3 tablespoons vegetarian teriyaki sauce
2 green onions, chopped
1 tablespoon sherry
1 teaspoon minced garlic
1 teaspoon Sriracha sauce
½ teaspoon ginger paste
5 tablespoons cornstarch
1 (14 ounce) package extra-firm tofu, pressed and cut into slices
2 tablespoons olive oil

Steps:

  • Whisk teriyaki sauce, green onions, sherry, garlic, Sriracha sauce, and ginger paste together until smooth. Set aside.
  • Place cornstarch in a gallon-sized plastic zip-top bag. Drop tofu slices into the bag, seal, and gently shake until all the tofu is coated.
  • Heat olive oil in a large skillet over medium-high heat. Cook tofu for 5 minutes. Flip with tongs and cook until browned on the second side, about 5 minutes more. Transfer the tofu to a plate and wipe the skillet clean.
  • Pour reserved sauce into the skillet and cook until slightly thickened, about 2 minutes. Remove from heat. Return the tofu to the skillet and toss to combine. Transfer the tofu to serving plates and spoon sauce on top just before serving.

Number Of Ingredients 12

1 pound very firm tofu sliced into 4 large pieces
4 tablespoons teriyaki sauce
1/4 cup vegetable oil
1 thumb-sized piece of ginger, peeled and halved
3 scallions, white and green parts, sliced
2 garlic cloves, peeled and smashed
2 handfuls of broccolini or broccoli rabe
1 3/4 cup chicken stock
1 tablespoon soy sauce
1 tablespoon sesame oil
1 pinch red pepper flakes
1/2 medium onion, diced

Steps:

  • Heat the broiler and place a rack as close as possible to the flame. Put the tofu pieces on a plate and rub with all over with the teriyaki sauce.
  • Add the vegetable oil, one of the pieces of ginger, half the scallions and the garlic cloves to a small saucepan. Heat to a lively simmer, then turn off the heat and allow the oil to steep for 15 minutes.
  • Bring a large pot of salted water to boil. Add 2 tablespoons salt, then add the broccoli, blanch for 2 minutes, then drain well and shock under cold running water to stop the cooking. Chop into 1-inch lengths and set aside.
  • Heat the chicken stock in a small saucepan over medium heat-add the remaining piece of ginger, the soy sauce and half the sesame oil, and simmer on very low heat.
  • Place the tofu pieces in an ovenproof skillet or on a baking sheet and broil, turning once, until beginning to caramelize all over, about 4 minutes per side.
  • While the tofu is broiling, pick the piece of ginger out of the scallion oil and discard. Heat ½ of the scallion oil in a large saucepan over high heat. Add the chopped broccoli, the red pepper, the onion and the remaining sesame oil and sauté until warmed through.
  • To serve, place a mound of the broccoli in the center of a bowl. Place a piece of broiled tofu over the greens. Ladle some chicken stock around the greens, then add a few spoonfuls of the scallion oil. Repeat with a second bowl, top both bowls with the remaining scallions, and serve.

This refreshing weeknight meal comes together in less than 15 minutes and barely requires turning on the stove. Aromatic garlic, ginger and scallions are gently heated in oil until they sizzle and infuse it, turning into a fragrant, lively sauce for mild silken tofu. Peppery arugula and a final drizzle of tangy cilantro sauce brighten the dish. Enjoy with steamed rice for a heftier meal, or top with fried eggs. Leftover tofu can be stored in the scallion oil and refrigerated; it will have absorbed even more flavor the next day.

1 (14- to 16-ounce) package silken tofu
Kosher salt (such as Diamond Crystal) and pepper
1/4 cup neutral oil, such as safflower or canola
1 tablespoon toasted sesame oil
1/4 cup thinly sliced scallions
1 tablespoon minced garlic
1 tablespoon minced, peeled ginger
2 tablespoons low-sodium soy sauce
2 tablespoons chopped cilantro leaves and tender stems
2 teaspoons unseasoned rice vinegar
2 cups baby arugula

Steps:

  • Remove the tofu from its package; drain the tofu then pat it dry. Scoop spoonfuls of the tofu onto a large platter and arrange in an even layer. Season with salt and pepper.
  • In a small saucepan, combine neutral oil, sesame oil, scallions, garlic and ginger. Cook over medium-low, stirring occasionally, until oil is sizzling and garlic, ginger and scallions are softened but not browned, about 3 minutes.
  • Meanwhile, in a small bowl, combine soy sauce, cilantro and vinegar.
  • Spoon hot scallion mixture over the tofu. Top with arugula and drizzle with the cilantro sauce. Serve warm or at room temperature.

Tofu takes on the flavors of its marinade: soy sauce, sesame oil, chili paste, lime juice, ginger, and garlic. It is cooked and served with sauteed, calcium-dense greens.

One 1-pound block extra-firm tofu
3 tablespoons low-sodium soy sauce
2 tablespoons toasted sesame oil
1/2 teaspoon chili paste or Tabasco (optional)
3 tablespoons freshly squeezed lime juice
1 tablespoon grated ginger
2 pounds bitter greens, such as collard, mustard, baby bok choy, or dandelion, washed, trimmed, and torn into pieces
1 teaspoon sesame seeds, lightly toasted
1/4 teaspoon crushed red-pepper flakes
6 cloves garlic, thinly sliced

Steps:

  • Cut tofu in half lengthwise, then cut each piece across into 6 slices. Place tofu on a paper-towel-lined plate. Cover with more paper towels; place another plate on top. Weight with a few soup cans. Chill 30 minutes so towels absorb excess water.
  • In a medium bowl, combine soy sauce; sesame oil; chili paste or Tabasco, if using; lime juice; ginger; and garlic. Set aside. Transfer tofu to medium bowl; toss with half the marinade; let sit for 30 minutes.
  • Heat a nonstick skillet over medium heat. Working in batches, arrange tofu in a single layer in pan. Cook until golden brown, about 2 minutes per side. Transfer to platter; repeat with remaining tofu. Gradually add greens to skillet with remaining marinade. Cook, tossing occasionally, until greens are wilted and most of the liquid has evaporated, 5 to 8 minutes. Transfer to platter with tofu. Sprinkle with sesame seeds and red pepper; serve.

MARINATED TERIYAKI TOFU

This is my take on a recipe from the Whole Foods website. I love this tofu either hot or cold! Preparation time does not include time to marinate.

15 ounces extra firm tofu
3 tablespoons low sodium soy sauce
1 tablespoon rice vinegar
2 teaspoons sesame oil
1 tablespoon honey
1 teaspoon ground ginger
cooking spray

Steps:

  • Drain tofu and remove from package.
  • Cut tofu into 3/4 inch slices and lay out flat between paper towels.
  • Put a weighted cooking sheet on top and press tofu for 30 minutes. This will remove the water from the tofu and allow it to soak up the marinade.
  • While tofu is draining, mix together Tamari, rice vinegar, sesame oil, honey, and ground ginger.
  • Marinade drained tofu in the mixture for at least one hour, preferably overnight.
  • Spray pan with cooking spray.
  • Put slices of marinated tofu onto pan, wait for first side to brown (about five minutes) and then cook on other side until browned.
  • Enjoy!

TERIYAKI GRILLED TOFU

I love tofu, but my family only likes a few of the tofu recipes I make. This is one they really enjoy, though. When the tofu is cooking, I try not to leave the grill as the tofu sometimes can go from lightly charred to being overcooked and dark in a few minutes. I have included the time for marinating the tofu in the preparation time.

16 ounces extra firm tofu
1/2 cup teriyaki sauce
2 tablespoons honey
1 teaspoon sesame oil
2 garlic cloves, minced
1 -2 teaspoon gingerroot, peeled and grated, to taste
salt and pepper, to taste
2 -3 green onions, thinly sliced
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Coat grill rack throughly with nonstick cooking spray. Preheat grill to medium (300° to 350 ° F). Cut tofu into slices 1/2-inch thick. Place slices in a single layer in a shallow glass dish.
  • In a small bowl combine teriyaki sauce, honey, oil, garlic, ginger, and salt and pepper to taste. Pour teriyaki mixture over tofu and cover with plastic wrap. Refrigerate at least 30 minutes.
  • After removing the tofu from the marinade, place the leftover marinade into a sauce pan. Cook over high heat until boiling. Boil marinade until reduced and slightly thick. Turn down heat to very low and start grilling the tofu.
  • Grill tofu 5-6 minutes per side, turning gently, until lightly charred and heated through, being careful not to let tofu overcook. Remove from grill. Drizzle reduced marinade over grilled tofu. Sprinkle with green onions and (if desired) red pepper flakes. Serve at once.

  • Remove the tofu from the package and drain all the water. Wrap the block of tofu with a muslin square, cheesecloth, or paper towels. Place the wrapped tofu on a plate. Then, place a stack of 2 to 4 plates over the block of tofu. Let the tofu sit for about 20 to 30 minutes, the longer the better.
  • Unwrap the tofu. Cut the tofu along the long edge, making 6 slices about 3/4 to 1 inch thick. Take each slice and lay it flat. Cut a slice into 2 short rectangles. Then, make a diagonal cut through each rectangle to get 2 small triangles. Repeat the same for the remaining tofu slices.
  • Heat a nonstick skillet over medium high heat. Once the pan is hot, drizzle the oil and add the tofu to the skillet in a single layer. Sprinkle about 1/4 teaspoon of salt over the tofu. Let the tofu fry for about 4 minutes, until golden. Then, flip the pieces over to the other side. Sprinkle the remaining 1/4 teaspoon salt. Pan fry this side for about 3 minutes, until golden. You can stop pan frying here or pan fry each of the 3 edges for about 1 minute each.
  • Drizzle 3 tablespoons of teriyaki sauce over the tofu pieces, and then turn off the heat. Flip the tofu pieces around several times so that they’re covered in teriyaki sauce. Transfer the cooked teriyaki tofu to a plate. Sprinkle the tofu with toasted sesame seeds, if you like.
