Brown sugar not only works as the main source of sweetness but also has more moisture than white sugar and makes cookies a little softer and chewier, just like this recipe for easy brown sugar oatmeal cookies. We used only simple ingredients you likely already have on hand so this can be your new go-to oatmeal cookie recipe when you want to make a large batch of cookies in less than an hour. While these cookies are perfect on their own, they also pair well with a glass of milk or a scoop of ice cream for an extra-indulgent treat!

1 3/4 cups packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
1 cup Gold Medal™ all-purpose flour
1 cup Gold Medal™ whole wheat flour
1 teaspoon baking powder
3 cups old-fashioned oats

Steps:

  • Heat oven to 350°F. In large bowl, beat brown sugar and butter with electric mixer on medium speed, scraping bowl occasionally, until light and fluffy. Beat in vanilla and eggs until well blended.
  • On low speed, beat in all-purpose flour, whole wheat flour and baking powder, scraping bowl occasionally, until well combined. Stir in oats.
  • On ungreased cookie sheets, drop dough by heaping tablespoonfuls 2 inches apart. Flatten cookies to about 1/2-inch thickness.
  • Bake 12 to 14 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.

1 c. salted butter, softened
2 c. packed dark brown sugar
2 tsp. vanilla extract
2 whole eggs
1 1/2 c. all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
3 c. old fashioned oats

Steps:

  • Preheat the oven to 350 F.
  • In the bowl of an electric mixer (or using a hand mixer) beat together the butter and brown sugar until fluffy. Beat in vanilla. Add eggs, one at a time, scraping the bowl after each one.
  • Mix together the flour, salt, and baking soda in a medium sized bowl. Add it into the creamed mixture in 2 to 3 batches, mixing it until just combined. Mix in the oats until just combined.
  • Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto a lightly greased cookie sheet, spacing them a couple inches apart. Bake for 12-13 minutes or until dark and chewy. If you'd like a crispier cookie, just cook a little longer!
  • Let them cool slight on the pan after removing from the oven, then transfer the cookies onto a plate for serving.* Note: Add 1/2 cup finely chopped nuts to the flour mixture if you'd like a nutty flavor and crunch.

I loved getting oatmeal cream pies in my lunchbox, and my love for them has not changed as I've gotten older. This is my take on my classic childhood favorite-including that fluffy marshmallow cream filling instead.

3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
3/4 cup packed dark brown sugar
1/2 cup granulated sugar
2 large eggs, at room temperature
1 tablespoon vanilla extract
2 cups quick-cooking oats
1/2 cup toasted sweetened coconut flakes
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon kosher salt (see Cook's Note)
Two 7-ounce jars marshmallow creme
1 cup (2 sticks) unsalted butter, at room temperature
2 teaspoons vanilla extract
2 teaspoons butter extract
2 1/2 cups powdered sugar
1/2 teaspoon kosher salt (see Cook's Note)

Steps:

  • Make the cookies: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Beat the butter and sugars together in a bowl with an electric mixer at medium speed until light and fluffy. Add the eggs, beating just until the yellow disappears. Beat in the vanilla.
  • Pulse the oats and coconut flakes in a food processor until finely minced. Transfer to a medium bowl. Stir in the flour, baking soda, cinnamon, ginger and salt. Add to the butter mixture, beating until combined.
  • Drop the dough into twenty-four 1 1/2-inch balls on the prepared baking sheets, spacing them about 3 inches apart. Bake until the edges just begin to brown, 13 to 15 minutes. Let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  • Meanwhile, make the marshmallow filling: Beat the marshmallow creme and butter in a bowl with an electric mixer at medium speed until fluffy. Beat in the extracts, powdered sugar and salt until combined. Transfer the filling to a piping bag fitted with a round tip or large zip-top bag and cut off the corner.
  • To assemble the oatmeal cream pies, pipe the marshmallow filling onto the flat sides of 12 cookies. Top with the remaining cookies, flat-sides down.

SPLENDA BRN SUGAR OATMEAL COOKIES

This is actually 1/2 recipe so I don't have so many cookies at once. Myself and a friend have diebetes so it makes me feel good to use this with the splenda brn sugar and we love them and no one else ever notices its splenda. I also like to zap in microwave if they have sat awhile to warm them I put them in for like 10 seconds...

1 stick butter,softened
2/3 c splenda brown sugar blend
1 egg
1/2 tsp vanilla extract
3/4 c flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 1/2 c quaker oats
3/4 c raisins
1/2 c pecans and or walnuts chopped up

Steps:

  • 1. In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, raisins and walnuts, if using them.
  • 2. At this point you can either chill the dough for a bit in the fridge and then scoop it, or scoop the cookies onto a sheet and then chill the whole tray before baking them. You could also bake them right away, if you're impatient, but I do find that they end up slighly less thick. (I personally never chill mine)
  • 3. The cookies should be two inches apart on a parchment-lined baking sheet. Bake them for 10 to 12 minutes (your baking time will vary, depending on your oven and how cold the cookies were going in), taking them out when golden at the edges but still a little undercooked-looking on top. Let them sit on the hot baking sheet for five minutes before transferring them to a rack to cool.
  • 4. I have recently made these and added crunchy peanut butter instead of the other nuts and we loved it =) Try just adding some peanut butter to a cookie or two when you bake them just to see if you will like them thats what I did then added to the whole batter.

⅔ cup shortening
⅔ cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Mix shortening, butter or margarine, sugars, eggs and vanilla thoroughly. Stir in all purpose or unbleached flour, baking soda and salt.
  • Turn dough onto lightly floured board. Shape dough into ball with lightly floured hands, pressing to make dough compact. Cut dough in half.
  • Shape each half into a roll 2 inches in diameter and about 8 inches long by gently rolling dough back and forth on floured board. Roll dough onto plastic wrap: wrap and twist ends tightly. Dough can be refrigerated up to 1 month or frozen up to 3 months.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut roll into 1/4-inch slices. (It is not necessary to thaw frozen dough before slicing.) Place slices about 2 inches apart on ungreased baking sheet. Bake 9 to 11 minutes. Immediately remove cookies from baking sheet onto wire rack.
  • CHOCOLATE CHIP: Add 1 cup mini semisweet chocolate chips and 1 cup chopped nuts with the flour. OATMEAL-COCONUT: Reduce flour to 2 3/4 cups. Add 1 cup flaked coconut and 1 cup quick-cooking oats with the flour. PEANUT BUTTER: Add 1 cup creamy or chunky peanut butter with the shortening. CHOCOLATE-NUT: Add 1 cup chopped nuts and 1/2 cup cocoa with the flour. FRUIT SLICES: Add 1 cup whole candied cherries, 1/2 cup chopped nuts and 1/2 cup cut-up mixed candied fruit with the flour.
