This pasta dish has all the flavors of Buffalo chicken wings, and you don't have to get your fingers full of hot sauce. It's made on the stovetop and is finger-licking good!

2 cups rigatoni pasta
2 cups shredded cooked chicken breast
1 teaspoon dry ranch salad dressing mix (such as Hidden Valley Ranch®)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 (8 ounce) package Neufchatel cheese
1 (8 ounce) container sour cream
½ cup Buffalo wing sauce (such as Frank's RedHot®)
½ cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Season chicken with ranch dressing mix, salt, pepper, and garlic powder. Set aside.
  • Meanwhile, combine Neufchatel cheese, sour cream, and Buffalo wing sauce in a large saucepan over low heat. Cook, stirring constantly, until well combined, about 3 minutes. Add Cheddar cheese and stir well until melted. Add pasta and chicken and continue cooking until well incorporated and heated through.

1 tablespoon olive oil
1 lb ground beef
2 cloves garlic, minced
1 teaspoon salt
¼ teaspoon pepper
1 can crushed tomato
1 lb rigatoni
1 cup parmesan cheese, grated
1 cup mozarella, shredded
springform pan

Steps:

  • Boil the rigatoni in salted boiling water until just underdone or al dente.
  • Drain the pasta and place in a bowl with a little olive oil so the pasta doesn't stick together. Set aside.
  • Preheat oven to 400°F/200°C.
  • In a pan, heat the olive oil and add the ground beef.
  • Break up and stir the beef until brown.
  • Add in the garlic, salt, and pepper. Stir until combined.
  • Add in the crushed tomatoes and simmer until thickened, about 20 minutes.
  • Sprinkle the prepared pasta with the parmesan cheese and mix.
  • In a springform pan, place the rigatoni noodles standing up to fill the pan.
  • Pour the sauce over the noodles and bake at 400°F/200°C for 15 minutes.
  • Sprinkle the pie with the mozzarella cheese and bake for another 15 minutes at the same temperature.
  • Slice and serve!

1 tablespoon lime juice
guacamole, for serving

Steps:

  • In a small bowl, stir together the lime zest, chili powder, garlic powder, and salt until evenly combined.
  • In a medium bowl, toss the warm pasta with the avocado oil, lime juice, and half of the spice mixture. Stir well until evenly coated.
  • Preheat the air fryer to 390˚F (200°F) for 5 minutes.
  • Add the pasta to the air fryer basket and cook for 8 minutes, tossing every 2-3 minutes and watching carefully to avoid burning, until the pasta is beginning to brown and crisp.
  • Return the pasta chips to the same medium bowl and toss with the remaining spice mixture until well coated. Let the pasta chips cool slightly, about 5 minutes. The chips will continue to crisp up as they cool.
  • Serve the pasta chips with guacamole for dipping.
