Steps:
- Preheat the oven to 425 ºF and lightly grease a large rimmed baking sheet.
- If using extra-firm tofu press out the extra water: Slice your tofu into 6 width-wise slabs and wrap in a lint-free towel or paper towel. Place some weights over the wrapped tofu, like a heavy cast iron skillet or books atop a baking sheet. Let drain for about 20-30 minutes before continuing.
- Cut your tofu into 18 'wings' or ~1/2" sticks. Cut the block of tofu into 6 slices width-wise if you haven't already for pressing, then slice each of those slabs into 3 slices lengthwise.
- Put the cornstarch (or arrowroot or tapioca starch) in one bowl, the plant milk in a second bowl, and mix together the bread crumb mixture in a third bowl. Pour some of the bread crumb mixture onto a plate.
- Dip each tofu 'wing' into the starch, followed by the milk, then roll in the breadcrumbs on the plate. Place the wing onto the prepared baking sheet and repeat with the remaining 'wings.' Use one hand for the starch and bread crumbs and your other for the milk to keep breading from clumping on your fingers. Add more of the breadcrumb mixture to the plate as needed.
- Bake the prepared tofu at 425 ºF for 25 minutes, flip, then bake an additional 10-15 minutes until the tofu wings are nice and crispy.
- While they're baking, make the buffalo sauce. Melt the vegan butter and stir in the hot sauce, granulated garlic, and salt.
- Put the tofu wings in a large mixing bowl and toss with the buffalo sauce to coat. Serve immediately.
- Leftover buffalo tofu wings can be re-crisped in the oven.

'BUFFALO' TOFU MAC AND CHEESE
I got this recipe from the Food Network and adapted it to suit my needs as a vegetarian! Even my meat-eating husband loves it. Although I've included the recipe in its original form (except substituting tofu of course), I usually only make 2/3 of the cheese sauce and it's still very cheesy. It's good with extra celery or some broccoli instead of all of the macaroni. Also, this is the only macaroni and cheese recipe I've ever found that tastes better the second day - and it freezes really well!

- Preheat oven to 400°F and line a tray with parchment or a silicone baking sheet. You can also use an air fryer for this recipe.
- Whisk together cornstarch, onion and garlic powder, paprika, vegetable oil, water, 1/2 teaspoon salt, and ground black pepper to preference. (If using an alternative flour, you may need an extra tablespoon or so of water. The mixture should be thick enough to coat the tofu, but thin enough that it still drips off the spoon.)
- In a separate bowl or shallow dish, whisk together breadcrumbs with a generous pinch of salt and pepper.

- Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. Place the cubed squash on the baking sheet and drizzle with 1 tbsp of the olive oil. Sprinkle with salt and pepper and toss to coat. Roast for 30-40 minutes, or until fork tender.
- Crumble the tofu by hand into a medium bowl. Whisk together the hot sauce, garlic, and oil or melted butter in a small dish and pour over the tofu. Toss to coat. Transfer onto a lightly greased baking sheet and bake for 25-30 minutes, stirring halfway through so that it gets evenly browned.
- cook the garlic: Warm the remaining 1 tbsp of oil in small saucepan over medium heat. Add the minced garlic and cook, stirring occasionally, until browned and fragrant, about five minutes. Remove from the heat and set aside.
- Once the squash has cooled slightly, you’re ready to make the butternut squash cheese sauce. Place the non-dairy milk, nutritional yeast, cooked garlic, roasted squash, salt, pepper, lemon juice, and apple cider vinegar in an upright blender and blend until smooth. Depending on the size of your blender, you might need to do this in two batches. Adjust seasonings as desired: Feel free to add more salt, lemon, or vinegar to suit your taste. Pour into a medium saucepan, cover loosely, and warm over low heat.
