Potatoes are one of the most versatile ingredients to have in your pantry. This quick recipe for sukha aloo (potatoes sauteed with spices), popular throughout India, shows off their ability to absorb delicious seasonings. Here they're supercharged with heady flavors like cumin, asafetida and coriander, plus the tangy spice blend known as chaat masala. Make sure not to mess with the potatoes too much once they're in the pan or they won't develop a beautiful crust. Serve with roti, or alongside a crisp salad for a simple dinner.

2 russet potatoes
2 tablespoons ghee
1 teaspoon cumin seeds
1 teaspoon ground turmeric
1/4 teaspoon asafetida
1 teaspoon ground coriander, preferably freshly ground
1/4 teaspoon Kashmiri chili powder, or cayenne to taste
1 teaspoon chaat masala
1/2 teaspoon kosher salt, plus more to taste
1/4 cup cilantro leaves, for garnish
Lime wedges, for serving

Steps:

  • Pierce the potatoes five times on each side with a fork, place in a microwave-safe bowl, and microwave until potatoes can be easily pierced, about 5 minutes on each side. Let them cool to room temperature, then peel and break them by hand into bite-size pieces.
  • Melt the ghee in a medium skillet over medium heat. Add the cumin seeds and cook until they darken slightly and smell toasted, about 1 minute. Swirl in the turmeric and asafetida. Add the potatoes, tossing to coat them with the spices without mashing the chunks. Add the coriander, chili powder, chaat masala and salt, then taste and adjust the seasoning.
  • Reduce the heat to medium low and cook, uncovered, until the bottom of the potatoes develop a crust, about 10 minutes. Cook a little longer if you want the potatoes to be extra charred. Garnish with cilantro and serve with lime wedges.

Spinach and Feta Cooked Like Saag Paneer image

Here's a familiar Indian takeout staple--saag paneer--but with the ingenious substitution of large cubes of feta for paneer (a bit of inspiration from our 1998 family trip to Athens and near continuous consumption of Greek salads, which in Greece are just . . . salads). The first time I tasted it, it was like when I discovered you can do the 9 times table with your fingers in third grade, which is to say, I just about lost it. Not only is my mom's spinach gravy infinitely more complex than that of most versions of saag paneer (I have been known to steal sauce swipes out of the pan when my mom isn't looking), but I also love the way the feta gets all soft and pseudo-baked, soaking in all the spices and melting a little into the gravy. And then you hit the pan with the oiled-up cumin and red chile powder, which add a whole other level of richness. I would go as far as to say that I now want all future saag paneer I eat to be made with feta. And I bet you will, too.

Number Of Ingredients 15

1/4 cup plus 2 tablespoons ghee or olive oil, divided
2 tablespoons coriander seeds
2 green cardamom pods, or 1/4 teaspoon ground cardamom (freshly ground is best)
1 small yellow onion, diced into 1/2-inch pieces
1 tablespoon roughly chopped fresh ginger
1 garlic clove, minced
1 pound fresh baby spinach (10 to 12 cups)
1/2 tablespoon fresh lime juice (from about a quarter of a lime), plus more if needed
1 small Indian green chile or serrano chile, roughly chopped
1 teaspoon kosher salt
6 ounces feta cheese, cut into 1/2-inch cubes (a little over 1/2 cup)
1 teaspoon cumin seeds
1/4 teaspoon asafetida (optional, but really great)
1/4 teaspoon red chile powder
Rice or roti, for serving

Steps:

  • In a large pan over medium heat, warm 1/4 cup of the ghee (or oil). Once the ghee has melted (or the oil begins to shimmer), add the coriander and cardamom and cook, stirring, for about 2 minutes, until the seeds start to brown. Add the onion and cook until it is translucent, 5 to 6 minutes. Stir in the ginger and garlic and cook for 1 minute more. Add the spinach and cook until it is just wilted, 4 to 5 minutes.
  • Remove the pan from the heat and add the lime juice, green chile, and salt. Let cool for 5 minutes. Transfer to a blender and blend into a chunky paste. Return the spinach mixture to the same pan and set it over low heat. Stir in 1/2 cup water, then gently fold in the feta, being careful not to break up the cubes. Cook for 5 to 7 minutes more to soften the feta slightly and allow it to soak up some of the spinach sauce.
  • While the feta cooks, in a small pan or butter warmer over medium-high heat, warm the remaining 2 tablespoons ghee (or oil) for 1 minute. Add the cumin seeds. As soon as (emphasis on as soon as--you don't want your cumin to burn!) the cumin seeds start to sputter and brown, about 1 minute max, remove the pan from the heat. Immediately add the asafetida (if using) and red chile powder.
  • Pour all of the ghee (or oil) mixture into the spinach and feta once that is done cooking. Serve with rice or roti.

I've always loved my mom's version of aloo gobi, a classic Indian potato and cauliflower dish, because she roasts the vegetables before sauteing them to add an extra smoky, charred flavor and a crispy texture. This version swaps the cauliflower for Brussels sprouts, which char beautifully in the oven and really hold the whole spices. It's a great make-ahead party dish, as you can pre-roast the vegetables, then whenever you're ready to serve, it takes all of 10 minutes to reheat and finish them with the spices in the pan.

2 pounds Brussels sprouts, trimmed and quartered
3 new potatoes, cut into 2-inch-long wedges
5 tablespoons olive oil
2 teaspoons coriander seeds
1 teaspoon cumin seeds
1/2 teaspoon ground turmeric
Pinch asafetida, optional (but really great)
Pinch red chile powder
Kosher salt
1 tablespoon fresh lime juice (from about half a lime), plus more to taste

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
  • Place the Brussels sprouts and potatoes on the prepared baking sheet and toss them with 3 tablespoons of the oil. Spread them in an even layer and roast until the vegetables are browned and crisped slightly, about 30 minutes, tossing halfway through. (The sprouts will brown more than the potatoes; that's okay.) Set the vegetables aside to cool.
  • Heat the remaining 2 tablespoons oil in a large skillet over medium heat. Once the oil begins to shimmer, add the coriander seeds, cumin seeds, turmeric and asafetida, if using. Cook, stirring, until the coriander and cumin turn a shade darker, no more than 1 minute. Add the roasted vegetables, including any charred bits from the foil, and gently mix everything together. Mix in the chile powder and 1 teaspoon salt, arrange the vegetables in a single layer, and cook until the vegetables are tender but not soggy and the Brussels sprout leaves are nicely charred, 6 to 8 minutes.
  • Remove from the heat and add the lime juice. Taste and adjust the seasoning with more lime juice and salt, if needed.

750g Brussels sprouts , trimmed, any large ones halved or quartered
Knob of unsalted butter (optional)

Steps:

  • Tip the sprouts into a pan and add a couple of cm water and a pinch of salt - a large pan works better so they're not piled up too high. Cover and bring the water to the boil, turn down to a simmer and cook with the lid on for 3- 5 mins depending on size.
  • Test with a sharp knife to see if they are cooked through. If not, cook for a little longer and test again.
  • Drain and tip the sprouts into a bowl. Serve with a knob of butter, if you wish.
