These amazing applesauce cookies are soft, moist and low fat, even though they don't taste like it. Adding applesauce to a recipe to reduce fat has been used for years, in this apple cookie it just brings out the flavor even more.

1/2 cup light brown sugar
1/2 cup granulated sugar
1 large egg
½ cup applesauce ( See note* )
2 ¼ cups all-purpose flour
1 teaspoon cinnamon (See note*)
1 teaspoon nutmeg
1/2 teaspoon ground ginger
½ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
Optional Glaze
1 cup Powdered Sugar
1 teaspoon Milk (regular, almond, cream, any dairy)
1 teaspoon Vanilla (clear or regular, we had cinnamon, color doesn't matter)
1 teaspoon Cinnamon

Steps:

  • Preheat oven to 350. This is a One Bowl Recipe
  • With Electric Mixer- In a large bowl, beat sugar, egg, vanilla. Add applesauce and mix.
  • Add dry ingredients and continue mixing just until combined. Do not over mix.
  • Scoop onto sheet pan, bake 8-10 minutes or until golden brown and set up. Cookies should not spread.
  • Drizzle with icing or Cover in Cinnamon Powdered Sugar

Frosting:
1 Cup packed brown sugar
1/2 Cup shortening
1/2 Cup applesauce
1 egg
13/4 Cups flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. CINNAMON
1/4 tsp. GROUND CLOVES
1/4 Cup butter (1/2 stick)
2 Cups powdered sugar
1 tsp. PURE VANILLA EXTRACT
1-2 TB. milk

Steps:

  • Beat together the brown sugar, shortening, applesauce and egg. Stir in the remaining ingredients. Cover and refrigerate for 1 hour or more. Preheat oven to 400°. Drop the dough by the rounded spoonful about 2 inches apart onto ungreased cookie sheets. Bake for 8-10 minutes until browned. Immediately remove from the cookie sheets. Cool, and then spread with frosting. Frosting: Heat the butter over medium heat until delicate brown, usually 2-3 minutes over medium heat. Remove from the heat and stir in the powdered sugar andVANILLA. Beat in the milk until smooth. Spread over the cooled cookies. Prep. time: 10 minutes Baking time: 8-10 minutes per sheet, plus 2-3 minutes for frosting Yield: about 34

Steps:

  • Heat oven to 375°. Grease cookie sheet with shortening. Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt and baking soda. Stir in apple.

1 ½ teaspoons ground cinnamon
1 ½ teaspoons lemon juice

Steps:

  • Mix apples, brown sugar, cinnamon, lemon juice, apple cider, and salt together in a large pot over medium-high heat. Bring to a boil, then reduce heat to low and simmer for until apples are soft, about 20 minutes. Use a potato masher while cooking to help break down the apples. Serve warm or cool.

1 cup packed light-brown sugar
1/2 cup granulated sugar
1 large egg
1/2 cup chunky-style applesauce
1 1/2 cups old-fashioned rolled oats
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon coarse salt
1 cup golden raisins
1 3/4 cups confectioners' sugar
3 tablespoons pure maple syrup

Steps:

  • Make cookies: Preheat oven to 350. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until combined. Add egg and applesauce, mix until well blended, 2 to 3 minutes. Mix in oats, flour, baking soda, baking powder, and salt. Mix in raisins.
  • Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake cookies until golden and just set, 13 to 15 minutes. Let cool on sheets 5 minutes. Transfer cookies to a wire rack set over parchment paper; let cool completely.
  • Make icing: Whisk confectioners' sugar, syrup, and 3tablespoons water until smooth. Drizzle over cookies, let set.
