weed
1/8 teaspoon cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon sugar

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. Arrange the cabbage rolls seam side down over sliced cabbage. Combine the tomatoes, sugar and remaining tomato sauce; pour over the rolls. Cover and bake at 350° until cabbage rolls are tender, 1-1/2 hours.

BURGER SLIDERS WITH SECRET SAUCE

Burger Sliders with Secret Sauce image

These sliders are super easy to put together and are always a hit! I love that they are "fast food" without having to go to a restaurant. Take them to a party, make them for dinner or serve them on game day. The meat can also be made ahead of time in preparation for your gathering. -April Lee Wiencek, Chicago, Illinois

Provided by Taste of Home

Categories     Dinner

Time 30m

Yield 12 sliders

Number Of Ingredients 13

2 pounds ground beef
2 large eggs, beaten
3/4 cup minced onion, divided
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon pepper
1 package (17 ounces) dinner rolls
1/2 cup Thousand Island salad dressing, divided
10 slices American cheese
12 sliced dill pickles
1-1/2 cups shredded Iceberg lettuce
1 tablespoon butter, melted
1 tablespoon sesame seeds, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper just until combined; do not overmix. Place meat mixture on a large, parchment-lined baking sheet; shape into two, 6-in. x 8-in. rectangles, each about 1/2-inch thick. Bake until a thermometer reads 160°, 15-20 minutes., Meanwhile, without separating rolls, cut rolls in half horizontally. Spread 1/4 cup of dressing evenly over bottom halves of rolls., Blot meat with paper towels to remove excess fat; top meat with cheese and return to oven. Bake until cheese has just melted, 2-3 minutes. Place meat on bottom halves of rolls; spread with remaining 1/4 cup dressing. Layer with pickles, remaining 1/4 cup minced onion and shredded lettuce; replace with top halves of rolls. Brush butter on top of rolls; sprinkle with sesame seeds. Serve immediately.

My mom used to make this and it is my favorite meal. The pork butts come out so tender and juicy. 'Butts' are a favorite in my family. Serve with baked or mashed potatoes and a veggie. If you like a lot of sauce then double the recipe, the sauce is fantastic.

SAVORY PAN-SEARED TUNA STEAKS

Savory Pan-Seared Tuna Steaks image

These marinated tuna steaks, served rare, taste 'fancy' but are very easy to cook. Even my husband, who doesn't like most cooked fish, enjoys these steaks. A sprinkling of cracked black pepper is a good finisher for this dish.

Time 35m

Yield 2

Number Of Ingredients 9

¼ cup soy sauce
¼ cup extra-virgin olive oil
2 tablespoons lemon juice

1 teaspoon cayenne pepper, or more to taste
6 thin slices fresh ginger, minced
2 cloves garlic, minced
2 1-inch-thick tuna steaks, thawed

Steps:

  • Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
  • Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.
