- In a large skillet over medium heat, warm the vegetable oil. Add the onions and season them with half of the salt and pepper. Toss to mix well and cook until they are soft and well browned, about 15 minutes. With a slotted spoon, transfer the onions to a bowl and set them aside.
- Preheat the broiler on high. Season the chops with the remaining salt and pepper. Add a little more oil to the pan if needed, then raise the temperature to medium-high. Add the chops and cook for 3 to 4 minutes per side, until they are golden brown.
- Under the broiler, toast the buns on the cut sides only, until lightly browned. On each bun, place a pork chop and then top it with one-sixth of the onions. Serve immediately.

- Season each pork chop with salt and pepper. Set aside.
- Melt the butter in a large skillet (I like to use my cast iron skillet but any will do) over medium-high heat.
- Add 2 tablespoons of hot sauce and stir to combine.
- Add pork chops and cook for 3 to 4 minutes on each side.
- Remove from the heat and transfer the pork chops along with the juices to a baking sheet (or leave is the cast iron skillet if you're using one). Top each pork chop with remaining hot sauce and a slice of mozzarella cheese.
- Place under the broiler on high for 5 minutes, or until the cheese is bubbly.
- Serve hot!

BUFFALO RANCH PORK CHOPS
I had these beautiful pork chops & wanted to give them the ranch dressing flavor but thought they needed something else. So I decided to give them a bit of a kick by using Buttermilk & hot sauce. Adding a couple of eggs to the milk & hot sauce would assure that the breading would stick to the chops. I let the chops marinate in the milk mixture for 10 minutes then drained off the excess liquid, and covered them with a Ranch Parmesan Panko Breading, and baked them in the oven for 35 minutes. They turned out very moist, tender and juicy, and the flavor was great. Can't wait to make again.

- Preheat oven to 400 degrees F. Line a shallow baking dish with foil, then add a baking rack inside pan, then spray liberally with non stick cooking spray. Some of the ingredients used to make the chops.
- In a large gallon size zip lock bag add the parmesan cheese, dry ranch dressing mix, Panko bread crumbs and spices. Shake bag to combine spices, then set aside till needed.
- In a medium size bowl break 2 large eggs, add buttermilk and hot sauce, and whisk till blended.
- Add pork chops cover with egg mixture and let set for about 10 minutes, longer if a more intense flavor is desired.
- Remove from bowl, allow excess liquid to drop off, then add chops to a large platter.
- Cover chops with a portion of the bread crumb mixture & press into both sides of chops. The reason you pour the mixture onto the chops is to prevent contaminating the bread crumbs if there is some left over, you can freeze to be used later.
- Prepare shallow baking pan by adding a bakers rack, spray with non stick cooking spray.
- Add Pork chops to rack and bake in preheated 400 degrees F. oven and bake for at least 35 minutes, or until juices run clear. Of course if your chops are thicker it will require a longer baking time, if thinner, you will need less time.
- Remove from oven and serve as desired with accompanying side dishes. Applesauce is always good.
PORK CHOP SANDWICH
With apologies to the other two folk who posted Pork Chop Sandwich recipes, neither resembled what I think of as a true pork chop sandwich. I grew up in SW Montana, where the locally famous Pork Chop John's sandwich shops exist. I believe the originals are actually battered after flouring and then deep fried and I never pass up a chance to eat one if I am in Butte or Bozeman, but I don't even own a deep fryer, so I fiddled around with what originally was my favorite chicken fried steak recipe until I came up with this.

- Preheat oil in heavy skillet over medium-high heat.
- Mix the flour and spices together for a dredge and place in a pie pan or similar flat vessel. I like mine spicy, so feel free to adjust the spices to fit your tastes.
- Place beaten eggs in second pie pan.
- Place breadcrumbs in third pie pan.
- Place chops between two sheets of plastic wrap and pound until they are roughly 1/2" thick. I actually use my 48 needle meat tenderizer and dredge the chops in the flour/spice mixture prior to tenderizing to force some of the spices into the meat.
- Dredge chop in flour/spice mixture.
- Dip into beaten eggs, making sure both sides are well coated.
- Dredge in the breadcrumbs, thoroughly coating both sides.
- Place chop in pan, frying 3-4 minutes per side, until GBAD (golden brown and delicious).
- Drain briefly on paper towels or cake rack in a coookie sheet.
- Place on bun with condiments and garnishes of your choice. Traditional is yellow mustard, onion slice, tomato slice and lettuce. My brother likes applesauce, but then, he puts catsup on tacos, so what does he know? ;).

- Preheat the broiler on high. In a medium bowl, combine the blue cheese, celery and mayo. Mix well and set aside.
- Heat the oil in a large skillet over medium heat. On a flat plate, mix together the flour, salt, pepper, and paprika. Dredge the chops in the flour mixture, coating well on all sides. Shake off any excess flour. (Place the chops in the skillet and cook for about 4 minutes, until golden brown. Flip the chops and cook another 4 minutes until golden.) Transfer the chops to a plate lined with paper towels, to drain.
- In a medium microwave-safe bowl, whisk together the butter and hot sauce. Microwave on high for 15 seconds to warm.
- Toast the buns on the cut sides under the broiler until golden. Dunk each chop in the hot sauce mixture, shaking off any excess. Place the chop on a bun bottom. Top with one-fourth of the blue cheese mixture and the top of the bun. Serve.
