Barilla Whole Grain Penne with Asparagus, Butternut Squash and Oven-Dried Tomatoes image

1 box Barilla Whole Grain Penne
1 pint cherry tomatoes, halved and seeded
3 tablespoons extra virgin olive oil
1 small butternut squash, largely diced
2 garlic cloves, pressed
1 bunch asparagus, sliced on a 1/2 inch diagonal
salt, to taste
black pepper, to taste
1/2 cup Romano cheese, grated

Steps:

  • PREHEAT oven to 225 degrees F.
  • PLACE cherry tomatoes on a baking sheet. Dry tomatoes in the oven for 2 hours.
  • BRING a large pot of water to a boil. Heat olive oil in a large skillet over medium heat.
  • COOK pasta according to package directions.
  • Meanwhile, ADD squash and sear until brown, about 3-4 minutes. Add garlic and saute for an additional 2 minutes.
  • ADD asparagus to the skillet. Saute for 2 minutes.
  • REMOVE garlic from the skillet. Add oven-dried tomatoes and season with salt and pepper.
  • DRAIN pasta and add to the skillet. Mix well.
  • TOP with cheese before serving.
  • Note: Instead of oven drying tomatoes, for faster preparation time, tomatoes may be sauted for 1-2 minutes in skillet prior to removing garlic.

1/2 pound black mussels
1/2 pound Little Neck clams
2 ounces butter
2 tablespoons minced garlic
1 cup dry white wine
1 cup clam juice
1 bay leaf
1/2 cup Oven-Dried Tomatoes, recipe follows
6 ounces bucatini, cooked al dente in salted boiling water
2 tablespoons minced parsley leaves
Salt and fresh ground black pepper
12 medium Roma tomatoes (2 pounds)
1/2 cup extra-virgin olive oil, plus additional as needed
1 teaspoon minced fresh thyme leaves
6 garlic cloves, crushed
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon sugar

Steps:

  • Debeard mussels. Soak mussels and clams in tap water for 5 minutes. Rinse and drain. Repeat 2 more times. Reserve.
  • In a saute pan, heat the butter and garlic. Cook for 1 minute until glossy, do not brown.
  • Over high heat, add mussels and clams. Deglaze with white wine and reduce by half. Add clam juice and bay leaf, cover, and steam until shellfish opens, about 3 minutes. Pull out shellfish and reserve. Remove the bay leaf and discard.
  • Reduce the liquid by half, add tomatoes, cooked pasta, reserved shellfish, and parsley. Toss until well blended. Serve immediately.
  • Preheat the oven to 250 degrees F.
  • In a pot of boiling water, blanch tomatoes. Drain and refresh in ice water. Drain. Peel, core, cut into quarters, and remove seeds.
  • Line a baking tray with parchment paper and arrange the tomato quarters on the tray, cut side down. Drizzle generously with olive oil. Sprinkle with thyme and garlic. In a small bowl, combine salt, pepper and sugar, and sprinkle evenly over the tomatoes.
  • Bake until the tomatoes begin to shrivel, about 1 hour. When the tomatoes are cool enough to handle, transfer to a container. Pour olive oil over and cover the container. Refrigerate and use as needed.

Steps:

  • Place the tomatoes, cut side up, on a baking sheet and sprinkle with salt. Let sit for 1 hour.
  • Preheat the oven to 250 degrees.
  • Bake the tomatoes until they are almost dry yet still slightly plump. 5 to 6 hours.
  • To store, pack them into clean jars, cover with olive oil, and refrigerate; or freeze them in zip lock bags.

1 2-inch piece baguette, diced (about 3/4 cup)
1 clove garlic, smashed
1 cup fresh parsley leaves
12 ounces bucatini or spaghetti
3 tablespoons unsalted butter
2 ounces prosciutto (preferably 1 thick slice), cut into 1-inch matchsticks
3 shallots, thinly sliced
1/2 cup dry white wine
Freshly ground pepper
2 pounds mussels, scrubbed well and beards removed

Steps:

  • Bring a large pot of salted water to a boil. Pulse the bread, garlic and parsley in a food processor to form moist, green crumbs.
  • Cook the bucatini in the boiling water as the label directs. Reserve 1/4 cup cooking water, then drain.
  • Meanwhile, melt the butter in a wide pot over medium heat. Add the prosciutto and shallots and cook until the shallots are tender and beginning to brown, about 6 minutes. Add half of the breadcrumbs and cook, stirring, 2 minutes. Add the wine and the reserved cooking water and cook, uncovered, until the liquid is almost completely reduced, about 2 minutes. Season with pepper.
  • Add the mussels to the pot, cover and cook, shaking the pot occasionally, until the mussels open, about 6 minutes (discard any that do not open). Add the pasta and heat through, tossing to coat. Divide among bowls and top with the remaining breadcrumbs.

1/4 cup panko breadcrumbs
1/4 teaspoon kosher salt
1/3 cup freshly grated Parmesan cheese

1 pound bucatini
1 tablespoon olive oil, plus more for serving
5 slices applewood-smoked bacon, diced
3 cloves garlic, peeled and smashed
1/2 teaspoon red pepper flakes
3 on-the-vine tomatoes, seeded and diced
1/2 cup white wine
1 1/2 pounds cockles or New Zealand clams (or other small clams), cleaned
1/4 cup chopped fresh Italian parsley

Steps:

  • For the topping: Heat a small skillet over medium heat. Add the olive oil and breadcrumbs and toast, stirring often, until golden brown and crispy. Season with the salt. Set aside to cool. Stir in the Parmesan.
  • For the pasta: Bring a large pot of salted water to a boil. Cook the pasta for 3 minutes less than the package directions, about 9 minutes. Drain well, reserving 1/2 cup pasta water.
  • Put the olive oil and bacon in a large skillet over medium heat. Cook, stirring often, until browned and crispy, about 8 minutes. Add the garlic and red pepper flakes and cook until fragrant, about an additional minute. Add the tomatoes and toss to coat. Deglaze with the white wine and add the cockles. Cover the skillet with a lid and shake gently. Cook until all the shells have opened, 2 to 3 minutes. Remove the clams to a bowl, discarding any unopened clams. Add the pasta to the skillet and toss in the sauce. Add the reserved pasta water to create a loose sauce. Toss with the parsley. Stir the clams back into the pasta and sprinkle with the breadcrumb topping. Serve with a drizzle of olive oil.

1 can (14 ounces) whole plum tomatoes, chopped, plus 1/2 cup juice
2 cans (6.5 ounces each) chopped clams, drained, reserving 1 cup clam juice
1 tablespoon capers (preferably salt-packed), rinsed and drained
3/4 pound bucatini (perciatelli) or other long pasta
Coarse sea salt, for sprinkling

Steps:

  • While bringing a large pot of salted water to a boil, heat oil with garlic, oregano, and a large pinch of red-pepper flakes in a large skillet over medium-high heat. Cook until fragrant and garlic is golden, about 2 minutes.
  • Stir in tomatoes and their juice, and the reserved clam juice. Bring to a simmer, and cook until sauce is slightly thickened, about 7 minutes. Reduce heat to low. Stir in clams and capers, and cook until heated through.
  • When water boils, add pasta to boiling water, and cook until almost al dente, about 10 minutes (do not drain water). Transfer pasta to skillet using a strainer. Gradually stir in 1 cup pasta water, about 1/2 cup at a time, and cook over low heat, tossing, until pasta has absorbed some sauce and is well coated, 2 to 3 minutes.
  • Divide among 4 bowls. Drizzle with oil, and sprinkle with red-pepper flakes and coarse sea salt.
