BROILED ROAST BEEF 'N CHEESE ENGLISH MUFFINS
I was cleaning out my recipe file and found this. I've had this for at least fifteen years. I don't remember where this came from.

Steps:
- Lightly spray cookie sheet.
- Put muffins on sheet.
- Mix together hash, ketchup, onion, parsley flakes, and oregano. Divide mixture on muffins.
- On each muffin, add two tablespoons cheese.
- Broil for 8 to 10 minutes or until cheese is bubbly and meat mixture is hot.
- Makes either 4 servings or cut each muffin into fourths and serve as a "nosh".

CHEESY ENGLISH MUFFINS
I got this recipe from my mom, but I don't remember where she got it. It's one of the simplest, yummiest appetizers and is a hit every time. Another plus, is I've also been able to adapt the recipe to fit my IBS diet and it still tastes very good imo. :D This recipe is the original; to adapt it for my IBS I replaced the Miracle Whip with light Miracle Whip or a vegan mayo, the cheese with a non-dairy sub like soy cheese, and the bacon bits are usually fine, but I can cook up some turkey bacon until very crisp and let cool before adding them. Be careful when biting into these, they can be really hot. Many people have burnt their mouths devouring these tasty appetizers before my mom can plate them!

Steps:
- After splitting the English Muffins, cut them into wedges so each muffin makes 8 wedges.
- Mix the remaining ingredients in a bowl. (Note: My mom prefers 5 or more drops of Tabasco, but use as little or as much as you like.).
- Spread each wedge of muffin with some of the mixture.
- Lay wedges on foil-covered cookie sheet and place under broiler. Boil until hot and cheese is melted (approximately 15 mins).
ENGLISH MUFFIN BREAKFAST CASSEROLE
This easy, make-ahead casserole makes creative use of classic breakfast ingredients like eggs, sausage, Cheddar cheese and English muffins. It's a perfect no-stress centerpiece for a special-occasion breakfast: Simply assemble the casserole the night before and pop it in the oven before breakfast. Just remember to make sure to toast the English muffins until they've dried out a bit, which will help them absorb the egg mixture. For a vegetarian version, use vegetarian sausage or omit it altogether.

- Generously grease the bottom and sides of a 9-by-13-inch baking dish with butter. Heat the oven to 350 degrees.
- Cut the English muffins into 1-inch cubes. (Do not halve them horizontally as you would normally for the toaster.) Place the cubes on a sheet pan and bake until lightly toasted, 12 to 15 minutes.
- Meanwhile, heat the olive oil in a medium or large skillet over medium-high. Add the sausage and scallions, a pinch of salt and a pinch of pepper and cook, breaking up the sausage with a wooden spoon, until the sausage is evenly browned, 4 to 6 minutes. Transfer to a paper towel-lined plate.
- Meanwhile, add the eggs, milk, 1 teaspoon salt and 1/2 teaspoon pepper to large bowl; whisk to combine.
- To assemble, sprinkle half of the sausage, then half of the cheese onto the bottom of the baking dish. Add the English muffin cubes on top in one even layer. Carefully pour the egg mixture into the pan, pressing down lightly to make sure all the bread is moistened. Top with remaining sausage and cheese. Wrap well and refrigerate for at least 1 hour up to overnight.
- Heat the oven to 350 degrees. Bake the casserole until puffed and cooked through, about 40 minutes. (It may need a few more minutes, if your casserole has been in the refrigerator overnight.) Cool for 10 minutes, then cut into squares and serve.
OPEN-FACED BROILED ROAST BEEF SANDWICH
A simple and easily adjusted broiled open face sandwich concoction. You can use beef, ham, turkey, chicken, etc. You can also adjust the veggies. Just make sure the cheese is always on top to pull it together. The combined flavors of the ingredients that I've listed blows my mind every time I make this. Eat with a knife and fork!

- Preheat oven on broiler setting.
- Cut rolls in half, and toast in a bread toaster. Place on a baking sheet. Spread each half with mayonnaise and mustard. Layer with roast beef, tomato, red onion, Provolone, salt and pepper.
- Broil 3 to 6 inches from heat source for 2 to 4 minutes (keep a constant eye on it) until cheese is bubbly and is beginning to brown.

- In a large bowl, dissolve the yeast in the water.
- Add the sugar, salt and dry milk and blend.
- Add half the flour and whisk for 1 minute.
- Set the mixture aside for 1 hour, or until the sponge falls back on itself.
- Beat in the oil.
- Add the remaining flour and mix well.
- Add extra flour if necessary to make a fairly stiff dough.
- With floured hands cut out about 20 four oz pieces of dough and form them into 3" patties.
- Place the patties on a greased cookie sheet and let rise about half an hour, or until they are doubled in bulk.
- Preheat griddle to 325 to 350 F and cook approximately 7 minutes per side.
