Fudgy brownies that are the best you have ever tried. Fattening but worth it! Brownies can be frozen after baking.

1 ½ cups unsalted butter
3 cups white sugar
2 teaspoons vanilla extract
7 eggs, beaten
1 ¼ cups all-purpose flour
1 ¼ cups unsweetened cocoa powder
1 teaspoon salt
1 pound chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line one 9x9-inch baking pan with foil and spray with cooking spray.
  • In a saucepan over medium heat, melt the butter. Stir in the sugar until dissolved. Remove mixture from heat. Gradually pour the melted butter into the beaten eggs, whisking constantly, until mixture is fully incorporated. Stir in the vanilla.
  • Sift the flour, cocoa and salt together. Add the flour mixture to the butter mixture, mixing until combined. Stir in the walnuts. Spread the batter into the prepared pan.
  • Bake in preheated oven until brownies are set (a toothpick inserted in the center should have small crumbs clinging to it, rather than wet batter), 45 to 50 minutes. Do not overbake!

I personally think these are the best brownies in the world. Try them, I think you'll agree! To make the brownies rich and buttery, use melted butter instead of the vegetable oil.

½ cup vegetable oil
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
½ cup all-purpose flour
⅓ cup unsweetened cocoa powder
¼ teaspoon baking powder
¼ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan.
  • In a medium bowl, mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended. Stir in walnuts, if desired. Spread the batter evenly into the prepared pan.
  • Bake for 20 to 25 minutes, or until the brownie begins to pull away from edges of pan. Let cool on a wire rack before cutting into squares.

SMALL PAN BROWNIES

This is a combination of 2 recipes, and some tweaks of my own. Sometimes you just don't need that big pan of brownies, and a small one will do just fine. These brownies were a big hit with all my taste testers!!!

Number Of Ingredients 8

10 Tbsp unsalted butter
1 1/4 c sugar
3/4 c unsweetened cocoa powder
1/4 tsp salt
1 tsp vanilla
2 large eggs
1/2 c flour
1/2 tsp baking powder

Steps:

  • 1. Preheat oven to 325 degrees, with the rack in the lower third of the oven.
  • 2. Line the bottom of an 8 inch square baking pan with parchment paper, leaving an overhang on two sides. Lightly grease the paper, and sides.
  • 3. Slowly melt the butter over low heat. Add cocoa, sugar and salt, stir until mixture is smooth. Remove from the heat, and let cool slightly.
  • 4. Stir in the vanilla, and the eggs, beat until shiny and thick, then stir in flour and baking powder. Mix until smooth.
  • 5. Spread the batter in the prepared pan, and bake until a toothpick inserted into the center comes out a little moist, about 23 to 25 minutes.
  • 6. Cool completely on rack. When cooled lift up the sides of parchment paper to remove the brownies from the pan. Cut into desired size squares.

1 cup sifted all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1/3 cup butter
1 cup packed brown sugar
1 egg, lightly beaten
1 tablespoon vanilla extract
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F Grease a 9x9 inch square pan.
  • Combine sifted flour, baking powder, baking soda, and salt. Sift again and add 1/2 cup chopped nuts. Mix wel and set aside.
  • Melt 1/3 cup butter. Add 1 cup firmly packed brown sugar and mix well. Cool slightly.
  • Add beaten egg and vanilla; blend well. Add flour mixture, a little at a time, mixing well.
  • Spread into prepared pan. Sprinkle chocolate chips on top. Bake in the preheated oven for 20 to 25 minutes. Cool and cut into bars.

2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
1 1/3 cups sugar
1/2 cup cocoa
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/4 cup chopped nuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Place eggs in mixing bowl.
  • Beat till slightly frothy.
  • Add oil, vanilla; mix well.
  • Stir in sugar and cocoa.
  • Mix well.
  • Stir in flour, salt and nuts till well blended.
  • Pour into vegetable oil sprayed 9x9" pan.
  • Bake at 350 degrees for 22 to 26 minutes.
  • (Don't overbake!).
  • Cool, cut into bars.

I found this recipe online a while ago, but I can't remember where so I'm posting it here for safe keeping. This is one of my favorite desserts and I was surprised that I wasn't able to find it on food.com! It's not great alone, it really does need to be warmed up and topped with ice cream to be anything special.

8 ounces chopped white chocolate
1 tablespoon vanilla extract
1/2 cup butter, softened
1 1/4 cups flour
2 eggs
3/4 teaspoon salt
1/3 cup white sugar
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350. Grease a 9x9" pan.
  • Melt white chocolate and butter in the top of a double boiler, or in microwave on med power. Set aside to cool.
  • In a large bowl, beat eggs until foamy.
  • Gradually add the sugar and vanilla, mixing constantly.
  • Drizzle in the melted white chocolate mixture.
  • Combine the flour and salt and fold into the white chocolate mixture.
  • Fold in chocolate chips.
  • Spread the batter into the prepared pan.
  • Bake for 30 minutes or until a toothpick comes out clean. Do not over-bake.
  • 4. Serve heated. Top with a scoop of vanilla ice cream, some real whipped cream and a drizzle of chocolate sauce.

  • Stir the brown sugar into the melted butter and mix well. Cool slightly.
  • Mix the beaten egg and vanilla into the brown sugar mixture. Add flour mixture, a little at a time, mixing just until combined.
  • Spread the batter into the prepared pan. Sprinkle 1/2 to 1 cup chocolate chips on top. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 20 to 25 minutes.
