MEDITERRANEAN TOMATO SALAD



Mediterranean Tomato Salad image

Simple Mediterranean tomato salad with feta, red onions, and fresh herbs, and finished with a bright citrus dressing of citrus and extra virgin olive oil.

Number Of Ingredients 12

6 to 7 medium ripe tomatoes, (sliced into wedges (on-the-vine tomatoes or heirloom tomatoes preferred) )
1 medium red onion, (halved, then thinly sliced)
3 garlic cloves, (minced)
1 cup packed chopped fresh parsley leaves, (chopped )
1 cup packed chopped fresh dill, (chopped)
2 1/2 tsp ground sumac
Kosher salt, (to your liking)
Black pepper, (to your liking)
1 lemon, (juice of)
2 tsp white wine vinegar
1/3 cup extra virgin olive oil
Feta cheese, (to your liking, optional )

Steps:

  • In a large salad or mixing bowl, add the tomatoes, onions, fresh herbs and garlic.
  • Add sumac, kosher salt and a generous sprinkle of freshly ground pepper. Add lemon juice, white wine vinegar and extra virgin olive oil. Toss to combine. Taste and adjust seasoning to your liking.
  • Transfer to a serving platter or bowl. Top with large pieces of quality feta cheese (optional). Enjoy!

This recipe evolved from a need to use the bumper crops of delicious cherry tomatoes we grow. It's one of my favorite cherry tomato recipes, especially at cookouts. -Sally Sibley, St. Augustine, Florida

Number Of Ingredients 8

1 quart cherry tomatoes, halved
1/4 cup canola oil
3 tablespoons white vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup minced fresh parsley
1 to 2 teaspoons minced fresh basil
1 to 2 teaspoons minced fresh oregano

Steps:

  • Place tomatoes in a shallow bowl. In a small bowl, whisk oil, vinegar, salt and sugar until blended; stir in herbs. Pour over tomatoes; gently toss to coat. Refrigerate, covered, overnight.

This is a good recipe to use up ripe summer tomatoes! Original source of this recipe is unknown, I inherited it in my Mom's box of recipes. Cook time is chill time.

Number Of Ingredients 10

5 medium ripe tomatoes, cut into 1-inch pieces
1 large green pepper, cut into 1-inch pieces
1/2 large vidalia onions or 1/2 other sweet onion, halved and thinly sliced
salt, to taste
pepper, to taste
1/4 cup water
2 tablespoons sugar
2 tablespoons vinegar
1 tablespoon salad oil
6 slices bacon, crisp-fried, drained and crumbled

Steps:

  • Toss vegetables together in a bowl and season with salt and pepper to taste.
  • Whisk together well the water, sugar, vinegar and oil; pour over tomato mixture; toss to coat; cover and chill 1-4 hours, stirring gently once or twice.
  • Just before serving, transfer to a serving bowl with a slotted spoon; sprinkle with bacon.
