140 g (5 oz.) dark chocolate (broken into pieces)
50 g (1/4 cup) unsalted butter
50 g (1/4 cup) brown sugar
1 egg
35 g (1/4 cup) all-purpose flour
120 g (1/2 cup) unsalted butter
100 g (1/2 cup) sugar
2 eggs
120 g (1 cup) all-purpose flour
2 g (1/4 tsp) baking powder
50 ml (3 1/2 tablespoons) fresh milk

Steps:

  • Grease and line a 10cm x 20cm (4x8-in) loaf pan with aluminium foil.
  • Preheat oven to 180°C (350°F).
  • To make brownie, melt chocolate and butter over low heat. Remove and leave to cool slightly. Stir in brown sugar until blended.
  • Add in egg, mix well. Fold in flour, mix until well combined. Pour batter into prepared pan. Bake in preheated oven for 15 minutes. Remove.
  • To make butter cake, beat butter with sugar until creamy. Add in eggs, one at a time, beating well after each addition.
  • Fold in sifted flour and baking powder, alternately add in fresh milk, mix to form batter.
  • Spread the butter cake batter over brownie, bake in oven at 160°C (320°F) for 25-30 minutes or until cooked. Insert a cake tester in the middle to check doneness.

BUTTER CAKE:
1/2 cup butter
1/2 cup sugar (I reduced by 1 tablespoon)
2 eggs
1 cup all purpose flour
1/4 teaspoon baking powder
3 1/2 tablespoon milk

Steps:

  • Preheat oven to 350°F. Grease and line a 4×8-in loaf pan with aluminum foil. BROWNIE: Melt chocolate and butter over low heat. Remove and leave to cool slightly. Stir in brown sugar until blended. Add in egg, mix well. Fold in flour, mix until well combined. Pour batter into prepared pan. Bake in preheated oven for 15 minutes. Remove. BUTTER CAKE: Beat butter with sugar until creamy. Add in eggs, one at a time, beating well after each addition. Fold in sifted flour and baking powder, alternately add in milk, mix to form batter. Spread the butter cake batter over brownie, bake in oven at 320°F for 25 to 30 minutes or until cooked. Cook's Notes: I mixed the butter cake batter while baking the brownie. Then I poured the butter cake batter VERY QUICKLY onto the "hot" brownie. The butter cake batter will melt instantly. The second time I baked this brownie butter cake, I put the butter cake batter into a piping bag and cut a big hole at the tip, pipe in the butter cake batter quickly, and just shake and tap the pan to smooth the top.

175g unsalted butter, plus extra for greasing
225g dark chocolate, broken into pieces
200g caster sugar
3 medium eggs, separated
65g plain flour
50g chopped pecan nuts

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter a 20-25cm cake tin and line with greaseproof paper.
  • Place 175g/6oz of the chocolate, plus the butter and sugar in a heavy-based pan and heat gently until melted, stirring occasionally. Leave to cool.
  • Whisk the egg yolks into the chocolate mixture, then add the flour, nuts and the remaining chocolate.
  • Whisk the egg whites until they form soft peaks, then gently, but thoroughly, fold into the chocolate mixture.
  • Pour into the prepared tin and bake in the centre of the oven for about 35-40 mins until crusty on top. Leave to cool, then run a knife around the sides and remove from the tin. Dust with icing sugar and serve warm with custard or ice cream or cold with cream.

1/2 teaspoon baking powder

3 tablespoons whole milk
2 tablespoons sour cream
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
4 large eggs, divided
8 ounces cream cheese, room temperature
2 1/4 cups confectioners' sugar, plus more for dusting on top
1 tablespoon lemon juice

Steps:

  • 9x9 baking dish.
  • Stand mixer.
  • Preheat oven to 350 degrees F. Spray a 9x9 inch square baking pan with nonstick spray, line with parchment paper leaving an overhang of 1-inch on the sides, then spray parchment paper.
  • Prepare fudge brownie batter according to package instructions and bake for 20 minutes. In a medium bowl, whisk to combine flour, baking powder and salt. In a separate bowl or measuring cup, whisk to combine milk and sour cream.
  • To make the butter cake batter, in the bowl of a stand mixer with paddle attachment, beat to combine butter and granulated sugar on medium speed until light and fluffy, about 1-2 minutes. Add 2 eggs, one at a time, and beat until combined. Reduce speed to low and add flour and milk in 3 additions, beginning and ending with the flour; set batter aside.
  • To make gooey topping, beat the cream cheese until smooth, then beat in 2 eggs, confectioner's sugar and lemon juice until smooth and well combined.
  • Spoon the butter cake batter onto the brownie and use a small offset spatula to spread evenly over the brownies. Pour gooey topping over the batter and smooth into an even layer. Bake for 45-50 minutes until topping baked through but still soft when tested with a cake tester or toothpick.
  • Let cool, then dust top with confectioner's sugar. Cut into squares to serve.
