BUFFALO CHICKEN LIVERS
Deep-fried chicken livers coated in buffalo sauce are an unusual appetizer for the usual occasions.

Steps:
- Preheat oil in Dutch oven to 375 °F
- In a zip-top or paper bag, combine flour, salt, paprika, garlic powder and peppers. Place the chicken livers in the bag and shake gently until coated.
- In a small saucepan, heat butter and hot sauce just until butter melts; keep warm until ready to use.
- Deep-fry livers a few pieces at a time for 10-12 minutes, turning once or twice. Don't crowd deep fryer or pot.
- Drain livers on a paper towel-lined baking sheet for 30 seconds.
- Transfer buffalo sauce to a large mixing bowl, then immediately toss fried livers in the buffalo sauce and remove with a slotted spoon. Repeat with remaining livers.
- For the dipping sauce: In a small bowl, stir together the prepared blue cheese dressing and the crumbled blue cheese.
BOBBY'S BUFFALO WINGS WITH TANGY CHEESE DIP
This easy buffalo chicken wing recipe with tangy cheese dip from Paula Deen is the perfect tailgating appetizer dish. Ingredients include chicken wings, Roquefort cheese and hot sauce. Prep time is about 15 minutes, 2 hour chill time and cooking time takes 30 minutes at 450°F.

- Preheat the oven to 450 degrees F.
- For the Roquefort dip: Cream the Roquefort until smooth in a medium bowl. Mix in the yogurt, mayonnaise, scallions, salt, pepper, vinegar, lemon juice and lime juice until well blended. Chill for 2 hours.
- For the buffalo wings: Spray a baking sheet with nonstick cooking spray. Toss the wings with the salt and pepper to coat evenly in a medium bowl and then transfer to the baking sheet. Bake until the skin is golden and crispy or the internal temperature reaches 165 degrees F, 25 minutes.
- Preheat the broiler.
- Combine the hot sauce and honey in a small bowl and then brush the wings with 1/4 cup of the hot sauce mixture. Broil for 3 minutes. Brush the wings with another 1/4 cup of the hot sauce mixture and flip the wings. Broil again until browned and crispy, 3 to 4 minutes longer. Remove and immediately brush with the remaining sauce. Serve with celery and carrot sticks.

THE BEST BUFFALO CHICKEN DIP
There are a lot of Buffalo chicken dip recipes but I feel certain this is one of the very best. Made with freshly cooked chicken, this is way better than recipes that call for the canned stuff. It's super rich and creamy with the perfect amount of tang. I highly recommend the optional blue cheese crumbles on top! Great served at room temperature so it's perfect for a party. Serve with celery and carrot sticks or corn chips.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place chicken on a large sheet of foil and sprinkle evenly with salt, pepper, and garlic powder. Wrap foil around chicken to form a pouch, sealing it around the edges. Place foil pouch on a rimmed baking sheet.
- Bake in the preheated oven for 1 hour. Remove from the oven and let stand for 15 minutes to cool slightly.
- Meanwhile, increase oven temperature to 375 degrees F (190 degrees C). Lightly grease a baking dish with cooking spray.
