BRUEGGER'S BAGELS CHICKEN BAGEL AZTECA

Ingredients

4 chicken breasts, flattened
1 dash Tabasco hot sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon thyme
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon paprika
4 ounces green chiles, chopped
OR
1 whole fresh mild chili, ribbed, seeded and chopped
6 Bruegger's onion bagels, cut in half
3/4 cup Bruegger's jalapeno cream cheese
1 cup mild or medium strength salsa
1/2 pound queso blanco cheese, grated (if unavailable, use mozzarella)

Steps:

Preheat broiler and adjust rack until 4 inches from heat. Squirt and rub each chicken breast with a dash of Tabasco sauce Mix the onion, garlic, thyme, pepper, salt and paprika together and rub on the chicken breasts. Spray a non-stick saute pan with cooking oil and saute chicken until done (10-13 minutes) over medium high heat. While the chicken is cooking, spread each bagel half with about 1 tablespoon of the Jalapeno cream cheese and top with salsa and green chilies Place the chicken breasts on a cutting board and chop into 1/2" cubes; divide equally atop the bagels. Top the chicken with the grated cheese. Broil for about 5 minutes, or until the cheese is melted.

I love the chicken salad at Bruegger's Bagels and tried to make it at home. This is a completely different taste for chicken salad and I love it!! Just add or subtract ingredients to your liking.

1 can(s) white chicken breast
2 tablespoon(s) hellman's mayonnaise
1/4 cup(s) chopped almonds to liking
1 to 2 tsp - taragon leaves
2 - celery stalks chopped fine
1 - granny smith apples chopped medium
1-2 teaspoon(s) white vinegar
- garlic and onion powder
1/2 cup(s) red onions

Steps:

This is a recipe that can be changed according to personal preferences. I like to put celery, apple, almond, red onion, scallions, garlic, all to taste. Sometimes I make it with cranberries too. I don't like nuts but, you can add those if you want. Basically, just make chicken salad how you like it and add taragon for a different twist. I make my sauce with mayo till creamy, 1-2 tsp white vinegar and sugar to taste, maybe 2 tsp. I also add garlic salt, onion powder, & greek seasoning. I like to put this on white toasted bread or if its for something special I put it on warm crescent rolls. This is also great on crackers!
