My DS gave after she got if from Chef Paul's Fork in the Road, she tweaked and I tweaked hers. Also good on chicken breast.

Number Of Ingredients 12

1 teaspoon salt (DS used Tony's Seasonings-I left out watching salt.)
3/4 teaspoon sweet paprika
3/4 teaspoon onion powder
3/4 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon white pepper (I don't use)
1/2 teaspoon ground cumin
1/2 teaspoon crushed basil leaves
1/2 teaspoon crushed oregano leaves
1/4 teaspoon black pepper
1/4 teaspoon crushed thyme leaves
1 1/2 teaspoons olive oil

Steps:

  • Combine all ingredients in a small bowl.
  • Sprinkle each side of fillet with 1/2 teaspoon of this mixture.
  • Preheat skillet, preferably non-stick, over high heat.
  • Drizzle olive oil in pan can use less.
  • Cook 2-3 minutes on each side turn once.
  • Also good on boneless chicken breast that can be cut up afterwards and used in a green salad.
  • No picture yet, doesn't stay on plate long enough!

BROILED TILAPIA PARMESAN

Flavorful recipe for this farm raised fish that is easy and done in minutes! The fish is broiled with a creamy cheese coating for an impressive flavor and texture.

½ cup Parmesan cheese
¼ cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
¼ teaspoon dried basil
¼ teaspoon ground black pepper
⅛ teaspoon onion powder
⅛ teaspoon celery salt
2 pounds tilapia fillets

Steps:

  • Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
  • In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
  • Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

4 - talapia, filets
1/4 tablespoon(s) thyme
1/3 teaspoon(s) white pepper
1/3 teaspoon(s) dried oregano
2/3 teaspoon(s) dried basil
1/3 teaspoon(s) cumin, ground
1/3 teaspoon(s) garlic powder
1/2 teaspoon(s) dry mustard
1/2 teaspoon(s) onion powder
1/2 teaspoon(s) paprika
2/3 teaspoon(s) salt
- SEASONING MIXTURE
- vegetable cooking spray
- "just a pinch" of pepper

Steps:

  • Combine the seasonings mix ingredients in a small bowl.
  • Sprinkle each side of each filet evenly with 1/2 teaspoon of this mixture.
  • Preheat a 10-inch skillet over high heat to 400, about 5 minutes.
  • Spray the top side of each filet evenly with vegetable cooking spray.
  • Place the filets, two at a time (sprayed side down), in the skillet, reduce the heat to medium, and cook 2 minutes.
  • Turn the filets over and cook until done, about 2 minutes more.
  • Remove the cooked filets, wipe the skillet clean, bring the heat back to 400, and repeat the process with the remaining filets.
