One of my favorite annual treats from my CSA is Edamame, a fresh soybean that is a popular snack in Japan. Did you know that soybeans actually enrich the soil they are grown in? They enrich the body that eats them, too! :)

edamame, as much as you would like to prepare (I use fresh, but frozen is easier to find and works well)
salt

Steps:

  • If using fresh, strip all of the pods off of your soybean bunch and boil them whole in salted water for 5 minutes.
  • (Start timing once the water returns to a boil) Drain the pods, liberally salt them, and then slip the seeds out of the pods directly into your mouth.
  • Have a discard bowl handy for the shells.
  • You may never want to eat potato chips again!

1 lb fresh ground beef
1 large egg
3 tablespoons freshly grated breadcrumbs
2 tablespoons jamaican jerk spice
2 tablespoons freshly chopped sweet white onions

Steps:

  • Combine egg, crumbs, onion, and jerk seasoning.
  • Add in the ground beef and mix well.
  • Shape into patties and grill or pan fry.
  • Serve in a crusty roll with fresh tomato slice and mayo, and lettuce.

SIMPLE BULGARIAN BANITSA



Simple Bulgarian Banitsa image

Banitsa is a very popular dish in Bulgaria, there are many ways to make it and variations in ingredients. My recipe is simple and has always came out great.

16 sheets phyllo dough, thawed
2 cups feta cheese
3 large eggs
1 teaspoon salt
3/4 cup butter (melted)
1 cup milk

Steps:

  • 1. Preheat oven to 350 degrees, ( glass pyrex pan works great for this recipe) brush melted butter all over bottom amd sides of baking pan.
  • 2. Mix salt, cheese and milk and eggsin a bowl , combine and stir ingredients well.
  • 3. Put down 5 sheets of phyllo dough down in buttered pan and brush over with melted butter. You can also put down one sheet at a time and butter seperatelly.
  • 4. Pour enough of the mixture to cover phyllo sheets and top with 3 more sheets.
  • 5. Continue to repeat the process: put down 3 sheets and make sure to brush them well with butter then layer with mixture until all of the mixture is done, then cover with atleast 2 sheets. I preffer not to butter the top sheets as they tend to get very hard after the banitsa is done baking.
  • 6. Bake for 25-35 minutes or until golden, make sure mixture is cooked in the middle by cutting into banitsa. When the mixture is cooked it will not be runny.
  • 7. Once banitsa is done cover it with either a towell or the lid to the pan and let it sit and cool before cutting it or serving. Covering it lets the steam soften the phyllo dough sheets.

An Iranian meat casserole. Cooking and preparation time does not include time to soak and cook peas and cook rice, which (done simultaneously) will take approximately 1 1/2 hours.

3 cups cooked rice
1/2 cup dried split yellow peas, soaked 1 hour and cooked in water to cover until tender
1 lb ground lamb
2 medium onions, chopped
1/2 teaspoon salt
fresh ground pepper
1/2 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 cup dried pitted prunes, chopped
1 medium onion, chopped
1/4 cup chopped almonds
1 tablespoon butter
1 tablespoon chopped parsley
1 teaspoon crushed dried mint
1/2 cup beef broth

Steps:

  • Combine the rice with the peas through cloves until well mixed; spread 1/2 of mixture in a buttered 9-inch square baking dish.
  • Fry the prunes through almonds in the butter 5 minutes; stir in parsley and mint. Spread this stuffing over the layer of rice/peas/lamb mixture and cover with the rest of the rice mixture.
  • Add beef broth to the dish and bake at 350F 45 minutes.

8 ounces veal round steaks, ground
8 ounces ground pork
1 onion, small, minced
3 tablespoons parsley, minced fresh
1 teaspoon salt, or more to taste
1/2 teaspoon cumin, ground (generous 1/2 teaspoon), or more to taste
1/2 teaspoon black pepper, freshly ground, or more to taste

Steps:

  • 1. Preheat the grill to high.2. Combine all the ingredients in a mixing bowl and stir to mix with a wooden spoon. To test the mixture for seasoning, sauté a teaspoon of it in a nonstick skillet until cooked through, then taste, adding salt, pepper, or cumin to the remaining mixture as necessary the mixture should be highly seasoned.3. Divide the meat into 4 equal portions. Lightly wet your hands with cold water, then form each portion into a patty 3 inches across and about 3/4 inch thick (see Note).4. When ready to cook, oil the grill grate. Arrange the burgers on the hot grate and grill, turning with a spatula, until nicely browned on both sides and cooked through, about 4 minutes per side. Serve immediately.Serves 4Note: If not planning to cook immediately, place on a large plate, cover loosely with plastic wrap, and refrigerate.
