BUFFALO CHICKEN EMPANADAS WITH BLUE CHEESE SAUCE

- In a small skillet, saute onion and green pepper in oil until crisp-tender. Add garlic; cook 1 minute longer., In a large bowl, combine the chicken, mozzarella cheese, wing sauce, salt and pepper. Stir in the onion mixture., On a lightly floured surface, unroll 1 pie crust. Roll out into a 12-in. circle. Cut with a floured 3-in. biscuit cutter. Remove excess crust and reroll scraps. Repeat with remaining pie crusts., Beat eggs and water; brush over edges of 3-in. pie crust circles. Place heaping teaspoonfuls of filling in the centers. Fold crust in half over filling. Press edges with a fork to seal., Place 2 in. apart on greased baking sheets. Brush with remaining egg mixture. Bake at 400° until golden brown, 9-12 minutes., Meanwhile, in a small saucepan, bring cream to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally. Add blue cheese; cook and stir until cheese is melted and sauce thickens, 2 minutes longer. Serve with empanadas.

BLEU CHEESE CHICKEN PASTA
If you don't like bleu cheese, this isn't a recipe for you. I, of course, do, and threw this together spur-of-the-moment one day when all I had in the kitchen was chicken, pasta, milk and bleu cheese. If you like a more liquid sauce, add more milk, if you like a creamier sauce, add less.

- Bring water to a boil in a pot and add salt and pasta.
- Heat olive oil in pan and add chicken, salt and seasoning.
- Cook chicken thoroughly and drain.

For anyone who likes Buffalo wings, this is a great change of pace from normal pasta salad. Really popular as a side dish for a barbeque or just about any gathering you can think of. You can substitute or add many different vegetables with this recipe.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Stir together the mayonnaise, blue cheese dressing, buffalo wing sauce, salt and pepper in a large bowl. Add the chicken, bell peppers, red onion, and cooked pasta and toss to coat with the dressing. Cover and chill at least 1 hour in the refrigerator before serving.

- In a large saucepan, cook the pasta according to the package instructions until al dente. Drain, do not rinse, and set aside.
- In another large saucepan, heat the heavy cream, hot pepper sauce, garlic, black pepper and cayenne, if using, over medium heat, stirring until well blended. Season to taste with salt. Add hot pasta and chicken and stir until well coated and warmed through.
- Remove the pasta from the heat and stir in blue cheese and scallions. Serve immediately.
